8 ounces penne pasta
4 links spicy chicken andouille sausage
2 tablespoons olive oil
3 cloves garlic, crushed
⅓ cup pesto
½ cup white wine
1 (15 ounce) can cannellini beans, undrained
3 cups torn arugula leaves
1 pint grape tomatoes, halved
salt and freshly ground black pepper to taste
4 ounces crumbled goat cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Place penne in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  • In a skillet over medium heat, cook the sausage until evenly brown. Cool and slice.
  • Heat the oil in a large pot over medium heat, and cook the garlic 1 minute, until lightly browned. Mix in sausage, pesto, and white wine. Cook and stir until heated through. Mix in beans with liquid and arugula, and cook until arugula is wilted. Stir in the tomatoes, and cook until heated through. Toss with pasta, season with salt and pepper, and top with goat cheese to serve.

1 cup frozen mixed vegetables
1/2 pound smoked turkey sausage, cut into 1/4-inch slices
2 tablespoons all-purpose flour
1/4 teaspoon garlic powder
1/4 teaspoon ground mustard
1/4 teaspoon crushed red pepper flakes
1-1/4 cups fat-free milk
1/3 cup shredded part-skim mozzarella cheese

Steps:

  • Cook pasta in a large saucepan according to package directions, adding the vegetables during the last 6 minutes of cooking., Meanwhile, in a large nonstick skillet coated with cooking spray, brown sausage; remove from skillet and keep warm. , In a small bowl, combine the flour, garlic powder, mustard and pepper flakes; gradually whisk in milk until smooth. 1 tablespoon lemon juice
1 1/2 teaspoons paprika
1 1/2 teaspoons ground cumin
1/4 teaspoon ground ginger
1/4 teaspoon oregano

3/4 cup canned tomato, in thick puree
1/3 cup chopped cilantro
1 red bell pepper, chopped
1/4 lb penne pasta
1 lb pork sausage
fresh parmesan cheese, grated

12 ounces spicy Italian sausage (about 4 links), casings removed
2 shallots, diced
2 cup frozen corn, thawed
1/2 teaspoon kosher salt, plus for the pasta water
8 ounces mascarpone, room temperature
1 tablespoon Calabrian chile paste
1 cup freshly grated Parmigiano Reggiano, plus for serving
1/4 cup fresh basil leaves, chopped

Steps:

  • Bring a large pot of salted water to a boil over medium-high heat. Add the penne and cook according to package directions or until al dente. Drain well, reserving 1/2 cup of the pasta water.

4 links spicy Italian sausage
1 lb dried penne
1 medium onion, chopped
4 garlic cloves, peeled and chopped
28 ounces crushed san marzano tomatoes
1/4 cup torn fresh basil leaf
salt and pepper
1 cup heavy whipping cream
2 cups peas, blanched
1/2 cup grated parmesan cheese, plus more for serving

Steps:

  • Preheat oven to 350 degrees. Place sausages in a roasting pan and roast in the preheated oven for 12-15 minutes, until slightly golden and just cooked. Cut sausages at an angle into bit-size pieces.
  • Place a large pot of salted water over high heat and bring to a boil. Drop the pasta into the boiling water and cook until tender.
  • Set a large, heavy based pot over medium heat and add a 2 count of olive oil (2 tlbs). Add onion and garlic and saute until translucent and fragrant. 4 hot Italian sausages
796 ml Italian tomatoes, undrained
4 tablespoons olive oil, divided
1/2 cup basil, coarsely chopped (loosely packed)
1 small onion, chopped
4 large garlic, chopped fine
2 tablespoons carrots, finely trated
salt and pepper
2 cups oyster mushrooms, sliced
3/4 lb penne pasta (about 5 cups)
parmesan cheese, grated

Steps:

  • Simmer sausages in water for about 5 minutes or until just cooked; let cool. Coarsely chop tomatoes on food processor.
  • In large skillet, heat 2 T olive oil. Add basil, onion, garlic and carrots; saute until soft. Season with salt and pepper. Add tomatoes and simmer for about 30 minutes.
  • Cut sausages diagonally into thin slices. In small skillet, saute sausages in remaining 2 T olive oil until lightly browned. (make sure that the oil is very hot or the sausage will fall apart) Add mushrooms and saute until tender. Add mushrooms and sausages to tomato sauce; simmer 5 minutes.
  • Cook pasta in large amount of boiling salted water until tender; drain and return to saucepan. Add sauce and toss. Serve with parmesan cheese.

1 1/2 cups chicken stock or 1 1/2 cups low sodium chicken broth
3 tablespoons extra virgin olive oil
3/4 lb hot Italian sausage, removed from the casing
2 garlic cloves, minced
1 lb swiss chard, ribs discarded, leafy greens cut into 1-inch strips
3/4 lb penne or 3/4 lb fusilli
1/2 lb ricotta salata or 1/2 lb mild feta, crumbled
1 tablespoon minced oregano
1 tablespoon coarsely chopped flat leaf parsley
salt & freshly ground black pepper

Steps:

  • In a medium saucepan, boil the chicken stock over high heat until reduced to 3/4 cup, about 6 minutes.
  • In a large skillet, heat 1 tablespoon of the olive oil.
  • Add the sausage, breaking it up with a spoon, and sauté over moderately high heat until cooked through and beginning to brown, about 10 minutes. Add the garlic and stir until fragrant, about 1 minute.
  • Transfer the sausage to a platter and pour off all but 1 tablespoon of the fat. Add the chard, cover and cook, stirring, until tender, about 7 minutes.
  • Meanwhile, in a large pot of boiling salted water, cook the pasta until al dente.
