Butter, for baking dish
3 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 1/2 cups half-and-half
3 large eggs, lightly beaten
1 1/2 cups coarsely grated Gruyere cheese (about 6 ounces)
Coarse salt and ground pepper
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees. Butter a shallow 1-quart baking dish.
  • In a large bowl, combine spinach, half-and-half, eggs, 1 cup Gruyere, 2 teaspoons salt, 1/8 teaspoon pepper, and nutmeg; stir to combine. Spread evenly in prepared baking dish, and top with remaining 1/2 cup Gruyere. Bake until set and top is golden brown, 30 to 35 minutes.

10 oz spinach, chopped
2 Tbsp butter
1/4 c onion chopped
1/4 c parmesan cheese, grated
1 c feta cheese, crumbled
1 c ricotta cheese
4 large eggs
salt and pepper
12 oz puff pastry sheet, thawed

Steps:

  • 1. Preheat oven to 350 degrees. Cook the spinach in boiling water. Drain, rinse with cool water, and squeeze out as much moisture as you can.
  • 2. Melt the butter in a small skillet. Cook the green onions until slightly soft.
  • 3. In a large mixing bowl, combine the cheeses and the eggs. Mix well.
  • 4. Add the spinach, the butter and scallions, the salt and pepper and mix again.
  • 5. Lightly butter the bottom and sides of an 8-inch square baking dish. Roll out a sheet of puff pastry on a floured surface to make a 14-inch square. Roll out a second sheet to make a 9-inch square. Lay the bigger pastry sheet in the buttered dish, draping the extra pastry over the edges.
  • 6. Spread the spinach and cheese mixture evenly in the dish. Put the remaining pastry sheet on top. Trim excess pastry if necessary and seal the edges closed. Use scraps of pastry dough to decorate the top of the pie.
  • 7. Brush top with additional melted butter if desired. Bake for 45 minutes at 350 or until pastry is golden brown. Let rest for 10 minutes before serving.

1 package frozen puff pastry, thawed
1 1/2 lbs frozen spinach, thawed and drained
3 cups shredded swiss cheese
1/2 cup milk
3 eggs
1/8 teaspoon garlic powder
1/2 teaspoon dried oregano
1 pinch of freshly ground nutmeg
salt and pepper

Steps:

  • Pre-heat oven to 400 F Line 9x13 inch casserole with puff pastry, stretching pastry half way up sides of casserole dish Prick puff pastry in several places with fork Bake at 400 F for approximately 12 minutes, until golden brown If pastry has puffed up, compress pastry Sprinkle half the cheese over puff pastry Spread spinach evenly over cheese Sprinkle remaining cheese over spinach.
  • In small bowl mix eggs, milk, garlic powder, oregano, nutmeg, salt and pepper Pour egg mixture over casserole Top casserole with lattice of puff pastry strips Bake casserole for additional 20-25 minutes, until lattice is golden brown.

12 frozen puff pastry shells, unthawed
1 cup heavy cream
1/4 cup whole milk
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 (16-ounce) package frozen chopped spinach, thawed and squeezed dry
1 1/4 cups grated Fontina cheese
1/4 cup freshly grated Parmesan
3 to 5 green onions, finely chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a heavy large baking sheet with parchment paper. Arrange the frozen pastry shells on the baking sheet and bake until they puff and become golden brown, about 20 minutes. Using a small knife, cut out the center of the pastry shells.
  • Meanwhile, stir the cream, milk, salt, and pepper in a medium bowl. Stir in the spinach, Fontina cheese, Parmesan, and green onions. Spoon the spinach mixture into the baked pastry shells. Bake until the pastries are golden brown and the filling is hot, about 25 to 30 minutes. Transfer the pastries to a platter and serve.

6 eggs
½ cup all-purpose flour
¼ cup sour cream
2 teaspoons salt
½ teaspoon ground black pepper
2 (10 ounce) packages frozen chopped spinach, thawed and drained
4 cups shredded Cheddar cheese, divided

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Place cottage cheese, eggs, flour, sour cream, salt, and pepper in a food processor. Process until smooth. Mix spinach, cottage cheese mixture, and 2 cups of Cheddar cheese in a bowl, then spread into the prepared baking dish.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 45 minutes. Top with the remaining 2 cups of Cheddar cheese and continue baking until cheese has melted, about 10 minutes.

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
4 ounces cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup crumbled feta cheese
2 large eggs, divided
2 garlic cloves, minced
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 400°. Unfold puff pastry; cut each sheet into 12 sections. 1 (8 ounce) package cream cheese
1 teaspoon seasoning salt
1 cup dried bread crumbs, seasoned

Steps:

  • Thaw spinach and squeeze out water. Soften cream cheese.
  • In a mixing bowl, combine spinach, cream cheese and seasoning salt. Mix well and spoon into 2 quart casserole dish.
  • Sprinkle with bread crumbs and bake at 350 degrees F (175 degree C) for 20 minutes.
