1 lb uncooked pasta (penne, campanelli)
1/4 cup extra virgin olive oil
4 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
1 (28 ounce) can crushed tomatoes
1 (16 ounce) tomato sauce
3/4 teaspoon salt
2 tablespoons vodka (or small sample bottle)
1/2 cup heavy cream
1/4 cup chopped fresh parsley
2 (3 1/2 ounce) sweet Italian sausage
1 (3 1/2 ounce) hot Italian sausage
1/4 cup grated parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In large skillet, heat oil over moderate heat. Remove casing from sausage and add to skillet. Cook, breaking up the meat, until brown. Add garlic and red pepper and cook, stirring until garlic is golden brown.
  • Add tomatoes, tomatoe sauce and salt; bring to boil. Reduce heat and simmer 15 minutes.
  • Add vodka and cream and bring to boil. Reduce heat to low and add pasta, toss for 1 minute. Stir in fresh parsley, cheese, and serve.

4 andouille sausages or 4 hot Italian sausage links
1 tablespoon butter
2 garlic cloves, minced
2 shallots, minced
1 cup vodka
1 cup marinara sauce
1 (32 ounce) can crushed tomatoes
1 tablespoon red pepper
16 ounces rigatoni pasta or 16 ounces penne pasta
1/2 cup heavy whipping cream
1/2 cup fresh basil leaf, chopped
salt and pepper

Steps:

  • Slice sausage links into ½ inch rounds and brown for several minutes in a large sauté pan.
  • Add butter, garlic, and shallots. Sauté shallots for 3 to 5 minutes.
  • Add vodka and heat 4-5 minutes to reduce vodka by half.
  • Add marinara sauce, can tomatoes and red pepper. Bring sauce to a boil and reduce heat to simmer for approximately 10 minutes.
  • While sauce is simmering, cook pasta until it is al dente.
  • Add cream into sauce and return to a boil.
  • Add drain pasta to the sauce and add the basil leaves.
  • Add salt and pepper to taste.

8 ounces uncooked spiral pasta
3/4 pound bulk Italian sausage
4-1/2 teaspoons olive oil
1-1/2 teaspoons butter
3/4 cup chopped sweet red pepper
1/2 cup chopped onion
1/2 cup white wine or chicken broth
2 cups heavy whipping cream
1/2 cup grated Romano cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chopped fresh parsley

Steps:

  • Cook pasta according to package direction. In a large skillet, cook sausage in oil and butter over medium heat for 5 minutes. Add red pepper and onion; cook and stir until vegetables are tender and sausage is no longer pink. add wine or broth; cook for 2 minutes. Add the cream, cheese, salt and pepper. Bring to a boil. reduce heat; cook over low heat for 8-10 minutes, stirring occasionally., Drain pasta. In a large bowl, combine sausage mixture and pasta. Before serving, sprinkle with parsley.
