Loaded with garden-fresh vegetables, this Mexican specialty is sure to be popular with the whole family. Plus, it's a snap to prepare on a busy weeknight.

1 pound lean ground turkey
1 cup chopped red onion
1 to 2 garlic cloves, minced
2 cups julienned zucchini
1 cup salsa
1 cup frozen corn
1 cup julienned sweet red pepper
1 can (4 ounces) chopped green chilies
2 tablespoons minced fresh cilantro
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
8 flour tortillas (8 inches)
2 cups shredded reduced-fat Mexican cheese blend

Steps:

  • In a large nonstick skillet, cook the turkey, onion and garlic over medium heat until meat is no longer pink; drain. Add zucchini, salsa, corn, red pepper and chilies. Reduce heat; cover and simmer until vegetables are tender. Stir in seasonings., For each quesadilla, place one tortilla in an ungreased nonstick skillet. Sprinkle with 1/4 cup cheese. Top with 1/2 cup filling, then sprinkle with another 1/4 cup cheese. Cover with another tortilla. Cook over medium heat, carefully turning once, until lightly browned on both sides and cheese begins to melt. Cut into eight wedges.

Number Of Ingredients 11

1 pound sweet and spicy turkey sausage
1/2 red onion, diced
1 bunch cilantro, leaves chopped
1 package baby portobello mushrooms, diced
1 tablespoon cayenne pepper, or to taste
2 teaspoons crushed red pepper flakes, or to taste
5 large tortillas
1 pound horseradish Cheddar, sliced
1 package shredded sharp Cheddar
1 cup sour cream
1 cup buffalo sauce (recommended: Moore's Buffalo Wing Sauce)

Steps:

  • Peal the casing off the turkey sausage and add it to a large bowl. Mash the sausage into small pieces and add the onion, cilantro, mushrooms, cayenne, and crushed red pepper flakes. Stir together until well combined. Heat a large skillet, over high heat and add the sausage mixture. Stir and cook until well browned, about 5 to 6 minutes.
  • Lightly spray a separate pan with cooking spray and put over high heat. Add 1 tortilla to the pan and put a layer of horseradish Cheddar cheese on half of the tortilla. Top with a layer of the turkey sausage mixture and a thin layer of shredded Cheddar cheese. Add a final layer of horseradish cheese and cover with the other half of the tortilla.
  • Cook on 1 side for 45 seconds and then flip to the other side and cook for 1 minute. Remove from the pan and cut into 3 triangular pieces. Repeat with the remaining tortillas and filling.
  • Blend the sour cream and the buffalo sauce in a serving bowl and serve as a dipping sauce for the quesadillas.

2 tablespoons reduced-fat Parmesan peppercorn ranch salad dressing
1 tablespoon Dijon mustard
2 whole wheat tortillas (8 inches)
2 slices reduced-fat Swiss cheese, halved
1/2 medium ripe avocado, peeled and thinly sliced
6 ounces sliced cooked turkey breast
Diced sweet red pepper, optional

Steps:

  • In a small bowl, combine salad dressing and mustard; spread over 1 side of each tortilla. Place tortillas, spread side up, on a griddle coated with cooking spray., Layer cheese, avocado and turkey over half of each tortilla. Fold over and cook over low heat for 1-2 minutes on each side or until cheese is melted. Garnish with red pepper if desired.

5-1/3 cups uncooked whole wheat egg noodles
1 pound lean ground turkey
1 medium green pepper, chopped
1 small onion, chopped
2 garlic cloves, minced
2 teaspoons chili powder
1/4 teaspoon pepper
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1/2 cup golden raisins
Optional: Reduced-fat sour cream and chopped green onions

Steps:

  • Cook noodles according to package directions., Meanwhile, in a large nonstick skillet, cook the turkey, green pepper and onion over medium heat until turkey is no longer pink; drain. Add the garlic, chili powder and pepper; cook 1 minute longer. Stir in tomatoes and raisins; heat through. Drain noodles; serve with turkey mixture. If desired, top with sour cream and green onions.

6 7-inch flour tortillas (made without lard)
6 ounces low-fat Monterey Jack cheese, planed
6 ounces smoked turkey slices (98% fat-free)
36 green grapes, halved lengthwise
Fresh cilantro sprigs
1/2 teaspoon ground cumin
1 tablespoon fresh lime juice
Coarse salt

Steps:

  • Place tortillas on work surface. Arrange cheese, turkey, grapes and cilantro over half of each tortilla. Sprinkle with cumin. Fold tortilla over filling.
  • Preheat oven to 200°F. Heat large nonstick skillet over medium heat. Cook quesadillas 1 at a time until golden brown, about 3 minutes. Turn. Brush cooked top with lime juice and sprinkle with coarse salt. Cook until golden brown, about 3 minutes. Keep warm in oven. Repeat with remaining quesadillas. Serve.
