PENNE WITH SPINACH PESTO AND TURKEY SAUSAGE

Spinach takes center stage here: it serves as the base for the super-green pesto, along with basil and peas, and leaves are crisped in the oven for the topping. Coins of roasted Italian turkey sausage add heft but can be omitted if you want to go vegetarian.

7 cups packed curly spinach leaves, well washed and dried
2 cups packed fresh basil leaves
1 tablespoon fresh lemon juice
1 1/2 cups frozen peas, thawed
1/3 cup extra-virgin olive oil, plus more for drizzling
1/3 cup grated Parmesan, plus more for serving
Kosher salt and freshly ground pepper
12 ounces sweet Italian turkey sausage (3 to 4 links)
1 pound short pasta, such as penne rigate

Steps:

  • Preheat oven to 450 degrees. In a food processor, combine 4 cups spinach, basil, lemon juice, 1/2 cup peas, and olive oil; process until combined. Pulse in cheese; season with salt and pepper. Using kitchen shears, snip sausage into 1-inch pieces. Drizzle with oil; roast on a rimmed baking sheet until undersides are brown, 7 to 8 minutes. Flip and push to one side. Lightly drizzle remaining 3 cups spinach with oil; season with salt and pepper. Scatter evenly over other half of sheet; roast until sausage is cooked through and spinach is crisp, 5 to 6 minutes more.
  • Meanwhile, cook pasta in a pot of salted boiling water according to package directions. Drain, reserving 1 cup pasta water. Return pasta to pot; add pesto, sausage, remaining 1 cup peas, and pasta water, 1/4 cup at a time, until evenly coated. Season with salt and pepper. Serve, topped with crisped spinach, more cheese, and a drizzle of oil.

1 tablespoon extra-virgin olive oil
2 cups chopped onions
1 pound ground turkey
1 pound spicy Italian turkey sausages, casings removed
3/4 teaspoon ground nutmeg
1 cup whipping cream
1 pound penne
2 6-ounce bags fresh baby spinach leaves
3/4 cup freshly grated Asiago cheese or Parmesan cheese, divided

Steps:

  • Heat oil in large deep skillet over medium-high heat. Add onions and sauté until beginning to brown, about 7 minutes. Add ground turkey and sausages. Sauté until cooked through and beginning to brown, breaking up with back of spoon and occasionally scraping bottom of skillet, about 10 minutes. Stir in nutmeg, then cream; bring to simmer. Seaso sauce to taste with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1 1/2 cups cooking liquid.
  • Add pasta to sauce. Cook over medium heat, adding spinach in batches and tossing until wilted. Stir in 1/2 cup cheese and enough cooking liquid to moisten. Transfer to large bowl. Sprinkle with remaining 1/4 cup cheese; serve.

A friend served this recipe to me as a vegetarian dish. I enjoyed it, but my husband and three sons love meat, so I added turkey Italian sausage.

Number Of Ingredients 10

3 ounces uncooked penne pasta
2 Italian turkey sausage links (about 1/2 pound), casings removed
1 garlic clove, minced
1 tablespoon olive oil
4 cups packed torn fresh spinach
1/4 cup golden raisins, optional
1/2 teaspoon chicken bouillon granules
2 plum tomatoes, seeded and chopped
1/4 cup sliced almonds, toasted
2 tablespoons shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Crumble sausage into a skillet. Cook over medium heat until no longer pink; drain and set aside. , In same skillet, cook garlic in oil for 1-2 minutes. Add the spinach, raisins if desired and bouillon. Cook and stir until spinach is wilted. Stir in tomatoes and sausage. , Drain pasta; transfer to a serving bowl. Add spinach mixture; toss gently. Garnish with almonds and Parmesan cheese.
