This easy creamed spinach side is a wonderful addition to any elegant holiday meal, a neighborhood potluck or even a holiday work function.

1 pound fresh spinach (or 10 oz frozen spinach, thawed and squeezed dry)
1 teaspoon olive oil
¼ cup onion (minced)
1 tablespoon butter
⅓ cup heavy cream
2 ounces cream cheese
¼ teaspoon garlic powder
⅛ teaspoon seasoning salt
black pepper to taste

Steps:

  • Wash and dry spinach if using fresh. Remove any tough stems and roughly chop.
  • Cook spinach in a pan with olive oil over medium heat until wilted and cooked through, about 3 minutes. Remove from pan and place in a strainer to drain.
  • Add onion and butter to the pan and cook on medium low heat until onion is softened. Add remaining ingredients and bring to a simmer while stirring until smooth. Simmer 1-2 minutes or until thickened.
  • Squeeze any excess moisture out of the spinach. Add back to the pan and stir to combine. Heat through and serve.

This spinach chickpea stew turns a bag of frozen spinach and some chickpeas into a wholesome one-pot dinner to feed a crowd! There are variations of this spinach stew recipe with tomatoes throughout the Mediterranean and the Middle East. My mom made her spinach stew, Egyptian-style using lean ground beef, but I opted for a vegan option, which is just as hearty and satisfying, thanks to chickpeas!

extra virgin olive oil
1 medium yellow onion ((finely chopped))
4 garlic cloves ((minced))
kosher salt
1 cup san Marzano tomatoes ((with their juices))
2 cups chicken broth ((or vegetable broth))
1 pound frozen spinach ((chopped))
15 ounces canned chickpeas, drained and rinsed
1 cup fresh parsley ((chopped))
1 teaspoon allspice
1 teaspoon coriander
1 teaspoon paprika
1/2 teaspoon red pepper flakes
black pepper
1/2 cup broken vermicelli noodles ((or orzo))
1 lemon ((juice of))

Steps:

  • In a large pot, heat ¼ cup extra virgin olive oil over medium heat until shimmering. Add the onions and garlic and cook, tossing regularly, for 3 to 5 minutes or until softened.
  • Add the tomatoes, spinach, chickpeas, and chicken broth. Add the parsley and season with a good dash of kosher salt and black pepper. Stir in the spices.
  • Bring to a boil of medium-high, then turn the heat down to low and cover partway, leaving part of the top open. Allow the spinach to simmer for 25 minutes over low heat, stirring occasionally.
  • While the spinach stew is simmering, toast the vermicelli. In a small pan, heat about 1 tablespoon olive oil over medium-high. Add the vermicelli and continuously stir to toast it evenly. Vermicelli should turn a nice golden brown, but watch carefully not to over-brown or burn. Remove from heat.
  • Stir in the toasted vermicelli in the spinach stew and cook for another 10 minutes or until the vermicelli noodles are cooked to tender.
  • Remove from the heat and finish with lemon juice and a good drizzle of extra virgin olive oil.

1 lb spinach, washed and shredded
2 ounces butter or 2 ounces margarine
2 1/2 tablespoons whole wheat flour
1 1/4 cups milk (use skim or 2% if you wish)
salt and pepper
3 cloves garlic, crushed
1/2 cup parmesan cheese, grated

Steps:

  • Stir fry the spinach in half the butter until it is just limp, drain and keep warm.
  • Add remaining butter to saucepan and the flour, stir until smooth, keep stirring& add the milk, add garlic and cook until it thickens about 5 minutes.
  • Season with salt& pepper.
  • Stir in the spinach.
  • Place in ovenproof casserole, sprinkle with cheese and brown under the broiler 8-10 minutes.

1 (10 ounce) bag spinach leaves
1 ½ teaspoons garlic salt
¼ cup grated Parmesan cheese

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the spinach to the skillet and cover; allow to cook 5 minutes. Stir in the garlic salt and cover again for another 5 minutes; remove from heat. Sprinkle with Parmesan cheese to serve.
