St. John's Honey Fudge from the Isle of Man image

This recipe was posted for the British Isles Culinary Cruise 2009. It comes from the Isle of man Community Website: www.iofm.net. It is traditionally made and sold at the Tynwald Fair, which is the oldest surviving fair on the Isle of Man. It is still held at the village of St. John's every 5th July. The chocolate probably came into the recipe because smugglers along the coast introduced exotic foods and spices. This fudge has a smooth, chocolatey flavor with a hint of honey.

Number Of Ingredients 6

2 cups sugar
2 ounces chocolate
1/4 teaspoon salt
1 cup evaporated milk
1/4 cup honey
2 tablespoons butter

Steps:

  • Boil the sugar, chocolate, salt and milk for five minutes, stirring constantly.
  • Add the honey, keep stirring, and cook to a soft-ball stage (230 - 240 deg. F).
  • Remove from heat and stir in the butter.
  • Let stand about 5 minutes, then beat until smooth & creamy and pour into an 8" square buttered pan.
  • Cut when firm.

2 cups sugar
2 unsweetened chocolate squares
2/3 cup evaporated milk
1/8 teaspoon salt
1 teaspoon vanilla
2 tablespoons butter or 2 tablespoons butter substitute
1/4 cup honey

Steps:

  • Dissolve sugar in milk and honey. Add grated chocolate, butter, and salt. Stir until well blended.
  • Cover until boiling point is reached. Boil to soft ball stage (234 - 238 F).
  • Cool to room temperature. Add flavoring. Beat until mixture is thick, creamy, and will hold its shape when dropped from a teaspoon.

2 (12 ounce) packages semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk
1/3 cup sue bee honey
1/2 cup chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Butter or spray a 9-inch square baking dish.
  • Melt chocolate chips, milk and honey over medium heat in a 2-quart saucepan, stirring constantly, just until chips are melted. Do not overcook or chocolate will scorch. Remove from heat and stir in nuts and vanilla extract. Cool.
  • Cut into 2-inch pieces. Store in an airtight container.
