HOT ITALIAN SAUSAGE PANINI WITH PICKLED PEPPERS
Steps:
- In a large pot, combine the white vinegar, water, red pepper flakes, salt, sugar, and garlic and bring to a boil over medium heat. Once boiling, remove the pot from the heat and add the sliced peppers and onions. Let the ingredients pickle at room temperature for about 30 minutes. The peppers will last up to 1 month in a re-sealable container that has been stored in fridge.
- Preheat an outdoor grill or grill pan over medium-high heat. Arrange the butterflied sausages on the grill, cut side down. Cover the sausages with a sheet pan and weigh it down with a tea kettle filled with water or a heavy pan. Grill for 4 to 5 minutes per side.
- Slice the rolls in half and brush them, inside and out, with the olive oil. Layer a slice of provolone over the bottom half of each roll. Add the cooked sausages to the cheese, top with some of the pickled peppers and onions, then finish with 3 pieces of shaved Parmesan and, finally, cover with the top half of each roll. Put the sandwiches in a panini press, 2 or 3 at a time, and cook until the bread is crisp and cheese is melted, about 4 to 5 minutes. If you do not have a panini press, grill the sandwiches in a large skillet over medium heat and put a cast iron or heavy-bottomed pan on the sandwiches to flatten. Cook for 3 minutes per side. Transfer the sandwiches to a serving platter and serve.
BAKED SAUSAGE AND HAZELNUT-CHOCOLATE PANINI

- Preheat oven to 450 degrees F.
- In a large saute pan over medium-high heat, cook sausages until all sides are brown. Slice lengthwise.
- Slice bread lengthwise and spread bottoms with hazelnut chocolate spread. Store the remaining chocolate hazelnut spread in a cool dry place.
- Place sausages on hazelnut chocolate spread. Bake sandwich in oven until bread is lightly toasted.
PASTA WITH SAUSAGE AND BROCCOLINI
This is a really flavorful, easy to make pasta dish. The broccolini is a hybrid vegetable of broccoli and Chinese Kale. It is more tender and sweet than broccoli and less fibrous. Most of it is edible from the stalks to the florets. It really makes the dish better than the usual broccoli or broccoli rabe.

Steps:
- Slice sausage into bite size pieces and cook in large saute pan until fairly well done.
- Remove sausage from pan and drain on paper towels.
- Meanwhile, rinse broccolini, remove and discard only the ends of the stalks.
- Cut the rest of the broccolini into 2" pieces.
- Wipe the saute pan clean and heat olive oil.
- Add garlic and onion and cook for 2 - 3 minutes.
- Add broccolini and cook for 3 more minutes.
- Add can of chopped tomatoes with juice and cook for 2 more minutes.
- Add cooked pasta and sausage, tossing well to combine with the rest of the ingredients.
- Serve with fresh grated Parmeggiano Cheese and enjoy!

ORECCHIETTE WITH BROCCOLINI AND SAUSAGE
Steps:
- Bring a pot of water to a boil; add a generous amount of salt. Add the orecchiette and cook to al dente (take 3 minutes off of the time on the box; it'll finish cooking later). Reserve 1/2 cup of the pasta water, then drain.
- Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until brown, about 7 minutes. Use a slotted spoon to transfer the sausage to a plate, keeping the fat in the skillet. Add the garlic and cook for 30 seconds. Add the broccolini and cook until crisp-tender, about 7 minutes. Reduce the heat to medium low. Add the pasta and sausage to the skillet along with the Parmesan, lemon zest and juice, a couple of pinches of crushed red pepper and a bunch of turns of black pepper. Stir in a few tablespoons of the pasta water and continue to cook, stirring, until glossy, adding more pasta water if needed. Taste and adjust the seasoning as desired. Sprinkle with more Parmesan before serving.
TURKEY PARMESAN PANINI

- Preheat the oven to 450 degrees F.
- Place the tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with the salt. Toss well to coat. Roast the tomatoes until beginning to pop and blister, about 15 minutes.
- Meanwhile, spread 1 tablespoon pesto on 4 slices of bread. Spread 1 tablespoon marinara on the other 4 slices. Place a slice of mozzarella on each slice of bread. Divide the turkey evenly on 4 slices of bread and top with some of the blistered tomatoes. Sprinkle each sandwich with 1 tablespoon Parmesan. Top with the remaining slices of bread and press gently.
- Heat a large skillet over medium heat. Add half of the remaining oil to the skillet and add 2 sandwiches. Place a lid slightly smaller than the skillet on top of the sandwiches and press down. Cook until golden brown, about 3 minutes. Flip the sandwiches and repeat on the second side. Continue with the remaining sandwiches. (Alternatively, you can use a panini press.) Serve warm.
