1 large potato, peeled and halved
8 eggs, beaten
1 tablespoon flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons extra virgin olive oil
1 -2 garlic clove, minced
1/2 bunch spinach, trimme and rinsed
1/2 onion, thinly sliced
1/4 teaspoon paprika, sweet or 1/4 teaspoon paprika, smoked

Steps:

  • In saucepan of boiling salted water, cook potato until tender, about 10 minutes. Drain and let cool. Cut into 1" chunks.
  • Meanwhile, whisk together eggs, flour, baking power, an half the salt; set aside.
  • In a 9" nonstick ovenproof skillet, heat half of the oil over medium-high heat; saute garlic for 1 minute. Add spinach; cook, stirring, until wilted and no liquid remains. Transfer to bowl.
  • Add remaining oil to skillet; cook onion, stirring occassionally, until softened, about 6 minutes. Add potato; cook, stirring, until softened and starting to brown. Stir in paprika and remaining salt. Stir in spinach and egg mixture. Transfer skillet to 350F oven; bake until firm, about 20 minutes.

I was experimenting with ingredients I had leftover from making spinach quiche and decided to try making a yummy omelet with some of them. I love pepper so I chose to increase the amount of it in my omelet. I also used frozen spinach. There's no need to thaw it. I used a knife to shave off what I needed. Cheese is optional because this omelet has great flavor without it and is much healthier. If you decide to add cheese I recommend Laughing Cow brand Creamy Swiss.

2 eggs (equivalent in Eggbeater's)
4 -5 tablespoons finely chopped spinach (fresh or frozen)
1/4-1/2 teaspoon white pepper
1/4-1/2 teaspoon nutmeg
1 pinch salt (optional)
2 tablespoons olive oil (butter or margarine may be substituted)
3 tablespoons cheese (optional)

Steps:

  • In a blender or by hand, combine eggs, spinach, salt, pepper and nutmeg.
  • Blend until thoroughly mixed.
  • In a small frying pan heat olive oil.
  • When oil is hot pour egg mixture into pan and cook as you would normally cook any omelet.
  • When eggs are throughly cooked in omelet form, add cheese to half of omelet and fold.
  • Bon appetit!

There are several recipes here using potatoes and mashing them for a similar dish but sometimes you don't have the time to make something that looks this good! Here is a quickie substitute for a taste good, looks good dish

Number Of Ingredients 10

1 (10 ounce) package frozen chopped spinach
1/4 cup water
1 teaspoon salt
1 1/3 cups water
2/3 cup 2% low-fat milk
3 tablespoons margarine
1/2 teaspoon salt
1 1/3 cups instant mashed potatoes
2 tablespoons cooked bacon, pieces
3 ounces cheddar cheese, shredded

Steps:

  • In a saucepan, combine spinach, 1/4 cup of water and 1 tsp salt. Cook, covered 10 minutes or until tender.
  • Drain well.
  • In a saucepan combine 1 1/3 cups water with milk and margarine with 1/2 tsp salt.
  • Bring to boiling and remove from heat. Stir in potato flakes. Stir together cooked spinach, potato mixture and bacon pieces.
  • Turn mixture into a 1 quart baking dish. Sprinkle with cheese.
  • Place under broiler for 1-2 minutes or till cheese melts.
