An awesome take on macaroni and cheese! Fat-free Greek yogurt and low-fat cream cheese gives the sauce a very creamy and flavorful base--without all the fat found in heavy cream--and shredded cheeses add lots of intense flavor. Fresh spinach and salty prosciutto perfectly complement the dish!

1 (16 ounce) package dried elbow macaroni
4 thin slices prosciutto, or more to taste
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon red pepper flakes
1 teaspoon ground black pepper
2 cups fat-free plain Greek yogurt
½ (8 ounce) package reduced-fat cream cheese, cut into small pieces
1 ½ cups shredded Gruyere cheese
1 ½ cups shredded white Cheddar cheese
3 cups roughly chopped fresh spinach

Steps:

  • Set an oven rack to the top position and preheat to 400 degrees F (200 degrees C). Line a baking pan with aluminum foil. Coat a 9x13-inch baking dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain macaroni, reserving 2 1/2 cups pasta water. Pour macaroni back into the pot.
  • While the macaroni is cooking, place prosciutto on the prepared baking pan.
  • Cook prosciutto on the top rack of the preheated oven until dry and crispy, but not burnt, 6 to 8 minutes. Remove from the oven and chop roughly. Lower the oven to 350 degrees F (175 degrees C) and lower the rack to the middle position.
  • Melt butter in a saucepan over medium heat. Add flour and whisk for 1 minute. Add garlic powder, cumin, red pepper flakes, and pepper; cook for 1 minute more. Whisk in Greek yogurt and cook until heated through and bubbling, 2 to 3 minutes. Whisk in 1 1/2 cups of the reserved pasta water; cook for 2 to 3 minutes.
  • Add cream cheese and stir until melted. Add a generous 1/4 cup each of Gruyere and Cheddar cheeses, stirring until thoroughly melted; repeat until all cheese had been added and sauce is thick. Stir in as much of the remaining pasta water as necessary to reach desired consistency.
  • Stir spinach into the cooked macaroni. Add cheese sauce; stir until combined and macaroni is coated. Pour into the prepared baking pan and sprinkle prosciutto over top.
  • Bake in the preheated oven until edges are bubbling slightly, 15 to 20 minutes.

8 ounces spinach fettuccine
1 teaspoon olive oil
1 medium zucchini, thinly sliced
1 medium yellow squash, thinly sliced (or 4-5 pattypan)
1 red bell pepper, cored, seeded and sliced
2 garlic cloves, thinly sliced
1/4 cup fat free chicken broth
1/2 cup nonfat yogurt
1/4 cup fresh basil, chopped
2 tablespoons parmesan cheese
1 tablespoon light cream
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Cook pasta as directed on package; drain. Set aside.
  • Coat a large skillet with cooking spray. Heat over medium-high heat; add oil. Add zucchini, squash, bell pepper and garlic. Reduce heat to low; cook until pepper begins to soften, 2 to 3 minutes.
  • Add broth; cook until all vegetables are tender, 3 to 4 minutes.
  • Remove from heat; add pasta, yogurt, basil, cheese, cream, salt and pepper. Toss and serve immediately.

1 1/2 (12-ounce) packages spinach fettuccini, 18 ounces total
2 tablespoons butter
2 cloves garlic, finely chopped
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup cream
8 ounces Gorgonzola, cut into small pieces
A few leaves fresh sage, finely chopped
Freshly ground black pepper
4 handfuls baby spinach leaves

Steps:

  • Heat water to a boil for pasta, salt water and cook pasta to al dente.
  • Heat butter in a large sauce pot with butter, add garlic, cook 2 minutes then whisk in flour, cook 1 minute. Whisk in stock then cream, bring to a bubble and stir in Gorgonzola, about 2 minutes until melted. Stir in sage and a little pepper and cook 3 minutes more.
  • In a serving bowl toss hot pasta with sauce and fresh spinach to wilt in.

CREAMED SPINACH PASTA

This pasta nods to everyone's favorite steakhouse side, and it comes together in no time, making for a fine weeknight meal. One full pound of fresh spinach is cooked down in garlicky butter before cream is added, then simmered until thickened. The cooked pasta is added directly to the sauce, then tossed with ricotta cheese for even more richness. Fettuccine or tagliatelle pasta work best, but the creamy sauce will cling to any long noodles. Top with pine nuts, walnuts or hazelnuts for crunch, or leave the nuts out entirely. Serve as a side to grilled steak, chicken or fish, or serve it on its own, paired simply with a glass of bubbles.

1 cup whole-milk ricotta
Kosher salt and black pepper
1 pound long pasta, such as fettuccine or tagliatelle
3 tablespoons pine nuts (optional)
4 tablespoons unsalted butter
3 garlic cloves, thinly sliced
1 pound fresh baby spinach
1 cup heavy cream
1/4 teaspoon grated nutmeg
Grated pecorino or Parmesan, for serving

Steps:

  • Add the ricotta to a large bowl; season well with salt and pepper and set aside.
  • Bring a large pot of well-salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water and drain.
  • Prepare your sauce while the pasta cooks: If using, cook the pine nuts in a deep 12-inch skillet over medium heat until toasted, stirring occasionally to make sure they do not burn, 2 to 3 minutes. Transfer to a small bowl.
  • Wipe skillet clean and melt the butter over medium-low heat. Add the garlic and sauté until pale golden, about 2 minutes. Add the spinach, stirring it in by the handful if needed, and cook until it wilts, adding a few tablespoons of the pasta water to help it along if needed, about 4 minutes. Season with salt.
  • Add the cream, bring to a simmer over medium heat and cook until sauce begins to thicken slightly, about 2 minutes more. Stir in the nutmeg then season with salt and pepper. Add the cooked pasta directly to the skillet and toss until the noodles are glossy with sauce.
  • Turn off heat and stir in the prepared ricotta, thinning the sauce with a bit of pasta cooking water if needed. Taste and adjust seasonings as needed. Divide among bowls. Top with pine nuts, if using, and pass grated pecorino or Parmesan at the table.

3 tablespoons butter or 3 tablespoons margarine
1 cup fresh mushrooms, sliced 1/4 inch
1 tablespoon all-purpose flour
1/4 cup grated parmesan cheese
1 1/2 cups half-and-half
1 (10 ounce) package frozen chopped spinach, thawed, drained
15 cherry tomatoes, halved
1 teaspoon basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook fettucine according to package directions; drain, rinse and drain again.
  • Meanwhile, in 10" skillet melt butter; add mushrooms.
  • Cook over medium heat, stirring occasionally, until mushrooms are tender (2 to 3 minutes).
  • Stir in flour until smooth and bubbly (1 minute).
  • Stir in remaining ingredients, except fettucine.
  • Continue cooking, stirring occasionally, until heated through (6 to 8 minutes).
  • Serve over fettucine.
