6 lamb chops
100 ml fresh brown bread crumbs
1 onion, finely chopped
5 ml dried rosemary
125 g. bleu cheese, crumbled
50 ml mayonnaise
2 ml. salt
2 ml freshly ground pepper

Steps:

  • 1. Braai the chops over medium-hot coals or grill them in oven or in a griddle pan on top of the stove until nearly done. 2. Mix together the remaining ingredients. Arrange the chops on a baking sheet and spoon a little of the topping mixture onto each. 3. Grill in the oven until the topping is golden brown and bubbling.

I was forced to create these when my favorite brand stopped making their lamb meatballs, which were a staple in my little food-obsessed world. They're even more scrumptious with a small side of plain yogurt with some mint and cumin stirred into it. Add rice or couscous and a green salad and you have a tasty, easy, somewhat elegant dinner! This recipe can also be used to make meatballs for frying, if you prefer.

1 pound ground lamb
3 green onions, minced
4 cloves garlic, minced
1 tablespoon curry powder
1 teaspoon ground cumin
¼ teaspoon dried red pepper flakes
salt and pepper to taste

Steps:

  • Preheat the grill for high heat.
  • In a bowl, mix the lamb, green onions, garlic, curry powder, cumin, red pepper, salt and pepper. Form into 4 patties.
  • Lightly oil grill grate. Grill patties 5 minutes on each side, or until done.

LAMB IN BUTTERMILK CURRY RECIPE

4 cups buttermilk plus 1 cup water
3 lbs leg of lamb or stewing beef, fat trimmed, in 2 inch cubes
2 tbsp coriander seeds
1/2 cup canola oil
1 1/2 tbsp cumin seeds
3 tbsp chopped garlic
10-15 2 inch pieces dried red chilies
15 cloves
Seeds from 10 black cardamom pods
1 tbsp salt
10 oz potato (1 large), mashed

Steps:

  • Pour buttermilk into large bowl. Add lamb/beef and mix well. Cover the bowl and refrigerate for at least 6 hours. Lightly pound coriander seeds in a mortar or a bowl with a heavy spoon. Set aside. Heat oil in a pot on medium heat for 1 minute. Add cumin seeds and cook until they sizzle for 30 to 45 seconds. Add garlic and sauté for 5 minutes. Add coriander, chilies, cloves, cardamom and salt. Stir well and cook 3 to 4 minutes. Add marinated meat with all the buttermilk plus 1 cup water. Stir continuously as you bring to a boil. Reduce heat to medium low, cover and cook for 1 hour. Remove lid and stir in mashed potato. Cover the pot again and cook for another hour, or until meat is cooked and tender. Add more water to keep meat covered if needed. Remove cloves before serving.

1/2 Lb ground lamb
1 tbl hoisin sauce
1 tbl fish sauce
1 tbl lime juice
1 tbl Asian chili sauce
3 cloves garlic, finely minced
6 (6-inch) flour tortillas
2 tbl flavorless cooking oil
1/4 C fresh basil, chopped
1/4 C fresh mint, chopped

Steps:

  • Combine lamb, hoisin, fish sauce, lime juice, chili sauce, and garlic. Using hands, mix thoroughly, then refrigerate. Lightly brown tortillas, over stove top burners. Preheat oven to 325. warm foil-wrapped tortillas. Add cooking oil to wok or saute pan over high heat. When oil smokes, add lamb, When lamb starts to lose its color, add herbs. Serve Immediately.
