SLOW COOKER PINTO BEANS
These beans turn out fabulous in the slow cooker! I developed this recipe after finding too many hard beans after cooking with a pot on the stove.

Steps:
- Cover pinto beans with water in a large bowl; allow beans to soak overnight.
- Place onion, green bell pepper, celery, garlic, Black Forest ham, soaked pinto beans, cumin, oregano, bay leaves, and lard in a slow cooker.
- Pour enough chicken broth into the slow cooker to cover the other ingredients.
- Cook on High until beans are very tender, 5 to 6 hours.

SPICY SLOW COOKER PINTO BEANS
This makes a lot of beans--a 7-quart slow cooker's worth! This is not fast cooking, but low and slow. And it's not a low-calorie/low-fat meal. My mother started this recipe and was a staple in our home growing up. My brother has perfected it and shared it with us. Serve with anything you desire. In our home, it's tortillas and eggs! These freeze well and reheat/refry beautifully.

Steps:
- Place pinto beans in a 7-quart slow cooker and add enough water to cover. Allow to soak for 3 to 4 hours.
- Combine jalapeno peppers and garlic in a food processor; puree into a paste.
- Drain beans and return to the slow cooker. Stir in jalapeno-garlic paste. Nestle ham hocks among the beans. Sprinkle onion chunks, salt, cayenne, pepper, and paprika over the beans. Place bacon and green chiles on top.
- Cover and cook on Low for 10 hours. Remove ham hocks. Cool slightly; shred the meat.
- Return meat and fat to the slow cooker. Stir for a few minutes to incorporate fat into the beans and give liquid a creamy consistency. Turn off or keep warm until ready to serve.

SPICY PRESSURE COOKER PINTO BEANS
Adjust the amount of jalapeno to suit your taste, or use a mild or hot salsa instead of medium; I would not like these any spicier than they already are. I make these in a pressure skillet, a shallow version of a pressure cooker. The beans are soupy, but you can cook them a little longer in the open pan to reduce the liquid if you prefer thicker "juice". I use Herdez salsa casera for this.

- Throw it all in the pressure cooker and cook 27 minutes.
- Let it cool down on its own before opening, the salt and acid in the salsa make the beans a little firm and the carryover cooking is beneficial.
- Boil, uncovered, for a few minutes to reduce the sauce.
SPICY-SWEET RIBS AND BEANS CROCK POT
I found this recipe in Southern Living! Yummy! I've prepared this the night before on low to have done for an early dinner! I did tweak it. The optional ingredients were added to the original recipe from Southern Living.

- Place beans in a 5-quart electric slow cooker; set aside.
- Cut ribs apart; sprinkle with garlic powder, salt, and pepper.
- Place ribs on a broiling pan. Besides browning for taste this removes some of the fat.
- Broil 5 1/2 inches from heat 18 to 20 minutes or until browned, turning once.
- Add ribs to slow cooker, and sprinkle with onion, garlic, and pepper.
- Combine jelly, barbecue sauce, and hot sauce in a saucepan; cook over low heat until jelly melts. (I just added right to the beans and it melted in with no problem).
- Pour over ribs; stir gently.
- Cover and cook at HIGH 5 to 6 hours or at LOW 9 to 10 hours.
- Remove ribs.
- Drain bean mixture, reserving sauce.
- Skim fat from sauce.
- Arrange ribs over bean mixture; serve with sauce.
- Serve on a bed of rice.

- Sort beans and rinse in cold water. Add beans to a greased 3-qt. slow cooker. Add the next 10 ingredients; stir., Cook, covered, on high 2 hours. Reduce heat to low; cook until beans are tender, 6-7 hours. Serve with slotted spoon. If desired, top with fresh thyme sprigs. , Freeze option: Freeze cooled beans in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring occasionally; add water if necessary.
