SPINACH AND LEMON RISOTTO

4 cups Chuck's veal stock, recipe follows or low-sodium chicken stock
1 onion, finely chopped
1 tablespoon olive oil
2 cups Arborio rice
1/4 cup butter
1 cup grated Kefalotyri cheese
1 cup cubed feta cheese, plus more for garnish
4 cups spinach
Zest and juice of 1 lemon
1 tablespoon canola oil
12 large shrimp, cleaned and de-veined, tail intact
2 tablespoons ouzo
2 tablespoons butter
Sea salt and freshly ground black pepper
1/4 cup finely chopped fresh parsley
8 meaty veal bones
3 tablespoons (45 ml) canola oil
Sea salt and freshly ground black pepper
1 tablespoon (15 ml) tomato paste
1 head garlic
6 carrots
2 onions
4 stalks celery
2 large leeks
4 sprigs fresh thyme
4 sprigs fresh rosemary
4 large sprigs fresh flat-leaf parsley
17 cups water

Steps:

  • In a saucepan, bring the stock to a simmer over medium-low heat.
  • In a large saucepan, cook the onion in oil over medium-low heat, stirring, until softened, for about 5 minutes. Add rice, stirring until each grain is coated with oil. Add about 3/4 cup simmering stock and cook over medium-high heat, stirring constantly, until the stock is absorbed. Continue adding stock, 3/4 cup at a time, still stirring constantly and letting each batch be absorbed before adding the next, until about 1/2 of the stock is remaining. Reduce the heat to moderate, if necessary to keep the risotto at a simmer. Continue adding the stock in the same manner until the rice is tender and creamy looking but still al dente, about 20 minutes.
  • Reduce the heat to low, add the butter then the cheeses. Mix well. Add the spinach and the lemon juice and continue mixing. Remove from the heat and keep warm.
  • In a heavy-bottomed frying pan, heat the canola oil and saute the shrimp for 2 to 3 minutes. Take the pan off the heat and immediately add the ouzo and light it. Let the flame subside. Season the shrimp with salt, and pepper, and set aside.
  • Garnish each portion of the risotto with grilled shrimp, parsley, lemon zest, and feta cheese.
  • To make veal stock:
  • Preheat the oven to 450 degrees F.
  • Remove meat from bones where possible and cut into 1-inch pieces. If using breast bones, cut apart. In roasting pan, arrange bones and meat in 1 layer, drizzle with oil, season with salt, and pepper and roast in lower part of the oven, stirring half way in between until bones are golden brown, 40 minutes to 1 hour depending on the size of the bones. Add the tomato paste by spooning it over the bones. Add the vegetables and put it in the oven for an additional hour.
  • Into a large stockpot, add bones, meat, roasted vegetables, herbs, and 16 cups (4 L) water. Discard fat from roasting pan. Place tray back onto the stovetop. Heat on medium for about 1 minute then remove. Immediately add 1/2 cup to 1 cup water to the pan, scraping up brown bits, put the tray back on heat and then add the deglazed liquid to the stockpot. Bring liquid to a tremble, about 190 degrees F, and cook at 190 degrees F (skim froth frequently during first hour of cooking) for 8 hours.
  • Pour stock in batches through a large fine sieve and discard solids. Skim off fat. (Alternatively, cool stock, uncovered, and chill, covered. Scrape congealed fat from chilled stock.) Gently simmer stock, skimming froth occasionally, until reduced to about 4 cups (1 L), about 1 hour. Cool stock, uncovered, and chill, covered. Stock keeps, covered and chilled, 1 week or, frozen in airtight containers, 3 months. If desired, pour cooled stock into ice-cube trays with 1-ounce cups and freeze. Frozen cubes keep in heavy-duty sealable plastic bags 3 months.

3 onions, halved
1 bottle vermouth
2 bay leaves
A couple sprigs fresh thyme

1 bag spinach leaves
4 boneless skinless chicken breasts

1 cup spinach
1 cup fresh basil leaves
1 cup fresh flat-leaf parsley leaves
1/4 cup fresh mint leaves
1 shallot
2 cups extra-virgin olive oil
2 lemons, zested and juiced
2 lemons, zested and juiced
4 ounces feta cheese
Salt
1 onion, chopped
1 leek, chopped
1 cup aborio rice
1/2 bottle white wine
8 cups chicken stock
2 tablespoons butter
1 cup grated Parmesan
2 lemons, zested
Salt

Steps:

  • For the vermouth onion broth: Sear the onions in a large pot over medium-high heat. Add in 8 cups water, the vermouth, bay leaves, thyme and some salt, and bring to boil for 20 minutes. Hold hot for the chicken.
  • For the chicken: On a sheet of plastic wrap, make 4 rows of spinach leaves. Sprinkle the chicken breasts with salt and place 1 breast in the center of each spinach row. Carefully roll the chicken in the spinach by folding over the plastic wrap. Roll tightly and fold under, sealing the plastic wrap around the chicken. Repeat for all chicken breasts. When wrapped, place in the vermouth and onion broth, bring to a simmer and cook for 10 to 12 minutes. Add the lemon juice and reserve.
  • For the feta salsa verde: In a food processor, place the spinach, herbs, shallot and 1 cup of the olive oil. Pulse until rough puree ¿ do not over blend. Place the salsa in a bowl, grate in the lemon zest, add the remaining 1 cup oil, crumble in the feta and mix well. Season with salt and allow to meld for 15 minutes. Adjust seasonings with lemon juice and zest.
  • For the risotto: In a heavy-bottomed pan over high heat, saute the chopped leeks and onions until translucent. Add in the arborio rice and saute for a couple minutes. Add in a couple of cups of wine and stir frequently. Once the wine has evaporated, add in the chicken stock 1 cup at a time, stirring frequently while the rice absorbs the liquid and begins to cook through. Keep adding stock as the liquid is absorbed.
  • When the rice has cooked thoroughly, add in the butter, cheese and lemon zest and stir until it reaches a creamy consistency. Season with salt.
  • Remove the plastic wrap from the chicken and slice to serve.
  • Plate and eat me fast!

1 litre chicken or vegetable stock
125g butter
1 tablespoon olive oil
2 shallots, finely chopped
300g risotto rice
500g baby spinach
chopped grated rind and juice of 1 lemon
125g parmesan cheese, grated
salt and pepper (season to taste)
grated lemon rind, to garnish

Steps:

  • Heat the stock in a saucepan to a gentle simmer
  • Melt 50g of butter and the olive oil in a saucepan, add the shallots and sauté for 3 minutes
  • Add the rice and stir well to coat the grains thoroughly with butter and oil. Add a ladleful of stock, enough to cover the rice, and stir well. Simmer gently and continue to stir as frequently as possible, adding more stock as each ladleful is absorbed.
  • Before you add the last of the stock, stir in the chopped spinach, lemon rind and juice and season to taste with salt and pepper. Increase the heat, stir well then add the remaining stock and butter. Cook for a few minutes, then add half the parmesan and mix well. Serve garnished with the remaining parmesan and extra lemon rind.

1 tablespoon oil
cracked black pepper and sea salt
1 lb scallops (I use the big, fat sea scallops)
5 1/2 cups vegetable stock
2 tablespoons oil
2 cups arborio rice
2 teaspoons lemon rind, grated
6 1/2 ounces baby spinach leaves (about 3 cups, well packed)
cracked black pepper and sea salt
parmesan cheese, shavings

Steps:

  • To cook the lemon and spinach risotto, place the stock in a saucepan over medium-high heat and allow to come to a boil then reduce to a simmer.
  • Heat the oil in another saucepan over medium high heat. Add the rice and cook for 1 minute. Add the stock, 2 cups at a time, stirring frequently and cooking until all the stock has been absorbed. Continue adding cups of stock until all the stock has been absorbed and the rice is tender. Season with pepper and sea salt and keep risotto warm.
  • Heat the oil in a frying pan over high heat. Sprinkle pepper and sea salt over the scallops. Place scallops in the pan and cook for 20-30 seconds on each side or until seared.
  • To serve, stir the lemon rind and the spinach through the risotto and spoon onto serving plates. Top with the scallops and serve with lemon wedges and parmesan on the side.
