This is a quick and easy side dish I made up to complement any fish or chicken dish with spinach, diced tomatoes, and that rich Roquefort cheese (any blue cheese will work).

1 tablespoon olive oil
1 small yellow onion, sliced
1 (14.5 ounce) can diced tomatoes, drained
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 pinch salt and pepper to taste
3 ounces Roquefort cheese

Steps:

  • Heat the olive oil in a skillet over medium high heat, and saute the onion until tender. Stir in the tomatoes and spinach, and continue cooking until the spinach is wilted. Season with salt and pepper. Stir in the Roquefort cheese, and allow to melt slightly before serving.

BAKED SPINACH WITH THREE CHEESES

Yield Serves 4 as a first course or side dish

1 cup finely chopped onion
1/2 cup crumbled feta cheese
1/2 cup grated Edam cheese
1/4 cup crumbled Roquefort cheese
2 tablespoons chopped fresh dill
2 tablespoons fresh breadcrumbs
1 large egg yolk
3 tablespoons olive oil
2 10-ounce packages ready-to-use spinach, coarsely chopped

Steps:

  • Preheat oven to 350°F. Lightly butter 11 x 7 x 2-inch baking dish. Mix first 7 ingredients in large bowl.
  • Heat oil in large pot over medium-high heat. Add spinach; sauté until wilted and juices evaporate, about 3 minutes. Transfer spinach to strainer; drain well. Arrange spinach over bottom of prepared dish. Sprinkle with cheese mixture. Bake until heated through, about 20 minutes.
  • Preheat broiler. Broil spinach and cheese until cheese is golden on top, watching closely, about 2 minutes.

SPINACH, ROQUEFORT AND WALNUT QUICHE

This unusual combination of ingredients results in a delicious quiche. Add a salad in the summer or a bowl of soup in the winter along with some crusty bread for a complete and easy meal.

1 9" unbaked pie shells or 1 pastry dough, to line tart pan of same size
3 eggs
100 g sour cream
black pepper, to taste
150 g Roquefort cheese
300 g frozen spinach, thawed enough to spread in pan
50 g walnuts, coarsley chopped

Steps:

  • Pre-heat oven to 210°C.
  • Line tart pan or pie pan with pastry or shell.
  • Prick the bottom with a fork several times.
  • Whisk the eggs in a large bowl.
  • Add the sour cream, and pepper and combine well.
  • Crumble in the roquefort and continue to whisk until the cheese has broken up.
  • You will, however, still have some distinct lumps of it.
  • Place the spinach in the bottom of the tart pan.
  • Sprinkle the walnuts evenly over the spinach.
  • Pour the egg and cheese mixture over the top, making sure to spread the remaining lumps of roquefort as evenly as possible.
  • Bake 25-30 minutes, or until quiche has set and top is nicely browned.

Recommended pairing with a fruity beaujolais such as deboeuf morgon. Make ahead: prep through step 2 and refrigerate overnight. Souffles can be assembled up to one hour in advance. Cooked souffles can be reheated in oven.

4 tablespoons unsalted butter
softened butter, for brushing
1/4 cup freshly grated parmigiano-reggiano cheese
1/4 cup plus 2 tablespoons all-purpose flour
1 1/2 cups milk
3/4 teaspoon salt
1/4 teaspoon cayenne
10 ounces drained frozen chopped spinach
1 tablespoon chives
6 large eggs, separated
5 ounces Roquefort cheese
1/2 teaspoon cream of tartar

Steps:

  • Preheat the oven to 400° and brush seven 1-cup ramekins with butter. Lightly coat the ramekins with 2 tablespoons of the Parmigiano-Reggiano and set them on a sturdy baking sheet.
  • In a medium saucepan, melt the 4 tablespoons of butter. Whisk in the flour and cook over moderate heat for 1 minute. Whisk in the milk and cook over moderately low heat until smooth and very thick, about 2 minutes. Stir in the salt and cayenne. Off the heat, whisk in the egg yolks. Let cool slightly. Transfer to a large bowl and stir in the Roquefort, spinach and chives.
  • In a large bowl, using an electric mixer, beat the egg whites with the cream of tartar at medium-high speed until frothy. Increase the speed to high and beat until firm peaks form. With a rubber spatula, fold the egg whites into the soufflé base until no streaks of white remain.
  • Spoon the soufflé mixture into the ramekins, filling them to 1/2-inch below the rim. Run your thumb inside the rim of each ramekin to help the soufflés rise evenly. Sprinkle the remaining Parmigiano-Reggiano on top and bake in the bottom third of the oven until the soufflés are puffed and golden brown, about 20 minutes. Alternatively, bake in a 7-cup soufflé at 375° for 40 minutes. Serve immediately.

5 tablespoons butter, divided
3 1/2 tablespoons horseradish Dijon mustard, divided
2 1/3 cups fresh breadcrumbs from crustless French bread
1 cup crumbled Roquefort cheese (generous 4 ounces)
3 9-ounce bags spinach leaves
1 8-ounce leek, halved lengthwise, thinly sliced crosswise (about 3 cups)
3/4 cup heavy whipping cream

Steps:

  • Preheat oven to 400°F. Melt 3 tablespoons butter in medium skillet over medium-high heat. Mix in 2 tablespoons mustard, then breadcrumbs. Sauté until breadcrumbs are golden, about 5 minutes. Cool briefly. Mix in cheese.
  • Toss 1 1/2 bags spinach in large nonstick pot over high heat until wilted, about 3 minutes. Transfer to sieve set over bowl. Repeat with remaining spinach. Press on spinach to drain.
  • Melt remaining 2 tablespoons butter in same pot over medium-high heat. Add leek; sauté 4 minutes. Add cream, remaining 1 1/2 tablespoons mustard, and spinach. Toss until thick and blended, about 2 minutes. Season with salt and pepper. Transfer to 7x11-inch baking dish. Top with breadcrumb mixture. Bake until bubbling, about 10 minutes.

This french inspired salad utilizes blue cheese, thinly sliced apples, and sunflower seeds to perk up a traditional spinach salad. Artisanal cheese works best here as well as a tart apple. Recipe from Vegetarian Times.

2 tablespoons cider vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
3 tablespoons olive oil
2 tablespoons water
1 shallot, minced (about 3 TBSP)
1/4 cup sunflower seeds, hulled
1 (6 ounce) bag Baby Spinach
1 large apple, very thinly sliced
1/2 cup Roquefort cheese

Steps:

  • Make Vinaigrette. Combine vinegar, honey, salt, and pepper in a small bowl. Whisk in oil and water to emulsify. Stir in minced shallots.
  • Make Salad. Place sunflower seeds in medium skillet. Toast over medium heat 5-6 minutes or until browned and fragrant. Transfer to small bowl and let cool.
  • Thinly slice 1 large apple leaving peel on the apple for color. Use one large tart apple or two small contrasting flavors of apple.
  • Just before serving, toss baby spinach, thinly sliced apple, crumbled roquefort, and cooled sunflower seeds with vinaigrette. Divide among salad plates and serve.
