1 red onion, sliced thin
3 habanero peppers, sliced
10 limes, juiced
salt to taste
3 ounces dried guajillo chile peppers, seeded and deveined
1 tablespoon vegetable oil
salt and pepper to taste
3 pounds boneless pork shoulder, cut into 1-inch cubes
3 cups fresh orange juice
1 cup white vinegar
1 bulb garlic, peeled
7 ½ ounces achiote paste

Steps:

  • Combine the onion, habanero peppers, lime juice, and salt in a bowl; cover and refrigerate while preparing and cooking the pork. Use rubber gloves when preparing the habanero peppers and avoid touching your eyes, nose, or skin while slicing peppers.
  • Place the guajillo peppers in a bowl; pour enough hot water over the peppers to cover. Allow to soak until the peppers are softened, about 10 minutes.
  • Heat the oil in a large skillet at medium-high heat. Season pork with salt and pepper; cook in the hot oil until completely browned, 15 to 20 minutes. Transfer the pork to a slow cooker.
  • Combine the guajillo peppers, orange juice, vinegar, garlic, and achiote paste in a blender; blend until smooth. Pour the sauce over the pork cubes in the slow cooker.
  • Cook on High until the pork easily falls apart, 6 to 8 hours. Remove the pork to a serving dish and shred with 2 forks. Pour the achiote sauce over the shredded pork. To serve, top with the onion-habanero salsa.

i made this last week, my first attempt at pulled pork, and it was a winner. i had a spicy carolina style pp sandwich at a native american festival, and got into a chat with the cooks. this was the recipe, from what i can recall as it was told to me. by the way, this is by no means a low fat dish. trying to make it low fat will just not be the same. please enjoy it the way it was meant to be. pork fat rules!

2 tablespoons paprika
2 teaspoons sea salt
1 teaspoon freshly cracked black pepper
5 lbs pork shoulder
1 cup red wine vinegar

  • combine the brown sugar, paprika, salt and pepper, and rub the mixture over the roast. wrap tightly in plastic, and refrigerate a few hours, overnight is best.
  • in a bowl, combine the vinegar, worcestershire sauce, red pepper flakes, sugar, mustard, garlic powder, and cayenne pepper. mix well.
  • place the quartered onions in the bottom of the crock pot. unwrap the roast, and place on top of onions. drizzle most of the vinegar mix over the roast, reserving some to add to the shredded meat at the end.
  • cover and cook on low for 7 to 8 hours, or high for 4 to 5 hours.
  • remove the meat and onions to a cutting board. remove skin and set aside. using two forks (or your fingers, if you have asbestos hands), pull and shred the pork. chop the onions, and mix into the shredded meat. using a fork, remove some of the fat from under the skin, mince, and add to the shredded meat and onions as needed for moisture and flavor.
  • serve on warm buns or crusty hard rolls, with the remaining vinegar mixture on the side.

2 onions, peeled and quartered
1 whole pork butt (pork shoulder roast)
Salt and freshly ground black pepper
One 11-ounce can chipotle peppers in adobo sauce
2 cans pop (I use Dr Pepper)
4 packed tablespoons brown sugar

Steps:

  • Preheat the oven to 300 degrees F. Start by placing the onion quarters in the bottom of a pot. Sprinkle the pork with salt and pepper, and then place on top of the onions. Pour the chipotle peppers over the top, and then crack open the cans of pop and pour them over the whole thing. Add the brown sugar to the liquid and stir.
  • Cover the pot, put in the oven and cook for at least 6 hours, flipping the roast 2 or 3 times during the cooking process. When it's done, the pork will be dark and weird and wonderful. It'll also be fork-tender. That's when you know it's done.
  • Remove the meat from the pot and shred completely. Then return the meat to the pot and keep in the juice until you need it. Divine!

Variety of pickles such as regular, pickled red onions and pickled jalapenos

3 mini sweet peppers (in 2 different colors), thinly sliced
2 carrots, shredded

1 tablespoon sugar
1 teaspoon white vinegar
1/4 teaspoon kosher salt
Couple dashes hot sauce

Steps:

  • For the sliders: Preheat the oven to 300 degrees F.
  • In a food processor, combine the olive oil, brown sugar, chile powder, smoked paprika, salt, pepper, cayenne, garlic, jalapenos and onions and blend until a thick paste forms. Rub the paste all over the pork and place in a large Dutch oven skin-side up. Add 1 cup water, cover tightly with a lid and roast until just tender, 4 to 5 hours.
  • Remove the lid and continue cooking until the pork is falling apart and a dark bark has formed, 1 to 2 hours longer. Allow to cool slightly.
  • Remove the pork from the pot and remove and discard the fat. Shred the pork with 2 forks. Remove as much of the fat as possible from the sauce, then transfer the shredded pork back to the sauce. Stir in the spicy barbecue sauce to just coat the meat.
  • For the fixings: Serve on mini buns with a toppings bar including bacon, Colorful Coleslaw, a variety of pickles [regular, pickled red onions and pickled jalapenos], whole-grain mustard, spicy barbecue sauce and hot sauce.
  • Combine the mini sweet peppers, carrots and cabbage in a bowl. In a separate bowl, mix together the milk, mayonnaise, sugar, vinegar, salt and hot sauce. Pour over the cabbage mixture and toss to combine. Add the cilantro and mix. Cover and refrigerate for 2 hours.

From Michigan, and the Vernor's plant is in Flint, MI - so Vernor's was what many people drank. A great ginger ale and the only one for me. Well this was a popular dish back in the day, and honestly it was great. It is easy, spicy and great pulled pork.

4 -5 lbs pork shoulder
3 large onions (1 thick sliced the other 2 thin sliced)
12 ounces vernos ginger ale
1 orange, cut in quarters (lightly squeezed and the rest thrown in the crock pot)
1 bay leaf
3 whole cloves
1 teaspoon salt
1 teaspoon pepper
2 cups barbecue sauce (plain, you can just use a good store bought for this)
1/3 cup honey
3 tablespoons chopped chipoltes in adobo seasoning (to taste, you can go less, is you don't want it spicy)
1 teaspoon minced garlic
3 tablespoons orange juice

Steps:

  • Pork -- Season your pork well with salt and pepper. Add the thick sliced onion on the bottom and then top with the pork. Then top with the thin sliced onions.
  • Add the Vernors, cloves, bay leaves and squeeze the oranges and then throw in the pieces. Cover and cook on low for 10-12 hours until tender.
  • Pull -- The pork is done. Remove and let cool slightly. Then pull apart the pork.
  • Sauce -- A few minutes before I remove my pork, is when I start my BBQ sauce. In a small pot over medium heat add the sauce, honey, garlic, orange juice, chipoltes and about 1 cup of the Vernors broth. Bring to a light boil, reduce to medium and simmer for about 15 minutes. Add a little more Vernors broth, not much and bring to a boil again and reduce until the sauce is rich and thick.
  • Pork -- As the sauce cooks, pull the pork. Add your sauce to your pork and enjoy. If you don't use all your sauce. Just put in a baggie and freeze. This is great just brushed over pork chops or a tenderloin. Don't throw it out.
  • Onions -- Don't forget about all those good onions. Scoop them out and serve on the side to serve on the sandwich.
  • Serve -- Well you know what to do. Your favorite buns, coleslaw and ENJOY!

MILDLY SPICY POP PULLED PORK

I modified the original recipe I saw on The Pioneer Woman to suit our family's tastes. This has a hint of heat, but is rather mild. For those who love heat just add more chiles. I've heard of people using a whole 7 oz. can for super spicy pork. We paired this with potatoes au gratin and coleslaw (recipe #218429), but you could also put it on a bun for a nice sandwich.

  • Remove the meat from the pot and shred completely. At this point you may remove the cooked onions and chipotle peppers if you don't wish to have them with the shredded pork. I hear that keeping the peppers in will add heat to the final dish, though I did not do that. Then return the meat to the pot and keep in the juice until you need it.

1 teaspoon mustard powder (such as Keen's®)
1 teaspoon cayenne pepper
3 ¾ pounds pork shoulder roast

Steps:

  • Mix tomato paste, vinegar, onion flakes, yellow mustard, molasses, garlic, olive oil, and liquid smoke in a bowl to create a thick paste. Stir brown sugar, kosher salt, cumin, chipotle pepper, paprika, black pepper, garlic powder, mustard powder, and cayenne pepper into tomato paste mixture.
  • Place pork shoulder into a slow cooker and add paste mixture.
  • Cook on High for 4 hours. Shred pork with 2 forks and remove bone. Reduce heat to Low and continue cooking for 1 to 2 more hours.

2 large peeled and quartered
1 - whole pork butt (pork shoulder roast)
- salt and freshly ground black pepper (to taste)
1 can(s) 11-ounce chipotle peppers in adobo sauce (mexican isle in store)
2 can(s) dr. pepper soda
4 tablespoon(s) brown sugar (packed)

Steps:

  • Preheat the oven to 300 degrees F.
  • Start by placing the onion quarters in the bottom of a pot. Sprinkle the pork with salt and pepper, and then place on top of the onions. Pour the chipotle peppers over the top, and then crack open the cans of pop and pour them over the whole thing. Add the brown sugar to the liquid and stir.
  • Cover the pot, put in the oven and cook for at least 6 hours, flipping the roast 2 or 3 times during the cooking process. When it's done, the pork will be dark and weird and wonderful. It'll also be fork-tender. That's when you know it's done.
  • Remove the meat from the pot and shred completely. Then return the meat to the pot and keep in the juice until you need it
  • Serve on Buns or just on the plate either way this is going to be a divine meal!

1/3 lb smoked pork, chopped
6-8 oz mexican shredded cheese
1/2 small onion, grated
2 Tbsp uncle gary's gourmet peppers, chopped

zest of 1 lime
1 tsp cumin
1/2 tsp chipotle chili powder

3 cups ketchup
1 cup apple cider vinegar
1 cup Worcestershire sauce
1 cup (packed) dark brown sugar
1 Tbsp Dijon mustard
MARINADE AND PORK
2 cups low-sodium soy sauce
½ cup Worcestershire sauce
¼ cup (packed) dark brown sugar
8 garlic cloves, crushed
2 tsp dried crushed red pepper
2 3½-to-4 lb boneless pork butt (shoulder) roasts

Steps:

  • FOR SAUCE: Bring ketchup, apple cider vinegar, Worcestershire sauce, brown sugar, and Dijon mustard to boil in heavy large saucepan. Reduce heat to low and simmer until sauce thickens, stirring occasionally, about 15 minutes. DO AHEAD: Can be made 1 week ahead. Cover and refrigerate. Rewarm sauce before using. FOR MARINADE AND PORK: Whisk soy sauce, Worcestershire sauce, sugar, garlic, and crushed red pepper in medium bowl. Pour marinade into large (2-gallon) heavy-duty resealable plastic bag. Add pork; turn to coat. Seal bag and chill 1 day, turning bag occasionally. Place handful of torn newspaper in bottom of charcoal chimney. Top with 35 briquettes. Remove top rack from grill; place chimney on lower rack. Light newspaper; burn until charcoal is ash gray, about 30 minutes. Open bottom grill vent. Turn hot charcoal out onto rack; spread charcoal to cover half of rack. Add enough water to come halfway up sides of 1 large or 2 small disposable foil pan(s); place next to charcoal. Replace top grill rack. Place pork on top rack over pan(s). Close lid. Place stem of meat thermometer through vent in lid to monitor temperature inside barbecue (thermometer tip should not touch meat or grill rack). Use bottom and top vents to maintain temperature between 250°F and 325°F; open vents to increase heat and close to decrease heat. Cook pork 2½ to 3 hours, checking temperature of barbecue every 30 minutes. When temperature drops below 250°F, light 35 more briquettes in chimney. Remove top rack; spread fresh briquettes onto briquettes on bottom grill rack. Replace top rack, turn pork. Cook pork over pan(s) of water until tender and thermometer inserted into thickest part registers 175°F, maintaining temperature in barbecue, about 2½ to 3 hours longer. Transfer pork to platter; let stand 30 minutes. DO AHEAD: Can be made 1 day ahead. Cool 1 hour. Cover with foil; chill. Rewarm, covered, in 350°F oven for 45 minutes. Shred pork; serve with sauce.

i made this last week, my first attempt at pulled pork, and it was a winner. i had a spicy carolina style pp sandwich at a native american festival, and got into a chat with the cooks. this was the recipe, from what i can recall as it was told to me. by the way, this is by no means a low fat dish. trying to make it low fat will just not be the same. please enjoy it the way it was meant to be. pork fat rules!

3 tablespoons brown sugar
2 tablespoons paprika
2 teaspoons sea salt
1 teaspoon freshly cracked black pepper
5 lbs pork shoulder
1 cup red wine vinegar
2 tablespoons Worcestershire sauce
2 teaspoons crushed red pepper flakes
2 teaspoons sugar
1 tablespoon spicy brown mustard
1 tablespoon garlic powder
1/2 teaspoon powdered cayenne pepper
2 red onions, quartered
2 yellow onions, quartered

Steps:

  • combine the brown sugar, paprika, salt and pepper, and rub the mixture over the roast. wrap tightly in plastic, and refrigerate a few hours, overnight is best.
  • in a bowl, combine the vinegar, worcestershire sauce, red pepper flakes, sugar, mustard, garlic powder, and cayenne pepper. mix well.
  • place the quartered onions in the bottom of the crock pot. unwrap the roast, and place on top of onions. drizzle most of the vinegar mix over the roast, reserving some to add to the shredded meat at the end.
  • cover and cook on low for 7 to 8 hours, or high for 4 to 5 hours.
  • remove the meat and onions to a cutting board. remove skin and set aside. using two forks (or your fingers, if you have asbestos hands), pull and shred the pork. chop the onions, and mix into the shredded meat. using a fork, remove some of the fat from under the skin, mince, and add to the shredded meat and onions as needed for moisture and flavor.
  • serve on warm buns or crusty hard rolls, with the remaining vinegar mixture on the side.
