- Heat two tablespoons butter in a large pot over high heat. Add half of the garlic and sauté, stirring constantly, for one minute. Add the broth and water; bring to a boil. Add the pasta and boil until the pasta is cooked. Lower the heat and simmer until most of the liquid is absorbed. Do not drain - there should be some liquid left in the pan to help coat the noodles.
- While the pasta is cooking, heat two tablespoons butter in a large skillet over medium heat. Add the shrimp and saute for 1-2 minutes on each side until the shrimp are almost cooked through.
- Add the garlic, sage, and white wine to the shrimp pan. Let the shrimp cook for another 3-5 minutes or until most of the wine has evaporated and the shrimp are lightly browned on the outside. Remove from heat and set aside. Cover so the shrimp stays warm.
- Add the shrimp, whipping cream, Parmesan, and parsley to the cooked pasta. Toss everything together and finish with a squeeze of lemon juice, salt, and pepper.

- Clean, shell and devein prawns. Lightly sprinkle with salt and black pepper.
- Heat oil in wok. Add in garlic, chilli and stir fry till fragrant.
- Add prawns and cover wok with lid.
- Cook 2-3 minutes over low heat.
- Lift the lid briefly, add in wine, cover again and continue to cook for an extra 3-4 minutes until gravy is almost evaporated. Sprinkle with ground black pepper.

- Pat the shrimp dry and season with kosher salt and 1 teaspoon of red pepper flakes.
- Heat 2 tablespoons extra virgin olive oil in a large skillet. Add the shrimp and cook for 45 seconds to 1 minute over medium heat. Transfer the shrimp and its juices to a plate for now. (If the shrimp is still grey in some parts it is okay, it will finish cooking in the sauce).
- In the same skillet, heat another 3 tablespoons extra virgin olive oil over medium-high until shimmering. Reduce the heat to medium then add the onions and garlic. Cook for 5 minutes over medium heat, tossing regularly, until the onions have softened and turned a light golden brown (manage your heat to make sure the garlic does not burn). Add the white wine and cook until reduced by half.
- Stir in the diced tomatoes and tomato paste. Season with kosher salt, black pepper, the oregano, and the remaining red pepper flakes. Bring to boil, then lower the heat to medium low and allow the sauce to simmer for 10 minutes or so until thickened.
- Return the shrimp to the skillet and nestle it into the sauce. Cook for 1 more minute or until the shrimp is just warmed through and pink. Finish with fresh parsley. Serve immediately with your favorite crusty bread, pasta, or rice.

- Cook the pasta. Meanwhile, heat the oil in a pan and gently fry the garlic for 2 mins. Tip in the wine and bubble over a high heat for 1 min, then lower the heat and stir in the crème fraîche and lemon juice. Season to taste with salt and plenty of black pepper. - Heat oil in a large skillet and tilt pan to coat bottom. Add shallot and garlic and cook over medium heat for 2 minutes, until softened, but not browned.

SPICY SHRIMP IN A WHITE WINE, LEMON & BUTTER SAUCE
Whipped this up on a whim with some frozen shrimp and left over wine. It was absolutely delicious so I had to post it! Goes great over spinach or a rice pilaf and a nice piece of crispy bread to sop up the juice!

- If using frozen shrimp defrost in a bowl of tepid water. Then rinse off and pat dry.
- In a large saucepan melt 3 tablespoons of the butter or margarine over medium heat. While that is melting toss the shrimp with all the dry ingredients.
- Once butter is completely melted and turning a light golden color add the shrimp. Cook on one side until nice and brown and crispy. Turn over and add lemon juice. Cook until opaque, one-two more minutes.
- Remove shrimp from pan. Leave pan on the flame. Add the remaining butter and let melt. Once the butter is melted add the wine to deglaze the pan and bring to a simmer. Let sauce cook down until it almost stops bubbling.
- Pour over shrimp and enjoy!
