My family loves this all year round if we can find strawberries. Even the grandchildren love this salad. Quick and easy.

2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
½ cup vegetable oil
¼ cup white wine vinegar
½ cup white sugar
¼ teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds

Steps:

  • In a large bowl, toss together the spinach and strawberries.
  • In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

1 (10-12 oz) package washed and dried baby spinach
1/3 cup toasted sliced almonds
1 quart hulled and quartered strawberries
1 whole peeled, seeded, and finely diced cucumber
1/2 juiced lemon
2 tablespoons white wine vinegar
1/3 cup sugar
1 tablespoon vegetable oil
1 teaspoon poppy seeds

Steps:

  • In a large salad bowl, toss together the spinach, almonds, strawberries, and cucumber. In a small glass dish or jar with a tight-fitting lid, combine the lemon juice, vinegar, sugar, oil and poppy seeds. Whisk in the glass dish or shake if using a jar.
  • Dress the salad right before serving.

1 cup pecans
1 egg white
3/4 teaspoon vanilla
1 cup sugar
1 tablespoon water
1 cup salad oil
1/3 cup cider vinegar
1/4 cup sugar
1 tablespoon poppy seeds
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon celery seed
2 tablespoons corn syrup
6 cups fresh spinach, washed and dried
2 cups strawberries, sliced (or any fruit desired for color)
3/4 cup red onion, thinly sliced
1 cup fresh mushrooms, sliced

Steps:

  • Make spiced pecans. Beat egg white until very frothy, but not stiff. Add remaining ingredients, excluding pecans. Now add pecans and mix to coat. Spread pecans on baking sheet in single layer and bake in a preheated 200 degree oven for 45 minutes, turning every 15 minutes.
  • For dressing, shake together all ingredients. Toss together salad ingredients. Toss dressing with salad just before serving, sprinkle dressed salad with pecans.

2 tablespoons white wine vinegar
1/3 cup sugar
1 tablespoon vegetable oil
1 teaspoon poppy seed
1/4 cup sliced almonds, toasted
1 1/2 cups strawberries (8 ounces)
1/2 medium cucumber, sliced and cut in half
1/4 small red onion, sliced into thin wedges
1 (6 ounce) package Baby Spinach

  • For dressing, zest lemon to measure 1/2 tsp zest.
