LINGUINE WITH SPINACH AND SUN-DRIED TOMATO CREAM SAUCE

Linguine with spinach and sun-dried tomato cream sauce takes only 30 minutes to make! This simple Italian pasta requires only ingredients! This creamy linguine is a perfect weeknight dinner! Serve it as-is or with grilled chicken or seafood.

8 oz linguine
1/3 cup sun-dried tomatoes (, chopped)
3 cloves garlic (, minced)
1 cup half-and-half
1 cup Parmesan cheese (, shredded)
1/4 teaspoon paprika
1/4 teaspoon salt
6 oz spinach
5 basil leaves (fresh, finely chopped)

Steps:

  • Cook linguine according to package instructions. Drain.
  • Heat 1 tablespoon of olive oil in a large skillet on medium heat.
  • Add chopped sun-dried tomatoes and minced garlic. Cook on medium heat for about 30 seconds, constantly stirring.
  • Add 1 cup of half-and-half, paprika, and 1/4 teaspoon of salt. Bring to boil and reduce to simmer.
  • Add 1/2 cup of shredded Parmesan cheese (half of what the recipe calls for). Stir for about 30 seconds or longer until the cheese melts. If the sauce is too thin, gradually add more cheese. Keep stirring around all of the skillet for a couple of minutes.
  • Note: if the sauce gets too thick, add more half-and-half.
  • Add spinach. Keep stirring on medium heat until the spinach wilts, about 1 minute.
  • Add cooked and drained linguine to the sauce. Stir well.
  • Taste the linguine and add more salt, if needed. Top with finely chopped fresh basil leaves.

1-1/2 cups fresh spinach, chopped
1/3 cup julienned soft sun-dried tomatoes (not packed in oil), chopped
1/4 cup crumbled goat cheese
2 garlic cloves, minced
1/2 teaspoon pepper, divided
1/4 teaspoon salt, divided
2 boneless skinless chicken breasts (6 ounces each)
1 tablespoon olive oil, divided
1/2 pound fresh asparagus, trimmed
Aged balsamic vinegar or balsamic glaze, optional

Steps:

  • Preheat oven to 400°. In small bowl, combine the spinach, sun-dried tomatoes, goat cheese, garlic, 1/4 teaspoon pepper and 1/8 teaspoon salt., Cut a pocket horizontally in the thickest part of each chicken breast. Fill with spinach mixture; secure with toothpicks., In an 8-in. cast-iron or ovenproof skillet, heat 1-1/2 teaspoons oil over medium heat. Brown chicken on each side. Place in oven; bake 10 minutes., Toss asparagus with remaining 1-1/2 teaspoons oil, 1/4 teaspoon pepper, and 1/8 teaspoon salt; add to skillet. Bake until a thermometer inserted in chicken reads 165° and asparagus is tender, 10-15 minutes longer. If desired, drizzle with vinegar. Discard toothpicks before serving.

1 (10-ounce) jar sun-dried tomatoes packed in oil, chopped (oil reserved)
1 small onion, chopped
4 garlic cloves, minced
1/4 cup tomato paste
2/3 cup dry white wine
8 ounces angel hair pasta
Salt and freshly ground black pepper
2 ounces soft fresh goat cheese, coarsely crumbled
2 tablespoons chopped fresh Italian parsley leaves

Steps:

  • Heat 2 tablespoons of the oil from the sun-dried tomatoes in a heavy large skillet over medium heat. Add the onion and saute until tender, about 3 minutes. Stir in the garlic and saute until fragrant, about 1 minute. Add the tomato paste and cook for 2 minutes, stirring constantly. Add the wine and sun-dried tomatoes and simmer until the liquid reduces by half, about 2 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, stirring occasionally, about 5 minutes. Drain, reserving 1/2 cup of cooking liquid. Add the pasta to the tomato mixture and toss to coat, adding some reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper. Sprinkle with the goat cheese and parsley and stir. Mound the pasta into bowls and serve.

1 large sweet potato
olive oil, drizzle
salt, to taste
pepper, to taste
4 large eggs
1 ½ cups milk
1 clove garlic, minced
4 oz jarred sun-dried tomato, drained
3 oz baby spinach, chopped
4 oz goat cheese

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • Poke a few slits through the skin of the sweet potato with the tip of a knife, then microwave on high for 1 minute. Let cool.
  • Cut off the ends of the sweet potato, then peel. Thinly slice the sweet potato into ⅛ inch (3 mm) thick slices.
  • Add the sweet potato slices to a bowl and toss with olive oil, salt, and pepper.
  • Arrange the sweet potato slices in a 9-inch (23 cm) round baking dish, slightly overlapping so they cover the sides and bottom.
  • Bake for 20-25 minutes, or until the potatoes are softened.
  • In a medium bowl, beat the eggs, salt, and pepper. Add the milk, garlic, and sun-dried tomatoes and whisk to combine.
  • Spread the spinach over the sweet potato crust. Pour in the egg mixture. Top with goat cheese crumbles.
  • Bake for 30 minutes, or until the center of the dish is set and no longer jiggles.
  • Cool for 10 minutes before slicing.
