1 (18 1/4 ounce) package white cake mix
3 egg whites (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
2 (3 ounce) packages lime gelatin
1 cup boiling water
1/2 cup cold water
1 cup cold milk
1 (3 1/2 ounce) package vanilla instant pudding mix
1 (8 ounce) carton frozen whipped topping, thawed
green sprinkles

Steps:

  • Prepare and bake cake according to package directions, using a greased 13-in. x 9-in. x 2-in. baking dish.
  • Cool for 1 hour.
  • In a small bowl, dissolve gelatin in boiling water; stir in cold water and set aside.
  • With a meat fork or wooden skewer, poke holes about 2 inches apart into cooled cake.
  • Slowly pour gelatin over cake; refrigerate until cake is completely cool and gelatin is set.
  • In a bowl, whisk milk and pudding mix for 2 minutes or until soft-set.
  • Fold in whipped topping.
  • Spread over cake.
  • Decorate with sprinkles.
  • Cover and refrigerate until serving.

1 (14 ounce) can sweetened condensed milk
2 cups vanilla chips or 2 cups white chocolate chips
1 cup milk chocolate chips
1 tablespoon butter
1 dash salt
3/4 cup chocolate-covered toffee bits
1/8 teaspoon rum extract
1 cup vanilla frosting
green food coloring

Steps:

  • Line a 9-inch square pan with foil and grease the foil; set aside.
  • In a large saucepan, combine the milk and chips. Cook and stir over low heat until chips are melted.
  • Add the butter and salt; stir until smooth. Remove from the heat; stir in toffee bits ans extract. Pour into prepared pan. Cover and refrigerate for 2 hours or until firm.
  • Using foil, remove frdge from pan; carefully remove foil. Cut fudge into 1 inch squares.
  • Place the frosting in a small resealable plastic bag; tint with food coloring. Cut a small hole in a corner of bag; pipe a shamrock onto each square.

1 (18 ounce) package white cake mix
3 egg whites (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 cup water
1/3 cup creme de menthe
1/4 cup Creme de Cacao
1 (12 ounce) jar fudge sauce
12 ounces Cool Whip
1/4 cup creme de menthe, additional

Steps:

  • Preheat oven to 350°F.
  • Prepare cake mix according to the directions, except use only 1 cup water and add 1/3 cup creme de menthe and 1/4 cup creme de cacao.
  • Bake in a 9x13-inch pan.
  • When cool, spread fudge topping over cake.
  • Mix 1/4 cup creme de menthe with Cool Whip and spread over cake.
  • Keep refrigerated.

1 box Betty Crocker™ Super Moist™ white cake mix
Water, vegetable oil and egg whites called for on cake mix box
2 teaspoons mint extract
12 drops green food color
2 jars (16 oz each) hot fudge topping
1 container (8 oz) Cool Whip frozen whipped topping, thawed
5 drops yellow food color
Thin rectangular crème de menthe chocolate candies, unwrapped and cut into pieces, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
  • Make cake batter as directed on box, adding 1 1/2 teaspoons of the mint extract with the water. Reserve 1 cup batter. Stir 3 drops of the green food color into reserved batter; set aside. Pour remaining batter into pan.
  • Drop green batter by generous tablespoonfuls randomly in 12 to 14 mounds onto batter in pan. Cut through batters with metal spatula or knife in S-shaped curves in one continuous motion. Turn pan one-fourth turn; repeat cutting for swirled design.
  • Bake as directed on box for 13x9-inch pan. Run knife around sides of pan to loosen cake. Cool completely, about 1 hour.
  • Carefully spread fudge topping evenly over cake. In medium bowl, stir whipped topping, remaining 1/2 teaspoon mint extract, remaining 9 drops green food color and the yellow food color until blended. Spread whipped topping mixture evenly over fudge. Garnish with candy pieces. Store covered in refrigerator.
