- Heat oven to 350°F. Grease bottom and sides of 9x5-inch loaf pan with shortening.
- In large bowl, stir together all ingredients except spinach thoroughly; beat with spoon 1 minute. Stir in spinach. Pour into pan.

POTATO BREAD STUFFING WITH BABY SPINACH AND FETA CHEESE
Steps:
- Preheat the oven to 375 F. In a large stockpot, heat olive oil, then add onions, celery, carrots and garlic. Cook for 10 minutes or until mixture is semisoft. Stir in sage and thyme. Add baby spinach and cook until wilted, about 5 minutes. Pour the mixture into a large bowl and add potato bread, feta cheese and parsley. Combine chicken broth and eggs, and whip. Pour liquid into vegetable mixture, and mix until all the ingredients are blended. Use nonstick spray or parchment paper to line two 9 x 13-inch pans and pour in the stuffing. Bake for 40 to 45 minutes. Garnish with your favorite herb. Makes 12 servings.
SPINACH AND TASSO BREAD PUDDING WITH GRUYERE CHEESE
This is a "stuffed" savory bread pudding that's perfect for a Sunday brunch. Rather than just jumble everything together, you do it in three layers -- bottom layer of dried or stale French bread, a layer of spinach, tasso and cheese, and more bread on top. It's easy to prepare the day before, so all you have to do on Sunday morning is pop it in the oven. Recipe by Chef Chuck Taggert.

Steps:
- Slice the bread into 1/2" slices and let dry out overnight.
- You may also dry them in a 200-225°F oven for about 30-40 minutes until they're completely dried; make sure you don't brown them.
- Heat 2 tablespoons olive oil in a large heavy skillet (don't use non-stick).
- Add the diced tasso.
- Brown the tasso for 5 minutes until some of the fat has been rendered out and you've got some nice brown bits stuck to the bottom of the pan.
- Remove from pan, drain on papertowels and set aside.
- Add the wine to the pan, making sure to scrape up all the browned bits.
- Reduce the wine by half.
- Pour out into a large bowl and set aside.
- In the same skillet, melt 2 tablespoons butter with the rest of the olive oil.
- Add the onions and garlic.
- Sauté for about 3 minutes, until onions are translucent.
- Add the spinach water and let it reduce.
- Add the chopped spinach.
- Continue to cook for 3 minutes, making sure that there's hardly any moisture left.
- Transfer to a bowl and set aside.
- Whisk the eggs in a large bowl.
- Add the half-and-half.
- Add the molasses, Worcestershire, hot sauce, the reduced wine, about 2 teaspoons of salt, plenty of fresh ground black pepper and Creole seasoning to taste.
- Butter the bottom and sides of a 9x13 baking dish.
- Make one layer of dried bread slices on the bottom.
- Use little broken-off pieces if you need to fill any little spaces.
- Cover the bread evenly with the spinach mixture.
- Sprinkle evenly with 1/3 of the grated cheese.
- Spread the diced tasso evenly over the cheese.
- Season with more Creole seasoning and pepper.
- Sprinkle with more cheese.
- Add a second layer of bread,filling the holes with broken pieces as needed.
- Give the custard a final mix with the whisk and pour evenly over the entire surface of the bread, making sure you wet everything.
- Season the top with more black pepper and Creole seasoning, the remaining cheese and a sprinkling of salt.
- Wrap the pudding in plastic wrap.
- Weigh the top down with a couple of boxes of brown sugar, a bag or rice or whatever you have available.
- This helps compress the layers of the pudding so that the custard will soak all the way through allowing it to cook more evenly.
- Refrigerate for at least 2 hours or overnight.
- When ready to cook,take the pudding out of the fridge and let it come to room temperature for about 30 minutes.
- Bake in a preheated oven at 325-350°F for about one hour, until the edges and center are puffy.
- Let the pudding cool for about 5 minutes.
- Slice and serve.

- Thaw spinach, then squeeze out as much liquid as you can. Place the dry spinach in a bowl and break up into small clumps.
- Preheat oven to 350. Line a baking sheet or pan with parchment paper, or spray well with non-stick spray.
- Add remaining ingredients to spinach and stir to break up the spinach into small pieces and combine the ingredients well.
- Spread batter evenly into prepared baking pan.
- Bake about 20 minutes, or until dry and turning golden brown.
- Remove from oven, loosen from parchment paper, let cool. Cut into desired serving sized pieces.
- I usually use a cookie sheet that measures 10x13, the batter spreads out to about 1/4 inch in this pan. When it is cooked it makes a thickish wrapper that can be rolled up around whatever ingredients. You can use a smaller pan to have thicker "bread" if desired.
- Keeps well in a plastic bag for a couple of days. I have never had enough to last longer than that, it usually gets eaten by the second day.

- Combine breadcrumbs, grated parmesan, ricotta, cooked spinach, olive oil, egg, salt and milk until it forms a dough that sticks together.
- Divide the dough into balls. Take one ball, flatten and place a cube of fontina cheese in the center, wrap the dough around the cheese. Dust with flour and set aside. Repeat with remaining dough balls.
- Cook the bread dumplings in boiling water. They are ready when they float to the surface. Remove with a slotted spoon and set aside.
- Heat olive oil in a large pan over medium high heat. Add the bread dumplings and cook until golden brown on all sides.
- Add butter and sage, toss to coat. Plate the bread dumplings. In the same pan with butter and sage, carefully add the balsamic vinegar and remove from heat.
- Spoon the balsamic butter sage sauce over the bread dumplings.
- Garnish with shredded parmesan and enjoy!

MIDWESTERN SPINACH & CHEESE SAVOURY BREAD PUDDING
I got this recipe yesterday from a recipe group and made it last night. The original recipe called for Jack cheese (and only half the amount), low fat milk, no garlic or onion or Parmesan and used white bread. I played with it and this is what I came up with. It turned out quite nicely as a side dish to Lamb chops but I imagine it would also make a lovely vegetarian main dish served with a salad on the side.

- Warm 1/4 cup of the reserved spinach liquid to just above 100F (105 to 115, ideally).
- Stir the yeast and sugar into the warm spinach liquid, let stand until foamy, 10 minutes.
- Add remaining 1/2 cup spinach liquid, feta cheese, oil, spinach, and nutmeg and stir thoroughly.
- Mix the flour and salt and stir into the spinach mixture.
- Knead on a floured surface or in a Mixmaster until dough is well marbled, 8 to 10 minutes. Add more flour, if the dough is sticky, but it is okay if it is slightly moist. Place the dough in an oiled bowl, cover tightly with plastic wrap, and let rise until doubled, 1-1/4 to 1-1/2 hours.
- The dough may be even wetter after rising because of the spinach. Pour the dough onto a well-floured work surface and flour the top of the dough if necessary. Shape into a loaf and place on a lightly oiled bread pan. Cover with a towel and let rise until doubled, about 45 minutes.
- Preheat oven to 425°F Bake for 10 minutes, then reduce the heat to 400F and bake the loaf 30 to 35 minutes.
- Cool completely on a rack.

Prepare your favorite recipe for a 1 pound white bread dough for this, make in your bread machine or on a stand mixer, or if you are one of those people that do not have experience in dough-making just go and purchase a loaf of frozen store-bought bread dough and thaw according to package directions....no shaping for these rolls, the dough is stuffed, rolled, sliced like sweet roll dough and baked in muffin tins. The dough for this recipe must have had it's first rise and punched down. Prep time does not include preparing the dough. Mozzarella or provolone cheese can be subbed for the Monterey Jack.

- Spray 15 muffin tins with nonstick cooking spray.
- Roll out prepared dough on a very lightly floured surface into a 15x9-inch rectangle (if the dough is difficult to handle, cover with a clean towel and let rest for 5-8 minutes).

BREAKFAST- HAM SPINACH GRUYERE CHEESE BREAD PUDDING
Ham Spinach Bread Pudding This can be made in a 9X13 Pyrex casserole dish, or 8 individual 8 oz circular ramekins. The 9X13 is easier, the ramekins make for a beautiful presentation. Once you take the ramekins out of the oven, let them sit for 10 to 15 minutes, then run a thin spatula around the edges and slide the pudding out onto a plate. Stick a sprig of thyme in it and garnish with sautéed sweet red peppers.

- In a large skillet melt butter over medium heat.
- Add onion and cook for about 15 minutes. (The original recipe called for leeks. They are a pleasant taste, but I always have onions around the house, and leeks are more expensive and can be a pain to wash. As you are slicing them up you run into a ring of dirt and have to put them all in a sieve and wash the grit away.)
- Add spinach to the onions and cook another couple of minutes until wilted.
- Remove from heat and set aside to cool down so you can handle it.
- Chop up the ham.
- Grate both cheeses in a bowl and mix. Strip the thyme off the stems and mix in with the cheese.
- Beat eggs, whipping cream, milk and mustard together.
- Spray your baking dish(es).
- Spread half of your bread in the bottom of your Pyrex casserole dish or the bottom of the ramekins. Using half the ham, spread a layer on top of the bread. Follow with a layer of half the spinach onion mix, and half the cheese mix. Pour half the egg mixture on top. Repeat with the remaining ingredients layering the bread, ham, spinach and cheese. If using ramekins, be careful pouring on the top layer of egg mixture that it doesn't run over the top and down the sides, pour slowly.
- At this point cover, and put in the fridge overnight. The next morning take out and let set out 30- to 60 minutes before putting in a 375F degree oven. Baked loosely covered in foil for 45 minutes. Remove foil and bake the last 15 minutes till light brown on top. Let rest for 10 to 15 minutes before serving.
