Taken from Ruta Kahate's "5 Spices, 50 dishes" and not modified in any way - this is the best curry I have ever eaten and had to share it with you. If you have a chance to buy Ruta's book do so - it is the best cookbook I have ever bought and the only cookbook I have done every recipe out of, it's just that amazing. A few notes: -- DO use seeds and finely grind them in a mortar and pestle - the flavors aren't quite the same if you use already ground spices. If you can't find seeds, then substitute it in the same quantities. -- If your family isn't keen on tough eggplant skins, you can peel them. -- Eggplants go from "undercooked and spongy" to "just well done pefection" to plain mush in a very short period of time. Watch them closely. We want a tofu consistency. -- Tomato sauce can be used in place of the small tomato in a pinch. About 1/3-1/2 cup will do. -- If you like less spicy, cut down on cayenne pepper. The Serranos actually cook down and taste like a bell pepper when done.

3 small japanese or italian eggplants (about 12 ounces)
2 tablespoons canola oil
1/2 medium yellow onion, finely chopped (about 1 cup, not packed)
1 small tomatoes, finely chopped (about 1/4 cup)
2 garlic cloves, minced
1 teaspoon ground cayenne pepper
1/2 teaspoon coriander seed, finely ground
1/4 teaspoon cumin seed, finely ground
1/4 teaspoon ground turmeric
2 small green serrano chilies, cut lengthwise in half
3/4 teaspoon salt
1 lb shrimp, small or medium, peeled and deveined, tails off
1 cup coconut milk
1/2 cup water
1 1/2 tablespoons apple cider vinegar

Steps:

  • Slice the eggplants lengthwise in half and then crosswise into 1-inch chunks.
  • Heat oil in a large saucepan over medium heat and saute the onion until softened.
  • Add tomato,garlic,cayenne,coriander,cumin, turmeric, and saute until the tomato has completely disintegrated. If necessary, deglaze the pan by adding a few tablespoons of water and using a spatula to loosen the browned bits if the mixture starts sticking to the bottom.
  • Add eggplants, chilies and salt, and mix well.
  • Cover and cook over low heat until eggplant is soft, about 10 minutes.
  • Add shrimp and stir gently,.
  • When shrimp begins to turn pink, add coconut milk and water. Continue simmering, uncovered, until shrimp is cooked through, another 5-8 minutes.
  • Very gently stir in the vinegar and remove from heat.
  • Serve immediately and enjoy!
  • This curry tastes even better the next day just reheat gently over low heat stirring carefully once in a while until just warmed to prevent overcooking the shrimp.
  • Serve with any plain rice or quinoa - my favorite.

Pinch of cumin
Pinch of turmeric
Pinch of curry powder
Pinch of cayenne
Sriracha, to taste
Salt and pepper, to taste
Extra-virgin olive oil
1/3 cup red lentils
1/3 cup green lentils
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon curry powder
1 teaspoon ginger
2 tablespoons butter
1 medium white onion, diced
2 large carrots, diced
2 garlic cloves, minced
1 cup chicken stock
1 (15-ounce) can coconut milk
1 teaspoon red curry paste
1 teaspoon curry paste
1 1/2 teaspoon tomato paste
Scallions for garnish

Steps:

  • Peel and clean shrimp, marinate in pinches of cumin, turmeric, curry powder, cayenne, Sriracha, salt, pepper, and extra-virgin olive oil. Rinse green and red lentils, set aside. Toast turmeric, cumin, curry powder and ginger in small saute pan over low heat. In a large saute pan, saute onions and carrots in 2 tablespoons of butter until onion is slightly translucent, then add garlic. Cook for 2 minutes. Deglaze the pan with 1 cup. chicken stock. Add toasted spices, coconut milk, curry paste, tomato paste, lentils and simmer over low heat for 15 to 20 minutes. Heat a grill pan to medium high heat, cook shrimp 3 minutes each side. Spoon soup into bowls, place 3 shrimp tail up in the middle of each bowl, garnish with scallions.

1 pound frozen, peeled raw shrimp, thawed
1/2 teaspoon coarse salt
1/4 teaspoon each: fresh ground black pepper, ground red pepper
2 tablespoons fresh lemon juice
Sauce:
3 tablespoons canola oil
20 curry leaves, optional
4 small dried red chilies
1 teaspoon freshly ground black pepper
1 piece (3 inches long) ginger root, peeled, minced
1 red onion, chopped
2 teaspoons coarse salt
2 cloves garlic, chopped
2 teaspoons ground coriander
1/2 teaspoon each: turmeric, curry powder
1 can (15 ounces) each: diced tomatoes, coconut milk
1 cup chopped cilantro

Steps:

  • 1. Mix shrimp, salt, pepper, red pepper and lemon juice in a food storage bag; toss to coat. Refrigerate. 2. For sauce, heat oil, curry leaves and chilies in a wok or large skillet over medium-high heat until sizzling, 1 minute. Add pepper, ginger, onion and salt; cook, stirring and sprinkling with a little water to keep from sticking if necessary, until onion is golden, 5 minutes. 3. Add garlic, coriander, turmeric and curry powder; cook until fragrant, 1 minute. Reduce heat to medium; add tomatoes. Cook, stirring, 1 minute. Increase heat to medium-high; cook 5 minutes, stirring. Add coconut milk; heat to a boil. Add shrimp and its juices. Heat until shrimp are cooked through and pink, about 2 minutes. Stir in cilantro.

3/4 lb medium shrimp
3 kirby cucumbers or 1 1/2 regular cucumbers
10 medium shallots or 1 large onion
6 cloves garlic, peeled
2 tablespoons ground coriander
1 tablespoon ground fennel
1 teaspoon white pepper, to taste
1 tablespoon ground cumin
1 teaspoon ground turmeric
3 -4 whole dried hot red chilies
3/4-1 teaspoon salt
1 teaspoon sugar
1 3/4 cups thick coconut milk or 1 can coconut milk, with coconut below mixed in
3/4-1 cup finely grated unsweetened coconut (optional)
4 tablespoons vegetable oil
1 teaspoon fennel seed

Steps:

  • Peel and devein the shrimp; wash them and pat them dry.
  • Peel the cucumber and cut it crosswise into 1/2-inch-thick rounds.
  • Peel 7 of the shallots and chop them very finely; peel and finely slice the remaining shallots.
  • Peel the garlic cloves; chop 4 of them very finely and cut the other 2 into fine slivers.
  • Combine the sliced shallots and slivered garlic and set these aside.
  • In a medium-sized pan combine the chopped shallots, chopped garlic, ground coriander, ground fennel (if you cannot get ground fennel seeds, simply grind whole seeds in a clean coffee grinder or food processor), white pepper, ground cumin, turmeric and 2 1/2 cups water.
  • Crumble in the red chilies; if you like mild to medium spicy food, you might consider leaving the chilies whole instead: this is what I did for my wife, who cannot easy as spicy food as I can, and she said it was perfect for her tastes.
  • Stir and bring to a boil; boil, uncovered, on a medium heat for about 5 minutes.
  • Add the cucumber rounds, stir and bring to a simmer; cover and simmer gently for 5 minutes.
  • Then add the shrimp, salt and sugar; bring to a simmer again and simmer gently for about 1 minute, stirring the shrimps around in the sauce.
  • Give the coconut milk a good stir and pour it in.
  • Bring the mixture to a boil, then lower the heat and simmer for 1 minute, stirring now and then.
  • Put the oil in a very small pan or small frying pan and set it over a medium-high heat; when the oil is hot, put in the slivered shallots and garlic.
  • Stir and fry until they turn a golden color.
  • Add the whole fennel seeds; stir once and quickly pour the contents of the pan (oil and sesasoning) into the pan containing the curry.
  • Cover the curry pan immediately to trap all the aromas.
  • Serve with rice and enjoy.
  • Serves 4-6.

6 slices (quarter-size) peeled fresh ginger
25 to 30 leaves fresh curry
2 teaspoons ground cumin
1 1/2 teaspoons , hot red pepper flakes, , or to taste
1 1/2 teaspoons ground black mustard seeds
1 1/2 teaspoons Garam Masala + 1/2 teaspoon for garnish
1 teaspoon salt, or to taste
1 teaspoon sugar
3/4 teaspoon ground turmeric
1/4 cup distilled white vinegar
2 large tomatoes, coarsely chopped
2 to 3 tablespoons peanut oil
2 sticks cinnamon (1-inch)
2 bay leaves
1 large onion, cut in half lenghwise and thinly sliced
25 to 30 fresh extra-large shrimp (16 to 20 per pound), shelled and deveined, with tails removed
2 tablespoons finely chopped fresh cilantro

Steps:

  • 1. In a food processor or a blender, process together the garlic, ginger, curry leaves, cumin, red pepper flakes, mustard seeds, garam masala, salt, sugar, and turmeric with the vinegar to make a fine paste. Transfer to a bowl. Then process the tomatoes until puréed.2. Heat the oil in a large nonstick saucepan over medium-high heat and cook the cinnamon and. bay leaves, stirring, about 30 seconds. Add the onion and cook until browned, about 7 minutes. Mix in the spicy vinegar paste and cook, stirring, over low heat until the masala is browned and the oil separates to the sides, about 10 minutes.3. Add the puréed tomatoes and cook until most of the juices evaporate and the sauce becomes thick, about 10 minutes. Add the shrimp to the pan and cook until they are pink and opaque, about 7 minutes. Mix in the cilantro during the last 2 minutes of cooking. Transfer to a serving bowl, sprinkle the garam masala on top, and serve.VARIATION: For a saucy dish, mix in about 1 cup water during the last 5 minutes of cooking and bring to a boil over high heat. In a large bowl, toss the shrimp with the curry powder, cayenne, ginger and coriander and 1 tablespoon of the olive oil. Season with salt and pepper. Grill the shrimp over moderately high heat until slightly charred and white throughout, about 2 minutes per side. In a medium bowl mix the yogurt with the mint, cilantro, cumin seeds and the remaining 1 tablespoon olive oil. Stir in the cucumber and jalapeño, and season with salt and pepper.
