I personally have never eaten a pickled egg in my life. My husband on the other hand loves pickled eggs. I took a couple of different recipes for pickled eggs and came up with this one. It's a real hit with him and his family!

4 dozen hard-boiled eggs
4 cups vinegar
1 onion, sliced
8 habanero peppers
7 jalapenos
1/2 cup pickled jalapeno pepper
2 tablespoons red pepper flakes
5 dashes hot sauce
2 tablespoons salt
3 tablespoons mustard seeds
3 pinches alum
4 tablespoons peppercorns
5 cloves garlic
2 cups sliced carrots or 2 cups cauliflower (or both)

Steps:

  • boil everything except the eggs for about 15 minutes.
  • put the eggs in a huge jar.
  • pour the hot brine on top of the eggs.
  • top off with hot water to completely cover the eggs.
  • let sit in the refrigerator for 2 weeks.

1 bunch beets
1 small yellow onion
5 peppercorns
5 whole cloves
1 bay leaf
1/4 cup sugar
3/4 cup vinegar
4 eggs, hard boiled and peeled
1 cup Dijon mustard
1 cup honey
1 cup seasoned rice wine vinegar
4 teaspoon dry tarragon
Salt and pepper
12 ounces baby romaine lettuce, cleaned
8 pieces bacon, cooked and crumbled
16 ounces cooked chicken, sliced
2 ounces Gorgonzola, crumbled
1 avocado, peeled and sliced
4 pickled eggs, sliced
Pickled beets and onions
2 tomatoes, quartered

Steps:

  • Scrub and peel the beets. Peel and slice the onions. Put the beets and onions in a medium size saucepan and cover with water. Add the peppercorns, cloves and bay leaf and simmer over medium-heat for about 30 minutes or until the beets are semi soft. Remove from heat and cool. Add the sugar and the vinegar. Add the hard-boiled eggs. Refrigerate and cool overnight.
  • Whisk together the Dijon, honey, vinegar, tarragon, and salt and pepper and set aside.
  • Arrange romaine, bacon, chicken, Gorgonzola, avocado, eggs, and beets and onions on a plate and serve next to a small side dish of dressing.

1 gallon glass container, sterilized (with a lid)
white vinegar
6 chili peppers or 6 jalapenos, sliced or left whole with slits cut into them
1 teaspoon pickling salt
1 teaspoon pickling spices
2 bay leaves
1 teaspoon mustard seeds
4 whole cloves
1 medium onion, chopped
1 teaspoon hot sauce
4 cloves garlic
12 boiled,peeled eggs

Steps:

  • Open every window in the house.
  • Boil 2 cups of the vinegar with the spices for 5 minutes.
  • Pour into the jar, add eggs, peppers and onions and pour vinegar over this to cover.
  • Let stand for eight to 10 days (lid on) If the vinegar is too strong for you, use 3 parts vinegar to 1 part water.

Quick and easy. egg recipe given to me by an elderly neighbor, she always gave me a jar at Christmastime. The last time she gave me some she gave me the recipe too , said she could no longer make them, she was 97.

1 1/2 c red wine vinegar or cider vinegar
1/2 c water
1 Tbsp dark brown sugar
1 tsp pickling spices
1/4 tsp liquid smoke
2 tsp salt
2 tsp granulated sugar
6 to 8 large hard boiled eggs, shells off
glass jar

Steps:

  • 1. Combine all ingredients except eggs and glass jar. In a saucepan , bring the ingredients to a boil, simmer for 5 minutes. Put peeled eggs in glass jar and pour liquid through strainer over eggs. Seal jar and refrigerate to season. Takes at least 2 to 4 week to season. Worth the wait,believe me. I always make at least 6 jars when eggs go on sale.

I came up with this recipe for my husband. He wanted pineapple pickled eggs but I decided to go a different way. The result was delicious and so easy to make. You will not be able to stop eating them.

6 hard boiled eggs peeled
1/2 c sugar
1/2 c water
1/2 c apple cider vinegar
1 orange zested and juiced
2 tsp red pepper flakes
1/4 c jarred jalapenos
1/4 c fresh or canned pineapple
1/2 c pineapple juice

Steps:

  • 1. In a sauce pan bring sugar, water, vinegar, pineapple juice, pepper flakes, orange juice and zest to a simmer until the sugar dissolves.
  • 2. In a 3 cup sterilized mason canning jar add eggs, pine apple and jalapenos. Pour hot broth in jar after sugar dissolves cover with lid. Let jar cool down about 10-15 minutes on counter and put in fridge. Let them sit in fridge for a week or if you can't wait 24 hours at least.
  • 3. They are great on sandwiches or salads or by themselves. You can also add ginger to the mixture to mix it up.

1 - 2 tablespoons pickling spice

Steps:

  • In a large saucepan, combine vinegar, water, sugar and salt. Heat over medium, stirring occasionally, until sugar and salt have dissolved. Remove from heat and allow mixture to cool completely.

The result is not only the TASTIEST eggs I have ever had, but also the nicest looking eggs as well! The finished jars are practically decorations! So, gather up the ingredients below and prepare to make the greatest spicy pickled eggs ever!

8 eggs
2 cups white vinegar
1/2 cup water
1/2 cup white sugar
1 teaspoon salt
1 teaspoon pickling spices
1 teaspoon red pepper flakes
5 cloves
1 cinnamon stick
3 habanero peppers, cut into rings
3 green jalapeno peppers, cut into rings
1/2 red pepper, cut into strips
3 rings white onions

Steps:

  • Hard boil 8 eggs. The best method I've found is to place them in a pan of cool water and then place them on the stove. Turn the stove on high. Add a few pinches of salt to the water. When the water reaches a boil, cover the pan, and remove from the heat for 15 minutes.
  • After 15 minutes pour out the hot water and replace with very cold water and some ice cubes. Carefully crack and peel the eggs and set them aside for now.
  • Combine remaining ingredients in a saucepan and bring to a simmer for 15 minutes.
  • Remove broth from heat and scoop some of the peppers/onions into a Quart sized Mason Jar. Add 3 eggs.
  • Continue to add the peppers/onions/spices and eggs.
  • Pour the remaining broth into the Mason Jar to within a quarter inch of the top. If you are short on broth, just top off with white vinegar.
  • Hand tighten a lid and ring on the Mason Jar, let it cool, then place it in the refrigerator for 2-3 weeks.

If you haven't ever made pickled eggs, this is the perfect time to try. This Carolina Reaper Pickled Egg Recipe is about as awesome as it gets.

2.5 cups white vinegar
2 tablespoons pickling spices
2 teaspoon salt
3 garlic cloves, whole
¼ raw onion, sliced (optional)
3-5 loosely chopped Carolina Reaper peppers (or whatever pepper you want)
6 hardboiled and peeled eggs

Steps:

  • Heat vinegar, spices, and salt to boiling.
  • Allow to simmer for 5 minutes
  • Remove from heat and allow to cool for 15 minutes
  • Add, Garlic cloves, onion, and Carolina Reapers to sanitized mason jar
  • Pour liquid into jar.
  • Add eggs
  • Put lid on and place in fridge.
  • Allow to sit for 1-2 weeks before eating and eat within 3-4 months.
  • You can add eggs as needed, but I would replace every 3-4 months
