Number Of Ingredients 15

2 cups water
1/3 cup oil
1/4 cup honey
1/4 cup brown sugar
1/4 cup raisins
2 (1/4 ounce) packets yeast or 3 teaspoons yeast
1/4 cup warm water
1 tablespoon honey
2 1/2 cups flour
3 cups whole wheat flour
1 1/2 cups rye flour
1/2 cup powdered milk
1 1/2 teaspoons salt
1/4 cup cornmeal
melted butter

Steps:

  • In blender, put 2 cups water, oil, honey, brown sugar and raisins.
  • Liquefy that puppy.
  • Proof yeast with 1/4 cup water and 1 tablespoon honey.
  • Combine 1 cup flour, 2 cups whole wheat, 1 cup rye, milk and salt.
  • Add liquid mixture and yeast mixture.
  • Beat for 2 minutes.
  • Gradually add rest of flour till it pulls away from sides of bowl.
  • Turn out onto floured board and knead until smooth and elastic.
  • Add flour as needed.
  • Grease large bowl and put dough inches.
  • Let rise until doubled, about 1 1/2 hours.
  • Punch down dough; divide in 4 pieces.
  • Cover and let rest 10 minutes.
  • Sprinkle 2 baking sheets with cornmeal.
  • Shape the 4 pieces into loafs; cover and let rise until doubled, 60 minutes.
  • Preheat oven to 375°.
  • Bake for 35 minutes or crust is browned.
  • Brush with butter.

4 c flour
2 tsp salt
1T. & 1 tsp baking powder
1 Tbsp melted shortening
2 c lukewarm milk
1/2 c oil for deep frying

Steps:

  • 1. Combine flour,salt, and baking powder in a bowl. Stir in shortening and milk. Knead dough lightly to form ball. Roll out dough on floured board. Cut into 2 inch squares. Fry 2 or 3 at a time til golden brown on both sides. Drain on paper towels.

Number Of Ingredients 12

1 cup cornmeal
1 cup natural bran
1 cup oatmeal
1 cup gluten flour
3 cups whole wheat flour
4 -6 cups unbleached flour
3 (1/4 ounce) packages yeast
2/3 cup honey (or 1/3 cup honey and 1/3 cup molasses for darker color)
2 teaspoons salt
4 cups boiling water
1 cup warm water
1/4 cup butter

Steps:

  • Dissolve yeast in warm water. Pour boiling water over cornmeal and oatmeal; let stand until cool.
  • Add honey, butter and salt to yeast mixture. Stir in bran, then whole wheat flour.
  • Add cooled cereal mixture, then add unbleached flour a cup at a time until mixture is stiff enough to knead.
  • Knead 10 to 20 minutes. Let rise 2 hours, then punch out air and shape into four loaves; place loaves onto two lightly greased and floured cookie sheets.
  • Let rise 1 hour, then bake at 350 degrees for 45 minutes. When done, loaves should sound hollow when tapped. Be careful not to underbake the moist, heavy loaf.
  • NOTE: Time does not include 3 hour rise time.
  • Makes 4 loaves.

This bread was the house bread at a restaurant called The Captain's Table in Daytona Beach, Fl. I fell in love with it but couldn't talk the chef into giving me the recipe, so I went home and started looking for one like it. This recipe is one I found in a BM cookbook and adapted it to manual directions. I played with the original recipe to make it soft and spongy like grocery store bread and this is how I make it now. 1/2 cup golden raisin, may be pureed
1 teaspoon sugar
1 cup water, distilled or 1 cup mineral water, not tap water
2 cups bread flour
1 cup rye flour
1 cup whole wheat flour
2 tablespoons honey
1/2 tablespoon caramel coloring (optional)
1/4 cup vital wheat gluten
1/8 cup dark brown sugar
1/4 cup non-fat powdered milk
1/3 cup soybean oil
1 teaspoon salt
1 teaspoon active dry yeast, NOT rapid rise

Steps:

  • Mix raisins with 1/2 cup of the water and let sit overnight to plump (then puree` if desired).
  • Add the honey, brown sugar, caramel coloring and oil to raisins.
  • Proof the yeast in 1/4 cup warm (100^ - 110^) water mixed with1 teaspoon of sugar for 10 minutes.
  • Mix the flours, wheat gluten, dry milk and salt together. Mix in the rest of the water and the raisin mixture, and knead using the dough hook of mixer to incorporate all ingredients. Pour dough into a greased bowl and let rise till doubled.
  • Put dough back in mixer and knead with dough hook for about 7 minutes, adding more flour to coax dough to leave the sides of the bowl and cling to the hook.
  • Shape into two loaves and put in two 8 X 5 X 4 greased loaf pans. Let rise again to double and bake for 30 minutes at 350^ or until lightly browned. Bread will sound hollow when tapped. Remove from pans and cool well before slicing.

I'm posting this recipe because I love Squaw Bread and I want to try and make it. This recipe may change as I play around with it and other ingredient options. (There is also a yeast recipe for this.) Please feel free to make your own version and please let me know how it turns out!!! This bread does not need the butter spread....

1 c white flour
2 c whole wheat flour
1/2 c sugar
1 tsp salt
1 tsp baking soda
1 1/2 c milk
1/2 c molasses
1 stick butter
1 stick oleo
1/2 c honey

Steps:

  • 1. Sift the dry ingredients together.
  • 2. Combine the liquids.
  • 3. Blend all together with electric mixer until well blended.
  • 4. Bake 325 degrees in a loaf pan for 1 1/2 hr.
  • 5. Mix well the butter, oleo and honey. Store in the frig.
  • 6. Serve bread slices with the butter spread.

Number Of Ingredients 12

1/2 cup yellow corn meal
1/2 cup rolled oats
1/2 cup 100% bran cereal
1/4 cup wheat germ
2 cups boiling water
2 packages active dry yeast
1/2 cup warm water (115-120°F)
1/3 cup honey
2 Tbs butter or margarine, melted
1 tsp salt
2 cups whole wheat flour
3 cups unbleached flour

Steps:

  • Procedure In a 1-quart glass measuring cup or bowl, combine corn meal, oats, bran and wheat germ. Pour in 2 cups boiling water. Stir thoroughly. Set aside to cool. Place yeast in large mixing bowl. Add 1/2 cup warm water. Stir to dissolve yeast. Add honey, butter and salt. Mix thoroughly. Add cooled cornmeal mixture. Stir until smooth. Stir in whole wheat flour. Gradually add unbleached flour, one cup at a time, until mixture is stiff enough to knead (about 2-1/2 cups). Sprinkle remaining flour on board. Knead dough for 10 to 12 minutes until smooth. Add additional flour as necessary. Shape dough into ball. Lightly grease clean mixing bowl. Place dough in warm, draft-free place until doubled in size (about 1-1/2 hours). Punch down dough to remove air bubbles. Turn out onto lightly floured board. Divide dough in half. Shape each half into a round loaf. Place loaves on a large lightly greased cookie sheet or 2 pie plates. Cover. Place in warm, draft-free place until double in size (about 1 hour). Bake in preheated oven at 350°F 40 to 50 minutes or until bread sounds hollow when tapped. Remove loaves from cookie sheet. Cool on wire racks.

1 1/4 cup warm water
2 tablespoons molasses
1/2 teaspoon caramel coloring
1 1/2 teaspoon malted barley flour
2 cups bread flour
1/2 cup whole wheat flour
1/2 cup unprocessed bran
1/4 cup dark brown sugar
1 1/2 tablespoon oat bran
1 1/2 tablespoon rolled oats
2 teaspoons granola
1 1/2 teaspoon salt
2 1/2 teaspoons yeast

Steps:

  • Oil and/or butter are not missing. They are not needed. * Caramel coloring was only used to give the bread an almost pumpernickel color. I found it in a cake decorating store which was also a bakery ** The malted barley flour is also known as diastatic malt powder. In a bowl combine bread flour, whole wheat flour, unprocessed bran, dark brown sugar, oat bran, rolled oats, granola, malted barley flour and salt. In bread machine pan add water, molasses, and caramel coloring. Add flour mixture; top with yeast and select dark bread setting. cook's notes Raisins could be added if desired. If you do, eliminate the caramel coloring and liquify the water, 1/4 cup raisins, molasses and brown sugar before adding to the machine.
