1 single crust pie shell
2 (10 ounce) packages frozen chopped spinach
2 beaten eggs
1 (10 3/4 ounce) can condensed cream of muchroom soup
1/4 cup flour
1 tablespoon horseradish
1 teaspoon mustard
1 (15 ounce) can corned beef, hash
1 cup shredded American cheese (4 ounces)
2 tablespoons chopped pimiento

Steps:

  • Prepare pastry shell.
  • Prick bottom and sides well with fork.
  • Bake at 450 for 10 to 12 minutes.
  • Remove from over; reduce oven temperature to 350.
  • Cook spinach according to package directions, except omit salt.
  • Drain well, pressing out excess water.
  • Combine eggs, mushroom soup, flour, horseradish and mustard; stir in drained spinach.
  • Spread hash in baked pie shell; spoon spinach mixture over.
  • Bake, uncovered, at 350 for 45 minutes.
  • Combine cheese and pimiento, sprinkle over pie.
  • Bake 2 to 3 minutes longer.
  • Let stand 5 minutes.

6 cups flour
2 cups water
2 packages dry yeast
3 teaspoons sugar
1 tablespoon salt
3 tablespoon oil
1 whole head garlic
1/2 cup corn oil
1/2 cup olive oil
10 bunches fresh spinach, cleaned and spun dry
2 cans (7 3/4 ounces) pitted black olives
5 pounds already made pizza dough
Egg yolk, beaten

Steps:

  • Dissolve yeast in warm water (100 degrees) and add sugar, let rest until foamy. Blend flour and salt and oil with yeast mixture. Knead for 10 minutes until soft and pliable. Place in oiled bowl and let rise until double in size.
  • For the Filling: Using food processor, mince entire bulb of peeled garlic. Place in a jar and fill with the corn oil and olive oil. This part should be done at least 24 hours prior to making pie.
  • In your largest mixing bowl, place part of the spinach, add garlic infused oil, 1/4 can of olives, salt and pepper to taste. With clean hands, mix all together. Continue layering in same manner until all the spinach is used. (Spinach will wilt as you continue process). Set mixture aside. Roll 1/2 pound dough into a circle approximately 8 inches across. Take portion of spinach, squeezing out excess liquid, and place in middle of the dough round. Fold dough over from one side to the other and seal edges with a floured fork. Continue making pies with remainder of the dough and filling. Brush the spinach pies with beaten egg yolk. Poke several holes in top of each pie to allow air to escape. Place on ungreased cookie sheet. Place in a preheated 400 degree oven for approximately 10 to 15 minutes or until golden brown. Remove from oven and place on cooling rack prior to cutting. Yield: 10 large spinach pies

3 cups chopped yellow onions (2 onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
3 (10-ounce) packages frozen chopped spinach, defrosted
6 extra-large eggs, beaten
2 teaspoons grated nutmeg
1/2 cup freshly grated Parmesan cheese
3 tablespoons plain dry bread crumbs
1/2 pound good feta, cut into 1/2-inch cubes
1/2 cup pignoli (pine nuts)
1/4 pound salted butter, melted
6 sheets phyllo dough, defrosted

Steps:

  • Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. Bake for 1 hour, until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely. Serve at room temperature.

GARLICKY CREAMED CORN AND SPINACH



Garlicky Creamed Corn and Spinach image

2 tablespoons butter
4 ears corn, kernels scraped from cob
2 large cloves garlic, finely chopped
Salt and freshly ground black pepper
1/2 cup heavy cream
Freshly grated nutmeg, to taste
2 bundles fresh farm spinach, about 1/2 pound trimmed weight, chopped

Steps:

  • Heat a large skillet over medium heat and add the butter. When the butter is hot, stir in the corn and the starchy liquid scraped from the cobs. Cook for 5 minutes, then stir in the garlic and season with salt and pepper, to taste. Cook for 2 to 3 minutes more, then add the cream and nutmeg, stirring occasionally, until very creamy, about 15 minutes. Add the spinach and stir until wilted. Season with salt and pepper, if needed. Transfer to a serving bowl and serve.
