Steps:
- Preheat an outdoor grill for medium heat and lightly oil the grate. Season chicken with cayenne, salt, and black pepper.
- Place chicken on the preheated grill and cook until no longer pink in the center and juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer to a plate and shred using 2 forks.
- Combine tomatillos, serrano peppers, vinegar, water, onion, garlic, and salt in a large pot over high heat and bring to a boil. Reduce heat and simmer until tomatillos are tender, about 10 minutes. Remove from heat and chill in an ice bath until cool, 20 to 30 minutes. Add cilantro and lime juice. Blend salsa thoroughly using an immersion blender.
- Preheat the oven to 375 degrees F (190 degrees C).
- Mix shredded chicken, cream cheese, 4 ounces Mexican cheese, sour cream, 1/2 cup salsa, onion, and cayenne pepper together in a medium bowl.
- Pour just enough salsa into a 9x13-inch baking pan to thinly cover the bottom. Place a heaping spoonful of filling into each tortilla, roll, and place into the pan. Try to keep them from touching. Top with remaining salsa and Mexican cheese.
- Bake in the preheated oven until bubbly, 35 to 40 minutes.

SMOKY, SPICY TOMATILLO SALSA VERDE AKA CANNED GREEN HELL!
I wanted to preserve my Recipe #97531 and came up with this. Adding the lemon, lime juice and vinegar for acidity to preserve the salsa. Green tomatoes can be used in place or along with the tomatillos. After opening the canned salsa you can drain some of the liquid so not to watery. Do NOT thicken with flour or cornstarch. FYI- don't like heat replace the hot chili's with bell pepper that you roasted.

SPICY TOMATILLO SALSA
This is a condiment salsa, for carne asada, tacos or eggs. You can toast everything on a comal (a flat pan used for heating tortillas and toasting chiles and vegetables. You can find one at a Latino grocery), broil, grill, or boil your tomatillos. Throwing them on the grill or toasting them on a comal gives them more flavor!

Steps:
- 1. Peel wash and dry tomatillos. Break off stems of the chiles. If you want less spicy salsa, discard some or as many of the seeds as you can. Heat comal or a heavy skillet on medium low heat. Place the chiles on the comal and toast and turn them with tongs until they turn a light tobacco brown color. DO NOT BURN THEM. They get bitter. If you burn them, trust me, start over. When toasted, put them in the boiling water to sit for about 10 minutes. While they're soaking, toast, roast, grill or boil your tomatillos. If you're boiling, you can do it along side the chiles. They are done when they're soft and a golden color, rather than green.
- 2. In a blender jar, place soaked chiles, garlic salt and half of the water. Blend on high until the ingredients become a smooth red paste (about 2 minutes). Add cooked tomatillos and the rest of the water and blend until smooth. You may need more water. You can add spices such as oregano or cumin while blending, too. I'm a purist, though! Enjoy!
