Spicy Smoked Turkey and Black Bean Soup image

Spice up a turkey-vegetable soup with tomatoes, lemon juice, and jalapenos and enjoy a zesty meal. It's a great way to use up leftover turkey.

1 tablespoon vegetable oil
1 large onion, chopped
1 green bell pepper, sliced thin
1 red bell pepper, sliced thin
2 cups chicken stock
4 cups vegetable juice (such as V-8®)
2 (14 ounce) cans black beans, rinsed and drained
3 cups shredded smoked turkey
1 (14 ounce) can diced tomatoes
1 tablespoon minced garlic
2 tablespoons lemon juice
1 tablespoon ground cumin
2 teaspoons chili powder
1 jalapeno pepper, minced (or more to taste)
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Heat vegetable oil in a large, heavy-bottomed pot over high heat. Cook and stir onion, green bell pepper, and red bell pepper in hot oil until softened, 2 to 3 minutes.
  • Pour chicken stock into the pot and reduce heat to low. Stir vegetable juice, black beans, turkey, diced tomatoes, garlic, lemon juice, cumin, chili powder, jalapeno pepper, salt, and pepper into the stock. Raise heat to medium, bring the soup to a simmer, and cook until heated through and the flavors meld, 15 to 30 minutes.

This is a great winter soup. Make it as spicy as you want. It's also a great way to get rid of leftover Thanksgiving turkey.

1 large onion, cut into 1/2-inch-thick slices
1 green bell pepper, cut into 1/4-inch cubes
2 cups chicken stock
1 clove garlic, minced
2 ½ cups chopped smoked turkey
1 cup chunky-style red or green salsa
3 cups vegetable juice (e.g. V-8)
1 drop hot pepper sauce, or to taste
1 tablespoon fresh lime juice
salt and pepper to taste

Steps:

  • Place a heavy pot over high heat. Add the onion and bell pepper; cook 2 to 3 minutes without stirring until browned. Immediately pour in the chicken stock, and stir to release vegetables from the bottom of the pot. Reduce heat to low. Stir in the garlic, turkey, salsa, vegetable juice, hot pepper sauce, and lime juice. Simmer over medium heat until heated through, about 15 minutes. Season to taste with salt and pepper.
