HAM & SPINACH SALAD
Great to serve in a clear bowl to see all the layers. To save time I use bagged spinach, microwave bacon, and just order some ham and swiss in the deli... EASY! (also, I use low fat mayo & sour cream)

Steps:
- Layer, in order, in a large bowl: 1/2 of spinach, all of eggs& ham, remaining spinach, onions& peas.
- Combine mayo and sour cream then spread over top, sealing to sides of bowl.
- Sprinkle w/ cheese, cover and refrigerate up to 24 hours.
- Before serving, cook& crumble bacon and sprinkle over salad.

- Cook potatoes and carrots in large pot of boiling salted water until almost tender, about 7 minutes. Add asparagus and peas; cook until vegetables are just tender, about 3 minutes longer. Drain. Rinse with cold water; drain. Transfer to large bowl. (Can be prepared 1 day ahead. Cover; chill.)
- Add ham to vegetables. Add Shallot Vinaigrette to salad and toss to coat. Season to taste with salt and pepper.
- Line bowl with spinach. Top with salad and serve.

- Cook pasta according to package directions. Meanwhile, in a large skillet, saute asparagus and onion in butter for 5-8 minutes or until asparagus is crisp-tender., Add the ham, cream, pepper and salt; bring to a boil. Reduce heat; cook over low heat for 1 minute. Drain pasta. Add to the asparagus mixture; toss to coat. If desired, top with shredded Parmesan cheese.

- Place the eggs in a saucepan with enough cold water to cover. Bring to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 12 to 15 minutes. Remove from hot water and cool. Peel, chop, and set aside.
- Cook the bacon in a skillet over medium high heat until crisp and evenly brown. Drain, crumble and set aside.
- In a large bowl, toss together the eggs, bacon, spinach, mushrooms, strawberries, onion, kiwi, and orange.
