My Mother's recipe. Not a true cheesecake, it's lighter and quicker. No cooking required and tastes lucious. I love this for dessert when we have a cook out.

8 ounces cream cheese
1/3 cup sugar
1 cup sour cream
2 teaspoons vanilla
8 ounces Cool Whip
1 prepared graham cracker crust
1 pint fresh strawberries

Steps:

  • Easy as pie -.
  • Beat cream cheese until smooth.
  • Gradually add in sugar.
  • Blend in sour cream and vanilla.
  • Finaly fold in whipped topping.
  • Spoon into crust.
  • Chill atleast 4 hours.
  • Top with sliced strawberries.

This is the quickest dessert I've ever made. It's simple and inexpensive. I got this recipe from a Borden Eagle Brand flyer.

1 graham cracker pie crust (9 inch)
1 (8 ounce) package cream cheese (softened)
1 (14 ounce) can sweetened condensed milk
1/3 cup reconstituted lemon juice
1 teaspoon vanilla extract
fruit, topping (optional)

Steps:

  • Beat cream cheese until fluffy.
  • Add all other ingredients.
  • Beat until smooth.
  • Pour into pie crust.
  • Chill 2-4 hours.
  • Top with favorite fruit topping.

8 oz cream cheese, room temperature
1/2 c sugar
1 c sour cream
2 tsp vanilla extract
8 oz cool whip
1 keebler gram cracker pie crust
1 can(s) lemon pie filling (optional )

Steps:

  • 1. cream cheese MUST be room temp! mix all together and put in pie crust, refrigerate for 1 hr, The lemon pie filling is optional. It makes for a really tall pie too!

1 cup all-purpose flour
1/2 cup packed brown sugar
1/4 teaspoon salt
1/4 cup cold butter
1/2 cup chopped walnuts
1 teaspoon vanilla extract
FILLING:
2 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
3 eggs, lightly beaten
1 teaspoon vanilla extract
TOPPING:
1 cup sugar
1 tablespoon cornstarch
1/4 teaspoon ground cinnamon
1/4 cup water
3 cups chopped fresh or frozen rhubarb, thawed and drained

Steps:

  • In a bowl, combine flour, brown sugar and salt; cut in butter until mixture resembles coarse crumbs. Stir in walnuts and vanilla. Press into a greased 13-in. x 9-in. baking dish. Bake at 375° for 10 minutes. Cool slightly. , In a large bowl, beat cream cheese and sugar until lightly and fluffy. Add egg; beat on low speed just until combined. Add vanilla. Pour over the crust. Bake for 20-25 minutes or until center is set and edges are light brown. Cool on a wire rack for 1 hour., In a large saucepan, combine the sugar, cornstarch and cinnamon. Gradually stir in water until smooth. Add rhubarb. Bring to a boil over medium heat; cook and stir for 5 minutes or until thickened. Cool. Pour over filling. Refrigerate at least 1 hour. Refrigerate leftovers.

1-1/4 cups graham cracker crumbs
1/3 cup butter, melted
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
2 large eggs, lightly beaten

1/2 teaspoon finely grated lemon zest
TOPPING:
1 cup sour cream
2 tablespoons sugar
1/2 teaspoon vanilla extract
Additional lemon zest, optional
Mint leaves, optional

Steps:

  • In a bowl, combine cracker crumbs and butter. Firmly press onto the bottom and up the sides of a 9-in. pie plate. Cover and refrigerate for 30 minutes. , In a large bowl, beat the cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Stir in vanilla and lemon zest just until blended. Pour into prepared crust. , Bake at 325° for 20-25 minutes or until center is almost set. Remove from the oven; let stand for 5 minutes (leave oven on). Combine the sour cream, sugar and vanilla; spread carefully over pie. Bake 5 minutes longer. Cool on a wire rack for 1 hour.
