Sliced yellow squash and onions baked in a cheesey sauce and topped with a parmesan bread topping.

6 medium squash (thinly sliced)
1 large onion (thinly sliced)
1/4 cup butter
1/2 cup parmesan cheese (grated)
1 cup sharp cheddar cheese (shredded)
1/2 cup sour cream
3 whole roasted green chile (peeled and chopped)
1/4 tsp salt
1/4 tsp black pepper
Fresh chopped parsley (optional)
1/4 cup breadcrumbs
1/4 cup parmesan cheese
1 tbsp butter (melted)

Steps:

  • Preheat oven to 350 degrees F
  • Melt butter in a large skillet or wok over medium heat
  • Add squash and onions, saute' until onions are translucent
  • Place cooked squash and onions in a large mixing bowl, add cheddar cheese, parmesan cheese, sour cream, green chiles, salt and pepper
  • Gently mix until well combine
  • Pour the ingredients into a lightly oiled 2-quart baking dish ( or it can be sprayed with a cooking spray)
  • Mix the breadcrumbs, parmesan cheese, and 1 tbsp melted butter in a small dish and sprinkle the crumb mixture on top of the casserole
  • Bake, uncovered for 20 minutes until golden
  • Remove from oven, let cool 5-10 minutes prior to serving.
  • Garnish with chopped fresh parsley

6 ears white corn
4 fresh green chiles
3 medium green zucchini squash
3 tablespoons olive oil
2 tablespoons butter
1 clove garlic, crushed
Salt

Steps:

  • Cut the corn off the ears. Slice chiles and chop. Slice and cube the zucchini. In a hot skillet heat olive oil. As soon as you see a small stream of smoke from the skillet, add corn, chiles, and zucchini. Saute the vegetables until tender, but still al dente. Add the butter and garlic and toss to combine. Season with salt, to taste.

This is our favorite squash casserole. A change from the same old squash casserole that everyone serves. I especially like the fact that you don't pre-cook the squash. I'v been asked for this recipe when ever I take it to a gathering. Enjoy!

4 eggs, beaten
1/2 cup vegetable oil
1 cup biscuit mix (I use low-fat bisquick)
1 (4 ounce) can chopped green chilies, with juice (I like to use a bigger can)
1 medium onion, chopped
1 garlic clove, minced
2 cups shredded cheddar cheese, divided
4 cups coarsley chopped zucchini (I always use Zucchini, the yellow always tastes a little bland to us) or 4 cups yellow squash (I always use Zucchini, the yellow always tastes a little bland to us)

Steps:

  • Combine eggs, oil, and biscuit mix.
  • Stir in chillies, onion, garlic and half of the cheese. Stir in squash. pour into a greased 9X13 inch baking dish.
  • Bake at 350 degrees for 40 minutes; sprinkle with remaining cheese and bake 5 minutes more.
