This is an easy soup to prepare and it makes a wonderful meal with the addition of your favorite cornbread! Or it is a tasty starter for your entree.

Number Of Ingredients 12

3 cans vegetable broth
1 (14 1/2 ounce) can petite diced tomatoes, undrained
1 cup water
1 can ranch style bean, undrained
1 can corn, drain
1 can green beans, drain
1 (4 1/2 ounce) can chopped green chilies, undrained
1/2 chopped onion
1 (8 ounce) can tomato sauce
6 corn tortillas, minced (I use scissors to cut mine very tiny)
1 -2 teaspoon chili powder (to taste)
1/4 teaspoon garlic powder

Steps:

  • Mix all ingredients together in a pot over high heat.
  • Bring to a boil.
  • Then lower your heat and simmer for about an hour.
  • The soup should be thickened and the tortilla pieces will be mostly dissolved.
  • To serve, top with crumbled tortilla chips and a little grated cheese.

2 (14 ounce) cans chicken broth
1 (14 ounce) can corn, with liquid
1 (14 ounce) can cut green beans, with liquid
1 (14 ounce) can red kidney beans, drained and rinsed
6 green onions
1 teaspoon honey
1 yellow onion, medium size
2 (14 ounce) cans Mexican-style tomatoes
2 cloves garlic
3 tablespoons cilantro leaves
2 tablespoons southwest seasoning
1/2 cup cheddar cheese, shredded
3 corn tortillas

Steps:

  • In a blender blend stewed tomatoes, honey, green onions, garlic, cilantro, onion, and seasoning.
  • In a large skillet add 2 cans chicken broth and the blended ingredients, bring to a boil then simmer for 5 minutes.
  • Add all other ingredients except red kidney beans, simmer with a lid for at least 20 minutes.
  • Add red kidney beans, bring to a boil then simmer for 10 minutes.
  • Cut the tortillas into 1/2 inch strips, then cut in half, then fry in oil until crisp.
  • In soup bowls put in soup then sprinkle with cheese then top with some fried tortilla chips.

A soup that hits the spot no matter what time of year. You can add as many types of vegetable as you like. Cooking the raw vegetables with the oil and spices before you add any type of broth intensifies the flavor of the soup. Store bought broth works fine. Need to consider salt content when using store bought broth.

1 tablespoon vegetable oil
1 diced onion
5 potatoes (about 2 cups diced)
2 carrots (about 1 cup diced)
celery (about 1 cup chopped)
14 1/2 ounces green beans
2 cups frozen corn
8 ounces fresh spinach
14 1/2 ounces petite diced tomatoes
10 ounces Ro-Tel diced tomatoes with peppers
2 teaspoons chili powder
1 teaspoon garlic salt
1 teaspoon black pepper
2 teaspoons salt
2 bay leaves
6 -8 cups chicken stock or 6 -8 cups beef stock

Steps:

  • Begin first by dicing raw vegetables into required amounts making sure they are pretty much the same size.
  • In a large stock pot saute onion in vegetable oil.
  • Add carrots, potatoes, celery, spinach and all the spices(salt,chili powder, garlic salt, black pepper) cook until tender.
  • Add diced petite tomatoes and Ro-tel tomatoes with green chilies,.
  • corn, green beans, bay leaves and stock.
  • Add water if needed.
  • Bring to a boil and then simmer for two to three hours.
  • The last hour simmer with a lid on stock pot.

1 medium sweet red pepper, chopped
2 celery ribs, chopped
1 small onion, chopped
1 tablespoon canola oil
2 cans (15 ounces each) black beans, rinsed and drained
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (4 ounces) chopped green chilies
3/4 teaspoon ground cumin
1-1/2 cups cooked instant brown rice
6 tablespoons reduced-fat sour cream

Steps:

  • In a large nonstick saucepan, saute the pepper, celery and onion in oil until tender. Add the beans, broth, tomatoes, chilies and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until thickened., Divide rice among six soup bowls; top with soup and sour cream.
