Magnificent jumbo pasta shells stuffed to bursting with cheesy spinach filling.

32 jumbo pasta shells
2 cups ricotta cheese
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 cup grated Parmesan cheese
2 tablespoons fennel seed
2 teaspoons dried basil
4 cloves garlic, minced
salt and pepper to taste
3 ½ cups spaghetti sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to boil, gently place pasta shells in boiling water; bring water back to boil. Cook until noodles are just tender; drain well.
  • Squeeze spinach dry. Combine spinach, ricotta, 1/3 cup Parmesan cheese, fennel, basil and garlic in a large mixing bowl. Season with salt and pepper; mix well.
  • Spread 1/2 cup marinara sauce evenly over the bottom of a 9x13 inch baking dish.
  • Fill each pasta shell with the spinach cheese mixture. Arrange the shells, filling side up in the baking dish. Spoon remaining marinara sauce over the shells. Sprinkle remaining Parmesan cheese on top of the shells.
  • Cover the pan loosely with aluminum foil and bake in preheated oven until heated through; about 30 minutes.

1 pound jumbo pasta shells
1 (16 ounce) package frozen chopped spinach
4 tablespoons water
1 pound cottage cheese
1 cup ricotta cheese
½ cup Parmesan cheese
½ cup chopped onion
1 egg
6 cloves garlic, finely chopped
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon ground nutmeg
salt and ground black pepper to taste
4 cups pasta sauce
1 cup shredded mozzarella cheese

Steps:

  • Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, 7 to 8 minutes; do not overcook. Drain and rinse shells with cold water.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place frozen spinach in a microwave-safe bowl and add water. Heat in the microwave for 4 minutes. Stir and allow to cool. Squeeze spinach dry and transfer to a large bowl.
  • Add cottage cheese, ricotta cheese, Parmesan cheese, onion, egg, garlic, oregano, basil, nutmeg, salt, and pepper to the bowl with the spinach and mix well.
  • Pour and spread 1/2 to 3/4 cup pasta sauce evenly over the bottom of a 9x13-inch baking dish. Fill each cooked pasta shell with spinach mixture and arrange, filled-side up, in the baking dish, keeping 1/2 inch between shells. Carefully pour remaining sauce on top of shells and sprinkle mozzarella cheese on top. Cover the pan loosely with aluminum foil.
  • Bake in the preheated oven until hot and bubbly, about 40 minutes. Serve hot.

I have made many stuffed shell recipes, and I always end up adding stuff, substituting stuff, or taking stuff out. We are a no-ricotta-for-me house, mostly (unless it's disguised), so I use all cottage cheese. So, here is my version of spinach and cheese stuffed shells. I think they taste very good. 20 jumbo pasta shells, cooked (about half of a 12 oz. box)
1 1/2 cups cottage cheese (I use 2%)
1 cup reduced-fat mozzarella cheese, shredded
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1 teaspoon italian seasoning
2 teaspoons garlic, minced (from a jar-I usually have them heaping, because I love garlic)
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 small onion, finely chopped
fresh ground pepper (about 1 teaspoon)
1 egg
3 cups spaghetti sauce, divided (I use Classico Tomato and Basil from Costco)
1/2 cup parmesan cheese, grated

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine ingredients "cottage cheese" through "egg".
  • Pour half of the sauce in a 9x13 pan (I never measure the sauce, I just pour it from the jar). Fill the shells full with the cheese mixture, and place them into the pan with the sauce.
  • Drizzle the remaining sauce lightly over the top of the shells (or spoon sauce from the jar over the shells, like I do). Sprinkle with parmesan cheese.
  • Cover with foil and bake for 35 minutes. Let stand 5 minutes before serving.

1 large onion, chopped
1 (10 ounce) package frozen chopped spinach, well drained
1 (8 ounce) package cream cheese, softened
1 egg, beaten
2 cups shredded mozzarella cheese, divided (8 oz)

1 cup cottage cheese
1/4 grated parmesan cheese
1/4 teaspoon salt

20 large shell noodles, cooked and drained

Steps:

  • In a skillet, cook onion until tender.
  • Transfer to a large bowl.

  • Stuff shells and arrange in a greased 13x9x2 baking dish.
  • Combine sauce ingredients; mix well.
  • Pour over shells.

SPINACH, CHEESE, AND SAUSAGE STUFFED SHELLS OAMC

I found this in a magazine and decided to try it. So glad I did! I made it for the first time last night and it is really great. I used 9 oz. fresh spinach instead of the frozen spinach, and it worked great. My husband even liked it, and he is not normally a spinach person. I used most of a 26 oz jar for 1/2 a recipe, so you may need more sauce than called for. I'm sure you could use homemade, too. Be flexible! Also, this recipe makes quite a bit. I am cooking for two people, and I froze half the stuffed shells for another time, and there were still plenty of leftovers. Freezing them works great! I flash froze the stuffed shells on a cookie sheet, then dumped them in a ziploc and stashed them in the deep freeze. I let them defrost for a day. Then you just have to add sauce, and cook! Perfect weeknight meal, but good enough to serve to company.

2 tablespoons oil
1 onion, chopped
3/4 lb ground sausage
2 garlic cloves
1 egg
16 ounces part-skim ricotta cheese
4 ounces mozzarella cheese, grated
1/2 cup parmesan cheese
1 (10 ounce) box frozen spinach, chopped, thawed, and drained
26 ounces spaghetti sauce with basil

Steps:

  • Cook pasta shells according to directions. Drain, rinse, and let drain again.
  • Saute onion in oil about 5 minutes. Add ground sausage and garlic. Cook until sausage is done. Cool.
  • Beat egg slightly. Add ricotta cheese, mozzerella cheese, parmesan cheese, spinach, and cooled sausage mixture. Mix well.
  • Stuff shells. (This is where I flash-froze half of them).
  • Put 1 c of spagetti sauce in bottom of corningware (or 9x13 pan, or something else). Add shells. Pour the rest of the sauce on top. Sprinkle with more mozzerella or parmesan cheese, if desired.
  • Cook at 350 for 30 minutes, covered. Cook 10 minutes uncovered.

12 jumbo pasta shells, cooked
1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Steps:

  • Heat oven to 350°F.
  • Pour 1 cup pasta sauce into 8-inch square baking dish sprayed with cooking spray.

How to make Spinach Ham and Cheese Stuffed Shells

SAUCE
◾2 tbsp. olive oil
◾1 small onion, diced
◾4 garlic cloves, minced
◾28 oz of crushed tomatoes
◾ 1/4 tsp. kosher salt
◾ 1/4 tsp. ground pepper
◾2 tbsp. of Italian seasoning
SHELLS
◾24 jumbo pasta shells
◾8 oz of spinach, chopped
◾ 3/4 cup of diced ham
◾2 garlic cloves, minced
◾ 1/4 tsp. of ground pepper
◾1 cup of part-skim ricotta cheese
◾ 1/2 cup of grated parmesan cheese

Steps:

  • To prepare the sauce:
  • Heat oil in a large pot over medium heat. Add garlic and onion and and cook. stirring for 15 minutes. Add tomatoes, Italian seasoning, salt and pepper, bring to a boil. Reduce heat to simmer, stirring occasionally, for 15 minutes. Set aside.
  • To prepare the shells:
  • Cook shells in boiling water for about 10 minutes. Don't cook all the way. Drain and rinse with cold water. Let cool.
  • In a medium bowl, mix ricotta, ham, garlic, spinach, parmesan cheese, salt and pepper together and set aside.
  • Reserve half of the sauce and pour the rest into a 13×9 baking dish.
  • Stuff each shell with a heaping tbsp. of the cheese mixture and line them up side by side in the pan.
  • Pour the remaining sauce over the shells. Spray a piece of tinfoil with non-stick spray, cover and cook on the upper rack of the grill for 20 minutes. Serving size: 3 shells.
