SPICY ANGEL HAIR PASTA

1 pound angel hair pasta
1/2 cup Chili Oil (page 226)
1/2 cup chopped fresh flat-leaf parsley
2 tablespoons grated lemon zest
1/4 cup freshly squeezed lemon juice
1/2 teaspoon salt, plus more to taste
Crushed red pepper flakes
2/3 cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain, reserving 1 cup of the pasta cooking liquid.
  • Stir together the chili oil, parsley, lemon zest and juice, and salt in a large bowl. Add the angel hair pasta and toss with enough reserved cooking liquid to moisten; you probably won't need more than 1/4 cup or so. Season the pasta with more salt and with red pepper flakes to taste. Transfer to individual bowls, sprinkle with the Parmesan cheese, and serve.

What an easy casserole recipe and a wonderful way to use up leftover turkey. With so few ingredients, it comes together in a snap. Creamy and full of flavor, this will please even the pickiest eaters in your house.

4-6 c angel hair pasta, already cooked
3-4 c turkey, cooked and chopped
1 1/2 c Velveeta cheese, cubed
1 can(s) cream of mushroom soup
1 jar(s) chicken gravy
1/2 jar(s) milk

Steps:

  • 1. Spray a 10x15 pan with non-stick spray. Preheat oven to 350.
  • 2. Put half the angel hair pasta in pan. I used leftover pasta that was already cooked.
  • 3. Layer half of the chopped turkey on pasta. Put half the cubed Velveeta cheese over turkey.
  • 4. Repeat pasta, turkey and Velveeta cheese layer.
  • 5. Use gravy jar and fill halfway with milk. Mix soup, gravy, and milk.
  • 6. Pour evenly over top of cheese/turkey/pasta.
  • 7. Bake at 350 for about 45 minutes until bubbly.
  • 8. Let stand about 5 minutes before serving. Makes 10-12 generous servings.

6 ounces angel hair pasta
2 cups cooked turkey, cut up in medium dice
1/4 cup butter
1/2 cup flour
2 2/3 cups chicken broth
1 cup cream
1/4 cup sherry wine
1 teaspoon salt
1/4 teaspoon white pepper
1/2 lb sliced mushrooms
1 cup chopped celery
1/2 cup panko breadcrumbs

Steps:

  • Saute celery in 2 T. butter for 1 minute, add sliced mushrooms, continue to saute about three minutes. Celery should be crisp tender.
  • Remove vegetables from pan. Melt remainder of butter, add flour stirring with a whisk to combine.
  • Add chicken broth slowly and heat to thicken, adding cream and sherry, salt and pepper.
  • Add turkey, and cooked vegetables to thickened sauce and combine with cooked pasta.
  • Place in buttered casserole, add panko crumbs on top, bake 325 for 1/ 2 hour.

This is the original recipe, but i like to make it healthier by adding whole wheat pasta. This is moderately spicy, but very delicious.

1 lb angel hair pasta
3 garlic cloves
1 shallot
1 tablespoon olive oil
1 (14 ounce) can diced tomatoes
3/4 lb ground turkey
1/2 cup olive
1/2 cup roasted red pepper
1 tablespoon capers
1/4 cup parsley
1/4 cup chicken stock
1 pinch salt
1 tablespoon red pepper flakes

Steps:

  • Cook pasta according to directions.
  • Mince garlic and chop shallot. Add oil to a saucepan over medium heat and saute garlic and shallots until browned.
  • Add ground turkey and salt and separate into small pieces.
  • Add tomatoes and chicken stock.
  • Add pepper flakes, roasted peppers, capers, and parsley. Simmer for 10 minutes.
  • Pour sauce over pasta and serve.
