An easy and delicious simple salad

1 bag of pre-washed baby spinach (about 8 ounces or 5 big handfuls)
2 small lemons
1 tbsp dijon
1 small container of white mushrooms (cleaned) (about 5 ounces)
4 tbsp good quality extra virgin olive oil
1 tsp salt (or to taste)
fresh ground pepper to taste

Steps:

  • Fill a medium bowl with 3 cups of water and squeeze 1 lemon into the water.
  • Slice your mushrooms and add them into the lemon water bowl and lightly mix and set aside.
  • In a large salad bowl, add your olive oil, dijon, salt and juice of 1 lemon and pepper to taste then whisk until it all comes together.
  • Drain your mushrooms and add them to the bowl along with your baby spinach.
  • Toss the dressing and your salad together and serve immediately

5 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon lime juice
1-1/2 teaspoons white wine vinegar
1 garlic clove, minced
3/4 teaspoon minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon dried basil
1/8 teaspoon dried oregano
1/8 teaspoon rubbed sage
Dash to 1/8 teaspoon coarsely ground pepper
8 medium fresh mushrooms, sliced
7 cups torn fresh spinach

Steps:

  • In a small bowl, combine the first 12 ingredients; mix well. Add mushrooms and toss to coat. Cover and refrigerate for at least 30 minutes. Just before serving, toss the spinach and mushroom mixture in a salad bowl.

4 slices bacon
2 eggs
2 teaspoons white sugar
2 tablespoons cider vinegar
2 tablespoons water
½ teaspoon salt
1 pound spinach
¼ pound fresh mushrooms, sliced

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside. Reserve 2 tablespoons bacon fat.
  • Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and cut in wedges.
  • Return 2 tablespoons bacon fat to skillet, stir in sugar, vinegar, water and salt. Keep warm.
  • Wash and remove stems from spinach, dry thoroughly and break into pieces in salad bowl. Pour warm dressing over and toss until coated.
  • Top salad with mushrooms and bacon, garnish with egg.

3 cups torn fresh spinach
1/2 cup sliced fresh mushrooms
1/2 cup seasoned croutons
2 tablespoons vegetable oil
1 tablespoon white wine vinegar

1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon crumbled cooked bacon

Steps:

2 hard-boiled large eggs, yolks mashed and whites chopped fine
3 tablespoons tarragon white-wine vinegar
1 tablespoon Dijon mustard
6 tablespoons extra-virgin olive oil
3 tablespoons minced shallots (about 2)
2 tablespoons finely chopped fresh tarragon leaves
1/2 pound fresh spinach, coarse stems discarded and leaves washed well and spun dry
10 ounces fresh white mushrooms

  • Make dressing:
  • In a small bowl whisk together yolks, vinegar, and mustard and add oil in a stream, whisking constantly until dressing is emulsified. Stir in whites, shallots, tarragon, and salt and pepper to taste.

2 tablespoons extra-virgin olive oil
3 cloves garlic, smashed
2 cups sliced cremini mushrooms
Kosher salt and freshly ground black pepper
10 ounces baby spinach
1 to 2 tablespoons balsamic vinegar

Steps:

  • Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
  • Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.

One 5-ounce package baby spinach
4 large eggs
8 slices bacon, cut crosswise into 1/4-inch-thick pieces
One 3.5-ounce package cremini mushrooms, sliced
1 garlic clove, minced
Kosher salt and freshly ground black pepper
3 tablespoons apple cider vinegar
2 teaspoons Dijon mustard
1 teaspoon honey
1/2 small red onion, thinly sliced

Steps:

  • Place the spinach in a large bowl and leave at room temperature. Bring a medium pot of water to a boil over medium-high heat. Use a slotted spoon to gently lower the eggs into the water. Boil until both the whites and yolks are set (hard-boiled), about 10 minutes. Transfer to a small bowl filled with ice water and cool completely. Once cool, peel the eggs and cut each into quarters.
  • Meanwhile, put the bacon in a large skillet and set over medium heat. Cook, stirring occasionally, until golden brown and crisp, 6 to 8 minutes. Transfer the bacon with a slotted spoon to a paper towel-lined plate to drain. Remove half of the bacon fat to a small bowl and reserve.
  • Return the skillet and remaining bacon fat to medium heat. Add the mushrooms, garlic, 1/4 teaspoon of salt and a few grinds of black pepper to the same skillet. Cook, stirring occasionally, until tender, 3 to 4 minutes. Pour in the reserved bacon fat, vinegar, mustard and honey and whisk until smooth and emulsified. Taste and season with more salt and pepper.
  • Pour the hot bacon dressing over the spinach and toss until evenly coated and slightly wilted. Transfer to a platter and top with the eggs, red onion and reserved bacon.

Steps:

  • Cook bacon in large skillet over medium heat until brown and crisp. Using slotted spoon, transfer bacon to paper towels to drain. Add bell pepper to drippings in skillet; sauté 2 minutes. Using slotted spoon, transfer bell pepper to large bowl. Add mushrooms to same skillet and sauté until tender and beginning to brown, about 4 minutes. Add mushrooms to bowl with bell pepper and reserve skillet. Add spinach and onion to same bowl.
  • Add oil, vinegar, and sugar to reserved skillet; bring to boil, whisking until sugar dissolves. Season dressing with salt and pepper. Toss salad with enough warm dressing from skillet to coat. Divide salad among 4 plates. Sprinkle with goat cheese.

I found this recipe so many years ago in the recipe section of my home town paper and had to try it. My family, friends and even the grandchildren love this salad. I alway have to double the recipe when the gang is over. It is that good. Enjoy!

- cream of mushroom salad dressing:
1 can(s) cream of mushroom soup
1/4 cup(s) tarragon vinegar
1 1/2 teaspoon(s) sugar
1/4 cup(s) water
1/4 teaspoon(s) celery seed
1/4 teaspoon(s) marjoram
1 teaspoon(s) dry mustard
- salt and pepper to taste
- dash of worcestershire sauce
- salad:
1 - (10 ounce) package of washed, trimmed spinach, torn into bite-size pieces (i use baby spinach)
12 - strips bacon, crisp fried and crumbled or in pieces which ever you prefer.
4 - hard boiled eggs, peeled and sliced
1 medium onion, ( i prefer red onion ) sliced into rings
- sliced mushroom (optional)

Steps:

  • For Dressing; beat ingredients together in a bowl.
  • Pour into a sauce pan and heat over medium heat while stirring until mixture is smooth.
  • Remove from heat and set aside to cool.
  • For Salad; assemble the ingredients in layers in a large salad bowl and salt and pepper to taste.
  • Pour cooled salad dressing over and toss gently.
  • Goes well with any meal!
