16 ounces fresh spinach, washed and chopped
6 ounces low-fat, firm silken tofu
2 tablespoons fresh lemon juice
1 tablespoon minced garlic
⅛ cup low-sodium chicken broth
½ cup grated Parmesan cheese
½ teaspoon ground black pepper
1 teaspoon Italian seasoning
10 ounces fresh mushrooms, thinly sliced
6 ounces fresh sliced shiitake mushrooms
½ cup diced red onion
¼ cup bacon bits
1 pound penne pasta

Steps:

  • Cook pasta according to package directions.
  • While pasta is cooking, in food processor or blender, combine spinach, tofu, lemon juice, garlic, broth, cheese, pepper, and Italian seasoning, process until smooth. Set aside.
  • Spray a large non-stick saute pan with cooking spray. Over medium heat, cook onions and mushrooms until tender. Reduce heat to low, add pesto mixture and heat until hot.
  • Toss pasta with sauce and bacon bits. Serve with additional Parmesan cheese, if desired. NOTE: If sauce seems too thick, thin to desired consistency with pasta cooking water or broth.

Allow at least a gallon of water to a pound of pasta, because you need a large pot to accommodate the greens and because, if there is too little water, the addition of the greens will slow the cooking too rapidly.

1 clove garlic
1/2 teaspoon crushed red pepper flakes, or to taste (optional)
About 15 calamata or other olives, pitted and roughly chopped
1/4 cup plus 1 tablespoon extra virgin olive oil
1 pound long pasta, like linguine
1 pound spinach, washed, tough stems removed, roughly chopped
Salt and freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil, and salt it. Meanwhile, mince the garlic as finely as possible and combine it in the bottom of a warm bowl with the red pepper flakes, olives and olive oil.
  • Place the pasta in the pot, and cook until it is nearly done (test it for doneness by tasting). Plunge the spinach into the water, and cook until it wilts, less than a minute. Drain quickly, allowing some water to cling to the pasta, and toss pasta and spinach in the bowl with the garlic and olive mixture. Season with salt and pepper, and serve.

1 onion, chopped
2 tablespoons minced garlic
2 (10 ounce) packages frozen chopped spinach, thawed

8 ounces spaghetti

Steps:

  • Cook noodles in a large pot of boiling water until al dente. Drain.

2 cloves garlic, minced
1 tablespoon butter
1/3 cup white wine
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1/2 cup cream cheese
1 cup evaporated milk
1/4 cup freshly grated parmesan cheese

Steps:

  • Saute garlic in butter over very low heat for 2 minutes.
  • Add wine, bring to a boil, add spinach and reduce heat to low.
  • Add cream cheese and stir until melted.
  • Add milk, increase heat to medium high and stir until sauce is smooth and heated through.

1/3 cup shallots, minced
1 pound spinach, stemmed and washed
1 bunch basil, stemmed (4 to 5 cups lightly packed)
1/2 cup finely grated Parmesan
1/2 cup ricotta cheese
Coarse salt and ground pepper
1/8 teaspoon ground nutmeg
1 1/2 pounds fettuccine

Steps:

  • In small saucepan, heat olive oil over medium-low heat. Cook shallots, stirring occasionally, until soft, about 5 minutes.
  • Meanwhile, submerge spinach and basil in a large pot of simmering salted water; drain immediately. Squeeze out as much liquid as possible; transfer spinach and basil to a food processor.
  • Add shallots, ricotta, Parmesan, and nutmeg; season with 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Process until smooth.
  • Cook pasta until al dente, according to package instructions. Drain, reserving 1 cup pasta water. Toss pasta with spinach sauce; thin with pasta water, as needed. Serve with extra grated Parmesan, if desired.

  • Prepare the pasta, according to package directions, while you make the rest of the meal.
  • Put half the olive oil in a large pan, add the diced chicken and brown- set aside.
  • Put the rest of the olive oil in the pan and add the onions and mushrooms.
  • Cook until the juices from the mushrooms disappear (about 5- 7 mins) Add the chicken and spinach and mix thoroughly.
  • Add the sour cream and blue cheese and stir over a low heat until the blue cheese is melted.
  • Add the cooked pasta and stir to mix.
  • Add salt and pepper to taste and serve.

This recipe actually originated from a collaboration between my girlfriend (who lives in Italy) and myself one night. She was visiting, and after spending the day at the beach we were starving. Well, other than a few pantry items, a couple of slices of a baguette, 1 fresh tomato and not much else this was the end result. We came up with this amazing angel hair pasta, frozen spinach, pine nuts (yes, I always have them in the freezer), of course some parmesan, and lastly anchovies (yes, I keep those too, I add them to many sauces). Well we made this pasta which was great, grilled the baguette and broiled the tomato slices with nothing more than a little balsamic, olive oil, s/p and fresh basil. Dinner was amazing and so was this pasta. Now this is a light pasta dish, but has so much flavor. I actually like to serve this as a side dish sometimes if you don't want to serve it as a main dish. It is great as a side with grilled fish like, Halibut, Cod, Tilapia or even grilled scallops. I like use a lemon, olive oil, salt and pepper marinade for the seafood to keep it simple which goes well with the pasta. Give it a try, I know you will really enjoy it. I never really liked anchovies until I tried them toasted or sauteed - they get nutty and sweet. This is literally a 20 minute great dish and serves 4 for a pretty good price. As I said, some fresh tomatoes, grilled bread and dinner in a hurry for family or friends.

2 (10 ounce) boxes frozen leaf spinach (thawed and squeezed)
1 (1 lb) box angel hair pasta (you could also use thin spaghetti is you want)
4 teaspoons minced garlic
1 large shallot, thin sliced
8 anchovy fillets, chopped (canned)
5 tablespoons pine nuts, toasted (3 crushed, 2 whole)
1 teaspoon lemon juice
1 teaspoon lemon zest
4 tablespoons olive oil
3 tablespoons butter (no margarine)
grated parmesan cheese

Steps:

  • Spinach -- Just thaw and squeeze dry and set to the side. It will take only a couple of minutes to heat up in the sauce.
  • Pasta -- Again, takes just minutes for Angel Hair pasta to cook so make sure you sauce is done or at least started. This dish only takes minutes.
  • For the pasta cook according to directions - a large pot of salted water. when done, drain and set to the side to keep warm.
  • Sauce -- In a large saute pan, add the oil and and bring to a medium high heat. Add the pine nuts and toast until golden brown. They will only take a minute and stir often. Remove to a paper towel to let them drain. Then add the garlic and shallot and cook two minutes until they start to get golden brown, add the anchovies and cook another minute. Add the spinach breaking it up as you add it to the pan along with the butter and cook 2-3 minutes.
  • Pine Nuts -- I take about 1/2 or a little less and break them up a bit. You can just use the back of a fork or you can put them in a baggie and just hit them with the bottom of a pan or bowl to slightly crush them. You just want to break them up a bit.
  • Finishing -- Pasta should be done and drained. Simply add the pasta to the sauce pan along with the pine nuts, lemon juice and zest and toss well.
  • Garnish with fresh grated parmesan. Literally a 20 minute dish and absolutely delish! And if you think you didn't like anchovies, you will.

This is lovely served on any pasta. I think it originally came from an old WW Pasta Cookbook, so it's fairly low in calories and it's so simple that even my boyfriend cooks it. It makes quite a 'dry' pasta sauce.

1 teaspoon olive oil
1 small onion, finely chopped
500 g fresh spinach, chopped
1/2 teaspoon fresh thyme, chopped
120 g ricotta cheese
1/2 teaspoon nutmeg, freshly grated
15 g pine nuts, toasted
salt, to taste
fresh ground black pepper
1 teaspoon vegetable stock, powdered (optional)
1 garlic clove, minced (optional)

Steps:

  • Heat the oil in a pan and fry the onion on a gentle heat until soft but not browned.
  • Add the thyme, garlic (if using) and spinach.
  • Continue to cook on low heat until the spinach leaves have wilted, approximately 2-3 minutes. If you're spinach was very wet and there is a lot of water in the pan, drain some off otherwise the sauce will be very runny. If you're not sure drain it into a separate bowl you can always add some later if you feel it's too thick.
  • Add the ricotta cheese and mix, using a wooden spoon, until it forms a smooth sauce.
  • Season, using nutmeg (I use more than stated above, but then I really like nutmeg), salt, freshly ground pepper and powdered vegetable stock to taste.
  • Sprinkle with toasted pine nuts and serve straight away on your favourite pasta.

400 g bacon, diced
1/2 cup white wine
1 cup cream (I use light)
1 (300 g) box frozen spinach, thawed

2 tablespoons toasted pine nuts (shake them in a dry pan over high heat until golden-remove to a plate to cool)

Steps:

  • Heat the oil in a large frypan and fry the onion, garlic and bacon over medium heat for about 10 minutes.
  • Add the white wine, cream, spinach and black pepper and bring to a gentle boil; reduce the heat and cook for a couple of minutes.
  • Add the sundried tomatoes and parmesan cheese, stir through and serve with the cooked pasta of your choice, with the toasted pinenuts over the top.
  • Serve with extra parmesan if you wish.

2 cups heavy cream
4 tablespoons sweet butter
7 teaspoons salt
1 pinch of freshly grated nutmeg
1 lb fresh spinach pasta, narrower noodles preferred
1 tablespoon grated imported parmesan cheese
1 1/2-2 cups flaked poached salmon, all skin and bones removed
1/3 cup chopped fresh dill, plus additional dill sprigs for garnish

Steps:

  • Bring the cream and half of the butter to a simmer in a small saucepan.
  • Add 1 tsp.
  • of the salt, and the nutmeg, continue to simmer until cream is reduced by about one third.
  • Bring 4 quarts water to a boil in a large pot, add remaining 6 tsp.
  • of salt, and drop in the noodles.
  • Meanwhile, stir grated Parmesan, then the flaked salmon and 1/3 cup shopped dill into the cream, and remove from heat.
  • Remember, fresh pasta is ready in 2 to 3 minutes at the most.
  • Drain pasta, return it to the hot pan and toss with remaining butter until butter is melted.
  • Divide pasta equally among 6 heated plates and spoon salmon cream sauce over each portion.
  • Garnish with a sprig of fresh dill and serve at once.

1-1/2 pounds bulk mild Italian sausage
3 cups sliced fresh mushrooms
1/2 cup each chopped carrot, green pepper and onion
1 can (28 ounces) crushed tomatoes
1 can (15 ounces) tomato sauce
1 can (6 ounces) tomato paste
1/2 cup grated Parmesan cheese
1/2 cup beef broth or red wine
3/4 teaspoon each aniseed, seasoned salt, pepper, garlic powder, brown sugar, dried basil and oregano

1/2 cup chicken broth or water
3 1/2 pounds chicken parts, preferably thighs, skinned and well trimmed, or 21/2 pounds boneless, skinless chicken, cut into 1-inch pieces
2 10-ounce packages frozen spinach (rinse away any ice crystals)
1 1/2 cups thick tomato pasta sauce
1 tablespoon mild curry powder, or more to taste
Salt to taste
Chopped fresh cilantro, for garnish

Steps:

  • Place the broth and chicken in pressure cooker. Place the frozen blocks of spinach on top. Pour on the sauce and sprinkle on the curry powder. Gently stir the curry powder into the sauce. (Do not stir the chicken into the sauce; the goal is to prevent scorching the pasta sauce on the bottom while the cooker is coming up to pressure.)
  • Lock the lid in place. Over high heat, bring to high pressure. Reduce the heat just enough to maintain high pressure and cook for 4 minutes for boneless chicken pieces or 12 minutes for chicken parts. Quick-release the pressure. Remove the lid, tilting it away from you to allow excess steam to escape.

1 pound chicken breast, or tenders
1 teaspoon paprika
1 teaspoon Italian seasoning (thyme, oregano, basil - combined)
5 medium tomatoes, chopped in large cubes
1 cup cooked spinach

6 bacon strips, cooked and chopped
1 1/3 cups half and half
1 1/3 cups Parmesan cheese, shredded
10 ounces uncooked penne pasta

  • Heat 2 tablespoons of olive oil until hot, in a large skillet . Add chicken and cook on one side on high heat for 1 minute. While it cooks, sprinkle the uncooked sides of the chicken with paprika and Italian seasoning. Flip the chicken over, and cook on the other side for 1 minute on high heat. Reduce heat to medium, flip chicken over again and cook, covered, for several minutes until no longer pink in the center. Remove chicken from the pan and keep chicken warm. To the same pan (but without chicken), add chopped tomatoes, spinach, garlic, crushed red pepper, 1/3 of the chicken (sliced into small strips) and half the bacon (it should be already cooked and drained of fat). Stir until well mixed. Add half and half and bring to boil, add grated Parmesan cheese: Reduce to simmer and stir, until the cheese melts and the sauce is creamy, only about 1 minute (at most 2 minutes). Remove from heat. Season with more crushed red pepper and salt, if needed. In the mean time, cook pasta according to package instructions. Add cooked pasta to the skillet with the sauce. Add remaining half of baon (already cooked and drained of fat). Season with more salt if necessary. Slice the remaining 2/3 of chicken into thin strips. To serve, top the pasta with chicken strips and grated Parmesan cheese.

2 Tbsp butter
2 Tbsp flour
1 1/2 c milk
salt and pepper to taste
1 tsp chives, dried
1/4 tsp nutmeg
1 tsp garlic powder
1 lb cooked pasta

Steps:

  • 1. in a deep skillet place sausages in pan and add just enough water that the meat is half way covered. Cook on med-hi heat until sausages are cooked through.
  • 2. Remove sausage from the pan while reserving the water for later use. Cut sausages into slices. set aside
  • 3. in skillet melt butter, when melted add flour and let cook for about 2 minutes stirring constantly, Then add milk while whisking to avoid flour clumps, Then add water from the sausage until sauce reaches the consistency you would like( if sauce becomes to thin just add small amounts of flour until it thickens bake to the consistency you want)
  • 4. add salt pepper garlic powder nutmeg and chives. stir well to incorporate. Serve immediately over pasta and sausage. Garnish with Parmesan cheese.

3 egg yolks
1 teaspoon mayonnaise
3 teaspoons lemon juice
1 pint virgin olive oil
2 skirt steaks
2 tablespoons A.1. Original Sauce
8 ounces pasta
1 pinch salt
1 teaspoon garlic
6 ounces fresh spinach
1 ounce parmesan cheese

Steps:

  • boil 16 ounces of water for pasta, add a pinch of salt.
  • once water comes to a boil, add uncooked pasta for 7 to 8 minutes, a la dente.
  • season your steaks with a tablespoon on each of A1 sauce.
  • cook steak for five minutes on each side on a low to medium heat.
  • take pasta off once done, drain water off from pasta into a colander.
  • let your steak rest for about 5 minutes to seal in the juices, before slicing thinly into thin strips.
  • plate your pasta, put your thin strips of steak on top.
  • make your Aioli Sauce.
  • blend 3 egg yolks, 1 pint of virgin olive oil, 1/4 teaspoon of minced garlic.
  • Add 2-3 tablespoons of lemon juice at the end of the sauce if too thick, too unthicken (5 minutes).
  • Warm your sauce with the spinach for about 5 minutes.
  • Drizzle the sauce with the spinach over the plated pasta and steak.
  • May grate some fresh parmesan on top of each plate.

1 teaspoon olive oil
1 clove garlic, crushed
1 medium onion
2 1/2 cups ripe tomatoes (you could use canned)
2 teaspoons tomato paste
1 -2 small chile, chopped
2 teaspoons fresh basil
1 teaspoon dried oregano (I use 1 tablespoon fresh)
black pepper
40 g kalamata olives, pits removed and chopped
2 cups spinach (wash well and remove the tough stems)

Steps:

  • Heat the oil and cook the garlic and onion gently until the onion is transparent.
  • Add the tomatoes, paste, chillies, herbs and pepper and heat stirring until the tomatoes soften and release their juices.
  • Add the olives, and heat until the sauce reaches desired consistency.
  • Stir through the spinach until warmed through.
  • Serve over any pasta you enjoy.
  • I sometimes add maybe 200g of chicken breast strips at the stage where you fry the onions.

The other night I wanted pasta and beans, but not like a soup. I looked through some recipes and nothing was quite what I wanted -- so I threw this together, and it rocked! You can vary the herbs according to what you have handy, and use any type of white bean (navy, cannellini, great northern, etc). Any extra sauce can be kept in the fridge and reheated -- just be sure to add a little of the starchy pasta water if needed to thin it out, as it gets pretty thick and clumpy.

2 tablespoons extra virgin olive oil
1 small onion, minced
3 garlic cloves, minced
1 small carrot, minced
1 stalk celery, minced
2 cups tomato puree
2 cups cooked white beans
1/4 cup sun-dried tomato, chopped
1/2 teaspoon fresh savory, minced
1/2 teaspoon fresh oregano, minced
1/2 teaspoon fresh rosemary, minced
5 ounces frozen spinach, thawed
salt & freshly ground black pepper, to taste
8 ounces whole wheat pasta, cooked
1/4 cup freshly grated parmesan cheese, for garnish

Steps:

  • Cook the pasta according to the package directions. When it's done, drain and reserve a little of the cooking water (1/2 cup or so). Return to the pot and keep warm while the sauce cooks.
  • Meanwhile, heat the oil in a large saucepan over medium-high heat. Add the onion, garlic, carrot, and celery and cook, stirring frequently, until soft, 2 or 3 minutes. Add the tomato puree, beans, sun-dried tomatoes, and herbs to the pot and stir well. Season with salt and pepper. Simmer over medium-low heat while the pasta cooks. Toward the end of the cooking time, add the spinach to the sauce and cook just until heated through.
  • Add the cooked pasta to the sauce and mix thoroughly, adding enough of the pasta water to make the sauce the consistency you like. Serve hot, garnished with the grated Parmesan.

2 tablespoons olive oil
1 pound chicken (chicken breast or tenders)
1 teaspoon paprika
1 teaspoon Italian seasoning (thyme, oregano, basil - combined)
5 medium tomatoes, chopped in large cubes
1 cup cooked spinach
5 garlic cloves, minced
1 tablespoon crushed red pepper
6 bacon strips, cooked, drained of fat, and chopped
1 and 1/3 cups half and half
1 and 1/3 cups Parmesan cheese, shredded
10 oz penne pasta

Steps:

  • In a large skillet, on high heat, heat 2 tablespoons of olive oil until hot. Add chicken and cook on one side on high heat for 1 minute. While it cooks, sprinkle the uncooked sides of the chicken with paprika and Italian seasoning. Flip the chicken over, and cook on the other side for 1 minute on high heat. Reduce heat to medium, flip chicken over again and cook, covered, for several minutes until no longer pink in the center. Remove chicken from the pan and keep chicken warm. To the same pan (but without chicken), add chopped tomatoes, spinach, garlic, crushed red pepper, 1/3 of the chicken (sliced into small strips) and half the bacon (already cooked and drained of fat). Mix everything. Add half and half and bring to boil. Only after half and half starts boiling, add grated Parmesan cheese - immediately reduce to simmer and stir, while simmering, until the cheese melts and makes the sauce creamy, only about 1 minute (at most 2 minutes). Then, immediately remove from heat. Season with more crushed red pepper and salt, if needed. In the mean time bring a large pot of water to boil, add pasta and cook it according to instructions. Drain the pasta, rinse with cold water and drain again. Add pasta to the skillet with the sauce. Add remaining half of bacon (cooked and drained of fat). Season with more salt if necessary. Slice the remaining 2/3 of chicken into thin strips. To serve, top the pasta with chicken strips and grated Parmesan cheese.
