INDIAN SNACK MIX (CHEWDA)

There are entire shops dedicated to this snack mix in India, and it's one of our treasured snacks. The last time I was in India, we all walked to a neighborhood pub, ordered a pitcher of beer, and chowed down on a big bowl of Chewda. It usually consists of chickpea flour noodles, flattened flakes of dried rice, peanuts and seasonings. Here's my Americanized version. Careful. Once you start... it's really hard to stop!

Yield 4 cups

Number Of Ingredients 12

2 cups corn cereal (recommended: Corn Flakes)
2 cups puffed rice cereal (recommended: Rice Krispies)
1/4 cup shelled, skinless peanuts
1/4 cup pepitas (pumpkin seeds)
2 tablespoons peanut oil
1 teaspoon brown or black mustard seeds
8 to 10 fresh curry leaves, optional
1/2 green serrano chile, minced
1/2 teaspoon turmeric
Small handful plantain chips, optional
2 tablespoons golden raisins
Kosher salt

Steps:

  • In a large wok over medium heat, toast the corn cereal, puffed rice cereal, peanuts, and pepitas until the cereals have crisped up, about 2 minutes. Remove from the pan.
  • Warm the oil in the same wok over medium heat. Add the mustard seeds (stand back, they'll pop!), curry leaves, green chile, and turmeric. Cook about 30 seconds. Turn the heat off.
  • Add the cereal mixture, plantain chips, if using, and raisins. Season with salt. Toss until well combined, and pour into a big bowl. Crack a beer and enjoy!

PUFFED RICE TRAIL MIX

This savory and sweet trail mix contains peas, pepitas, and sesame sticks; the puffed rice is crunchy and as light as air.

Number Of Ingredients 9

2 cups puffed-rice cereal
1 cup roasted peas
1 cup roasted pepitas
1/2 cup sesame sticks
1/2 cup toasted shredded coconut (sweetened)
2 tablespoons unsalted butter
2 tablespoons light-brown sugar
1 tablespoon ground ginger
1/4 teaspoon salt

Steps:

  • Preheat oven to 250 degrees with rack in center. Place puffed rice, peas, pepitas, sesame sticks, and coconut in a large bowl.
  • In a small saucepan, melt butter over medium heat. Add brown sugar and ginger; heat until sugar has melted. Pour over puffed-rice mixture. Season with salt; toss well with a wooden spoon to coat evenly.
  • Spread on a rimmed baking sheet, and bake 30 minutes. Remove from oven; let cool completely.

Spicy Puffed Rice image

Puffed rice is well known as 'Murmura / Mumra / Mamra' in India. This is used as a main ingredient to make many Indian snack items like Bhel Puri, Murmura Ladoo, Chikkis, Spicy Puffed Rice etc. This is an easy recipe that is guilt free. Variations: Peanuts, sesame seeds, cashews, roasted edamame, pretzels, rice crackers, wasabi peas, coconut, raisins, almonds, pecans etc etc

Number Of Ingredients 14

6 cups rice, puffed and toasted
4 tablespoons oil
1 small onion, chopped 1-inch long and slender (optional)
1 teaspoon mustard seeds
1 teaspoon cumin seed
1/4 teaspoon turmeric
1/4 teaspoon asafoetida powder
1/2 cup nuts, ground
1 birdseye chili
1 teaspoon red chili powder
hand full curry leaf (run without if you don't have them)
salt
1 teaspoon sugar
lime wedge (optional)

Steps:

  • Make sure the puffed rice is crispy. If not dry roast them in a pan at 200F till they become crisp -- about 30 minutes.
  • Heat oil in a pan, add mustard seeds and allow it to splutter.
  • Then add onions (if using) red chilies, cumin seeds, asafoetida, groundnuts, curry leaves and turmeric. Fry for sometime till you hear the cracking sound of the groundnuts.
  • Add the red chilli powder, salt and mix well.
  • Switch off the heat and mix the puffed rice into the above mixture.
  • Add the sugar and mix well.
  • Once cooled, transfer to an air tight container and store it for up to 2-3 weeks.
  • Just before eating squeeze lime juice on top. (Optional).
  • Variations: Peanuts, sesame seeds, cashews, roasted edamame, pretzels, rice crackers, wasabi peas, coconut, raisins, almonds, pecans etc etc).
  • Time is without toasting as that can be done while doing the rest.
