MARINATED ASPARAGUS SALAD

Asparagus is one of my favorite vegetables and I love preparing it this way. Preparation time includes chilling overnight.

1/2 cup water
1 bunch asparagus, trimmed
1/2 teaspoon dried tarragon
black pepper, to taste
1/2 teaspoon garlic salt
2/3 ounce Italian salad dressing mix, prepared according to package directions
1/4 cup tarragon vinegar (or white wine vinegar)
lettuce leaf, for serving
1/4 cup mayonnaise (optional)

Steps:

  • Bring about 1/2 cup water to a boil in a saucepan.
  • Add asparagus, cover and cook until tender, about 6 minutes (Alternatively, you can use 1 1/2 cans (15 ounces each) whole green asparagus spears and skip this step.).
  • Drain the asparagus and layer it in a shallow glass dish.
  • Sprinkle each layer with crumbled tarragon leaves, pepper and garlic salt.
  • Pour salad dressing and vinegar over asparagus, cover and refrigerate overnight.
  • Serve chilled asparagus on a bed of lettuce leaves.
  • Top with a dollop of mayonnaise (which you can flavor with some of the dressing), if desired.

1-1/2 pounds fresh asparagus, trimmed and cut into 2-inch pieces
2 small tomatoes, cut into wedges
3 tablespoons cider vinegar
3/4 teaspoon Worcestershire sauce
1/3 cup sugar
1 tablespoon grated onion
1/2 teaspoon salt
1/2 teaspoon paprika
1/3 cup canola oil
1/3 cup sliced almonds, toasted
1/3 cup crumbled blue cheese, optional

Steps:

  • In a large saucepan, bring 1 cup water to a boil. Add asparagus; cook, covered, until crisp-tender, 3-5 minutes. Drain; place in a large bowl. Add tomatoes; cover and keep warm. , Place vinegar, Worcestershire sauce, sugar, onion, salt and paprika in a blender; cover and process until smooth. While processing, gradually add oil in a steady stream. Toss with asparagus mixture. Top with almonds and, if desired, cheese.

1 cup mayonnaise
1/2 cup sour cream
1/4 cup buttermilk
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
1 tablespoon thinly sliced chives
1 tablespoon roughly chopped fresh parsley
2 cloves garlic, finely minced
2 bunches pencil-thin asparagus, woody ends trimmed, stalks cut on the bias into 1/2-inch pieces (3 to 4 cups)
3 cups spring lettuce mix
3 cups baby spinach, stems removed
1 cup watercress
2 shallots, thinly sliced into rounds
1 pint grape or cherry tomatoes (multi-color if available), halved
Kosher salt and freshly ground black pepper

Steps:

  • For the ranch dressing: Place the mayonnaise, sour cream, buttermilk, vinegar, mustard, chives, parsley and garlic in a bowl; whisk until completely combined. Refrigerate, covered, until ready to serve.
  • For the salad: In a large bowl, toss the asparagus, lettuce, spinach, watercress, shallots and tomatoes together. Season with salt and pepper. Drizzle with ranch dressing and serve.

2 large eggs
6 ounces asparagus, trimmed
1 medium head butter lettuce, leaves separated (4 cups)
1 small bunch watercress, trimmed (1 1/2 cups)
1/2 small cucumber, thinly sliced into half-moons (1/2 cup)
5 radishes, tops removed and cut into quarters
1 1/2 teaspoons finely chopped shallots
1 1/4 teaspoons whole grain mustard
1 teaspoon red wine vinegar
1/2 teaspoon light brown sugar
1 tablespoon low-fat mayonnaise
1 tablespoon low-fat buttermilk

Steps:

  • Place eggs in medium saucepan and fill with water to cover eggs by 2 inches. Bring to a boil, remove from heat, and cover saucepan with lid. Let eggs sit 10 minutes, then remove with slotted spoon and place in bowl of cold water. Remove shells when cool.
  • Bring water back to a boil, and add asparagus. Cook 2 to 3 minutes, or until bright green. Rinse under cold water, and pat dry. Cut into 1/2-inch diagonal slices.
  • To make Dressing: Place shallots, mustard, vinegar, and sugar in small bowl, and stir to combine. Season with salt and pepper. Whisk in mayonnaise and buttermilk until smooth.
  • To assemble Salad: Lay butter lettuce leaves on 2 large plates followed by asparagus, watercress, cucumber, and radishes. Slice eggs into quarters, and arrange on top of Salad. Drizzle 2 Tbs. dressing over each serving.
