SOUTHWESTERN SPICY CHICKEN AND RICE SOUP

1 Tbsp olive oil
1 cup chopped onion
3 cloves minced garlic
1 tsp ground cumin
6 cups low-sodium chicken broth
1/4 cup quick-cooking brown rice
1 lb boneless chicken breast, cut in 1/2-inch pieces
1 can (14-oz.) diced tomatoes
1 Tbsp minced canned chipotle in adobo sauce (or less, to taste)
2 Tbsp lime juice
1/4 cup chopped scallions

Steps:

  • Heat oil in large soup pot over medium high. Add onion and garlic; cook 3 to 4 minutes, until somewhat softened.
  • Add cumin and chicken broth and bring to boil; add rice and cook 5 minutes.
  • Stir in chicken, diced tomatoes and chipotle; simmer until chicken is cooked through and rice is tender, about 5 minutes. Remove from heat and stir in lime juice and scallions.

1/2 Cup Celery, diced
1/2 Cup Onion, diced
1 Cup Carrots, shredded
1 Cup Wild Rice, cooked
1 1/2 Cups Cooked Chicken, cut into bite size pieces (I use Rotisserie Chicken)
1 Cup Pepper Jack Cheese, shredded
1/3 Cup Heavy Cream
1 Cup Chicken Broth
1 Can Cream of Chicken Soup (10 3/4 oz.)
3 Tablespoons Cilantro, chopped
2 Tablespoons McCormick Southwest Sweet and Smokey Spice Blend

Steps:

  • 1. Saute Celery, Onion and Carrots in 1 tablespoon of oil in a large saucepan until soft 2. Add the remaining ingredients EXCEPT the Cream and Cilantro 3. Bring the Soup to a boil stirring constantly then reduce heat to low 4.
