Spinach and Mushroom Salad image

An easy and delicious simple salad

Number Of Ingredients 7

1 bag of pre-washed baby spinach (about 8 ounces or 5 big handfuls)
2 small lemons
1 tbsp dijon
1 small container of white mushrooms (cleaned) (about 5 ounces)
4 tbsp good quality extra virgin olive oil
1 tsp salt (or to taste)
fresh ground pepper to taste

Steps:

  • Fill a medium bowl with 3 cups of water and squeeze 1 lemon into the water.
  • Slice your mushrooms and add them into the lemon water bowl and lightly mix and set aside.
  • In a large salad bowl, add your olive oil, dijon, salt and juice of 1 lemon and pepper to taste then whisk until it all comes together.
  • Drain your mushrooms and add them to the bowl along with your baby spinach.
  • Toss the dressing and your salad together and serve immediately

Romaine and Mushrooms Salad with Garlic Caper Vinaigrette image

1 garlic clove
1 teaspoon drained bottled capers
1/4 teaspoon salt
1 tablespoon red-wine vinegar
1/4 cup olive oil
14 romaine leaves, washed well, spun dry, the ribs discarded, and the leaves sliced thin (about 3 cups)
4 mushrooms, sliced thin

Steps:

  • Mince the garlic and the capers and with the flat side of a knife mash the mixture with the salt to form a paste. In a bowl whisk together the garlic paste, the vinegar, and salt and pepper to taste, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. Add the romaine and the mushrooms and toss the salad well.

A simple and very quick side dish that goes well with almost anything. I especially like it chicken fixed anyway.

1 pint fresh mushrooms, sliced or 8 ounces canned mushroom slices, drained
1 -2 teaspoon chopped garlic
1 tablespoon butter
1 tablespoon olive oil
salt
fresh ground black pepper
feta cheese

Steps:

  • Melt butter and olive oil together.
  • Sauté mushrooms and garlic a couple minutes then add spinach and sauté until just wilted and tender.
  • Season to taste with salt and freshly ground black pepper.
  • Garnish with crumbled feta cheese just before serving.

This salad has a warm and slightly tangy bacon dressing. It's one of my family's favorite ways to enjoy a spinach salad.

4 slices bacon
2 eggs
2 teaspoons white sugar
2 tablespoons cider vinegar
2 tablespoons water
½ teaspoon salt
1 pound spinach
¼ pound fresh mushrooms, sliced

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside. Reserve 2 tablespoons bacon fat.
  • Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and cut in wedges.
  • Return 2 tablespoons bacon fat to skillet, stir in sugar, vinegar, water and salt. Keep warm.
  • Wash and remove stems from spinach, dry thoroughly and break into pieces in salad bowl. Pour warm dressing over and toss until coated.
  • Top salad with mushrooms and bacon, garnish with egg.

Baked Salmon With Tomatoes, Spinach and Mushrooms image

If you're looking for a tasty, low carb and healthy way to cook fish, try this! The original recipe calls for salmon but you can substitute red snapper or orange roughy fillets for the salmon. This recipe comes from a Kraft pamphlet which I picked up in the supermarket!

4 (100 g) salmon fillets
2 cups chopped fresh spinach
1 cup sliced mushrooms
1 medium tomatoes, chopped
1/3 cup Kraft sun-dried tomato salad dressing

Steps:

  • Place salmon fillets, skin sides down in a baking dish which has been sprayed with a non stick cooking spray (Pam or similar).
  • Mix remaining ingredients until well blended, then spoon over the salmon.
  • Bake at 375 degrees F for 20- 25 minutes or until the salmon flakes easily with a fork.
