SPINACH-FETA CRESCENTS



Spinach-Feta Crescents image

Number Of Ingredients 11

One 10-ounce package frozen chopped spinach, thawed
2 ounces cream cheese, at room temperature
2 ounces crumbed garlic-and-herb feta cheese (about 1/2 cup)
3 scallions, finely chopped
2 tablespoons finely chopped fresh dill
2 tablespoons grated Parmesan
1 teaspoon finely grated lemon zest
Kosher salt and freshly ground black pepper
All-purpose flour, for working the dough
Two 8-ounce cans refrigerated crescent-roll dough
1 large egg, beaten

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Put the spinach in a kitchen towel and wring very dry (to get about 1/2 cup dry spinach). Put the spinach into a large bowl, breaking up the clumps with your fingers. Add the cream cheese, feta, scallions, dill, Parmesan, lemon zest, 1/2 teaspoon salt and some black pepper. Mix well.
  • Lightly flour your hands and work surface. Unroll the crescent dough and separate into triangles along the perforated lines. Put about a tablespoon of filling at the shortest end of a triangle, and roll. Place the roll, point-side down, on the prepared baking sheet, tucking in the ends to form a crescent shape. Repeat with the remaining triangles and filling, spacing the rolls at least 1 inch apart on the baking sheet.
  • Brush the dough with the egg wash and bake until puffed and golden brown, about 12 minutes. Let the crescents cool on the baking sheet for a few minutes before transferring to a cooling rack. Serve warm or at room temperature.

I had this delicious sandwich in a local cafe and added my own twist to spruce it up. It would be lovely for a shower, a picnic or special occasion. I often use mini croissants for pretty smaller-sized servings.

1/2 cup Italian salad dressing
6 croissants, split
3 cups fresh baby spinach
4 plum tomatoes, thinly sliced
1 cup (4 ounces) crumbled feta cheese

Steps:

  • Brush salad dressing over the cut sides of croissants. On the bottom halves, layer the spinach, tomatoes and feta cheese; replace tops.

10 slices French bread (1 inch thick) or 6 croissants, split
6 large eggs, lightly beaten
1-1/2 cups 2% milk
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1-1/2 cups shredded Monterey Jack cheese
1 cup crumbled feta cheese

Steps:

  • In a greased 3-qt. or 13x9-in. baking dish, arrange French bread or croissant halves with sides overlapping. , In a large bowl, combine the eggs, milk, spinach, salt, nutmeg and pepper; pour over bread. Sprinkle with cheeses. Cover and refrigerate for 8 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, 40-45 minutes. Let stand for 5 minutes before cutting. Serve warm.

This is something that my Nee used to cook as a quick side dish. Don't be afraid, it really is a good dish despite the weird combination of ingredients.

1/2 cup onion, chopped
1 (16 ounce) package frozen spinach
2 tablespoons butter
1/4 cup water
2 eggs
seasoning salt

Steps:

  • In a large skillet, saute your onion in the butter until translucent.
  • Dump the frozen spinach into the skillet with the onion and add the 1/4 cup water. Cover and cook on medium heat, stirring occasionally to keep the spinach from sticking.
  • Once the spinach is wilted and appears done, pour in the 2 eggs which have been whisked well.
  • Stir continually until the egg turns white and the spinach appears "dry", but make sure not to overcook.
  • Sprinkle with seasoned salt (to taste) immediately before serving.

11 large eggs
¾ cup milk
2 cups shredded sharp Cheddar cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 teaspoon dried oregano

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

10 eggs
1 (16 ounce) package cottage cheese
1 (16 ounce) package shredded Monterey Jack cheese
½ cup butter, melted
½ cup all-purpose flour
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
2 (4.5 ounce) cans sliced mushrooms, drained
1 teaspoon baking powder
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with 1 teaspoon butter.
  • Whisk eggs in a large bowl. Add cottage cheese, Monterey Jack cheese, 1/2 cup melted butter, flour, spinach, mushrooms, baking powder, and salt; mix. Pour egg mixture into prepared baking dish.

This is a great way to get the kids to eat their spinach! You can also cut up the croissants into smaller chunks and serve as appetizers.

Pillsbury Refrigerated Crescent Dinner Rolls (the frozen kind that you roll up and bake)
onion soup mix (optional)

Steps:

  • If you want a more onion-like flavour, take bit of onion soup mix and grind it fine with a mortar and pestle first.
  • Unroll the croissant dough as per pkg directions.
  • Place a piece of dry spinach leaf on top.
  • Sprinkle a light dusting of onion soup mix on top if you are using it.
  • Roll up and bake as per pkg directions.
