SPIRAL MEATLOAF W/HAM, BROCCOLI AND CHEDDAR

Steps:
- In large bowl combine first 7 ingredients til very well mixed.
- Place mixture onto a sheet of foil.
- Press out to a flat, even 8"x10" rectangle.
- Top evenly with 6 slices ham to within 1/2" of edges.
- Top with 6 slices american cheese.
- Sprinkle cheese layer with chopped broccoli evenly. Chop any big pieces smaller.
- Roll up starting from long side, lifting and using the foil to help you roll it all up.
- Roll up tightly.
- Pinch ends and seam closed VERY well. Place seam side down onto cookie sheet, or keep on the foil (seam side down)and place onto cookie sheet, that's what I did. Easier clean up!
- Sprinkle with a little coarse ground pepper.
- Bake in 350º oven for 55 minutes.
- Cut remaining 4 slices cheese in half corner to corner. Place on top of meatloaf nicely, overlapping slices slightly, showing pointed sides.
- Bake 5 minutes longer or til cheese is just melted.
- Let rest 15-20 minutes before slicing.
- Good served with mashed potatoes, baby carrots and fresh rolls.
- *Some hams can turn ground beef slightly pink. It is done in 1 hour. Just check juices to see if they are running clear.
- **"Do-ahead" Tip:This can be rolled up and refrigerated (covered)for up to 24 hours before baking.
BROCCOLI-CHEDDAR MEATLOAF

Steps:
- Finely roll 12 crackers.
- Mix cracker crumbs, turkey, onion, 2 tbsp chili sauce, parsley and egg.
- Pat meat mixture into 12 by 8 inch rectangle on waxed paper.
- Reserve 2 tablespoons cheese; sprinkle remaining cheese and broccoli onto meat mixture to within 1/2 inch of edge.
- Coarsely break remaining 12 crackers; sprinkle over broccoli, pressing lightly into meat.
- Starting at short end, roll up jelly-roll fashion, using waxed paper to help roll; seal ends.
- Place loaf in 13x9x2-inch baking dish.
- Bake at 350°F for 50-55 minutes.
- During last 5 minutes of baking, spread remaining 2 tbsp chili sauce over meatloaf; sprinkle with reserved cheese.
SWEET-GLAZED SPIRAL MEATLOAF W/HAM AND SWISS
This came out WONDERFUL, and I'm not big on meatloaf!! I glazed it nicely with dark brown sugar and honey mustard. It's filled with canadian bacon and swiss cheese! Surprisingly good!!!!!

- Coat with glaze during last five minutes of baking time.
- Glaze: mix together honey mustard and dark brown sugar til syrupy.

SPIRAL MEATLOAF
Can you stand another meatloaf recipe? I saw this being made on a tv show -- but was vacuuming and didn't catch all the ingredients. So, I adapted my own (rather, my mother's) recipe and came up with this. My husband will not eat meatloaf any other way!

Steps:
- Mix the meats, soup mix, water, oatmeal, egg, steak sauce and herbs together in a large bowl.
- Pat meat mixutre into a rectangle.
- The meat should be about 1/2 inch thick.
- Lay the baby spinach leaves over the meat, overlapping them to form a solid layer.
- Sprinkle all but 1/2 cup of cheese over the spinach.
- Carefully roll the meat up.
- This can be a little tricky, but once the first roll is made, it gets easier.
- Once rolled, pinch the ends to seal and place on a cooking sheet.
- Sprinkle remaining cheese and reserved parsley on top.
- Bake at 350 for 45-55 minutes.
- Let rest for five minutes before slicing.
HAM, CHEESE AND BROCCOLI STUFFED MEATLOAF

- Preheat oven to 350. Combine first 5 ingredients.
- Spread the meatloaf mixture onto a piece of aluminum foil. Spread into a 16x10 inch rectangle.
- Drain the thawed broccoli well and spread onto top of meatloaf mixture.
- Spread the thin ham on top of the broccoli.
- Arrange the cheese on top of the ham.
- Roll the meatloaf (jelly roll style) using the foil to help. Pinch the edges to seal.
- Place in baking dish. Bake at 350 for 90 minutes.

- In a large bowl, combine the eggs, milk, ketchup, bread crumbs, 1/2 teaspoon salt, pepper and oregano. Crumble beef over mixture and mix well. , On a piece of heavy-duty foil, pat beef mixture into a 12x10-in. rectangle. Top with broccoli to within 1/2 in. of edges. Sprinkle with remaining salt.
