SPINACH AND BLACKBERRY SALAD - FOR ONE

Steps:
- Combine all dressing ingredients in a small bowl and whisk together with a fork.
- Arrange spinach leaves on your plate. Top with remaining salad ingredients.
- Drizzle with dressing.
- Note: To lessen the pungent strength of the red onions, run under hot water for about 30 seconds or so.
SPINACH BERRY SALAD WITH CANDIED WALNUTS
Steps:
- For the dressing: Whisk together the vinegar, mustard, honey, jam, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Whisk in the oil in a slow stream and continue whisking until the dressing is emulsified.
- For the salad: Toss together the spinach, blackberries, onions and Candied Walnuts in a large salad bowl. Drizzle with the dressing and toss. Using a vegetable peeler, shave some cheese over the top.
- Line a baking sheet with parchment paper and set aside.
- Melt the butter in a medium saucepan over low heat. Add the walnuts and stir to coat. Raise the heat to medium, add the sugar and cook until the sugar is dissolved and caramelized, stirring often, about 5 minutes. Stir in the cinnamon, 1/2 teaspoon salt and 1/4 teaspoon pepper, then transfer the mixture to the baking sheet. Spread the nuts in a single layer. Let the walnuts cool until hardened, about 15 minutes.
SIMPLE SPINACH SALAD FOR ONE
I love spinach salad but I live alone and hate to make a full recipe since any leftovers get way too wilted. I came up with this recipe by modifying a Betty Crocker cookbook version. You can definitely play around with the amounts of the ingredients. I don't actually measure out the lemon juice - I squeeze some into the oil, and drizzle a little more over the finished salad if it's not lemony enough. This makes a good sized bowl for one person, and if you want seconds it's so easy to make some more. You can also double/triple the ingredients for company!

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Place 3 tablespoons honey in a microwave-safe bowl. Microwave on Medium until honey liquefies, about 30 to 45 seconds. Add walnuts and stir to coat. Spread in one layer onto the prepared baking sheet and bake in the preheated oven until nuts have darkened slightly, 8 to 10 minutes. Remove from oven, sprinkle with 1/2 tablespoon sugar and 1/2 teaspoon salt, and stir to coat. Allow to cool.
- Combine olive oil, blackberry jam, balsamic vinegar, orange juice, Dijon mustard, 2 teaspoons honey, basil, salt, and pepper in a lidded jar. Shake until vinaigrette is well combined and chill in the refrigerator until serving.
- Combine spinach, sweet apple, Granny Smith apple, cucumber, bell peppers, green onions, feta, and cooled walnuts in a large bowl. Toss to combine. Carefully mix in blackberries. Drizzle with vinaigrette and toss.
