SPICY TURKEY AND MIXED-BEAN CHILI
Steps:
- Heat vegetable oil in heavy large pot over medium-high heat. Add ground turkey and saute until brown, about 7 minutes. Add diced onion, green bell pepper, celery, and garlic; saute until onion is translucent, about 5 minutes. Add chicken broth, all beans, tomatoes with juices, green chilies, chili powder, jalapenos, and ground cumin to turkey mixture. Bring chili to boil; reduce heat to low and simmer 30 minutes. Season chili to taste with salt and pepper. (Can be prepared 2 days ahead. Refrigerate uncovered until cold, then cover and keep refrigerated. Bring to simmer before continuing.) Mix in chopped fresh cilantro and serve.

Steps:
- Heat oil in a large (trust me, make it big) cast iron pot over medium heat. Add and brown the ground turkey, until cooked through. Add diced onion,bell pepper, celery and garlic, saute until tender, about 6-8 minutes. Add all the beans and chicken broth, canned diced tomatos (juice too!) green chilies, chili powder, cumin, and jalapeno (chopped) to that turkey mixture. Bring it to a slow bubble and then ruduce to a simmer for at least 30 minutes. Now add salt, pepper to taste. Cilantro goes in right before serving. Of course, this tastes better the next day and freezes really well.
QUICK SWEET AND SPICY TURKEY BEAN CHILI
Steps:
- Caramelize the onion in the oil over med heat. Add the Ground Turkey, Oregano, and Garlic and stir occasionally until turkey is just cooked. Add the preserved goods and the rest of the ingredients and stir until all is well blended. Simmer for about 20 minuets to blend all the flavors and cook off the booze in the beer. YUM. Fresh baked Cornbread is my favorite accompaniment :)
SPICY TURKEY AND BEAN CHILI

- In skillet over medium heat, cook ground turkey, onion, and garlic until meat is no longer pink, breaking up any clumps. Drain off the fat. Transfer to slow-cooker. Add pinto beans, tomatoes, tomato paste, chiles, beer, chili powder, cumin, and oregano and stir to combine. Cover and cook on low for 8-9 hours, stirring occasionally. Or on high for 4-5 hours. The last hour, season with salt. The longer you let the chili simmer, the better it gets.
