Spicy Maple Bacon Peanut Brittle image

I wanted to come up with a "different" peanut brittle to give away for the holidays, and combined a few of my favorite things. Posting here for safekeeping!

8 slices bacon
1 1/2 cups sugar
1/2 cup pure maple syrup
2 1/2 cups unsalted dry roasted peanuts (if salted, reduce salt to 1/4 teaspoon)
8 tablespoons unsalted butter (one stick)
3/4 teaspoon Old Bay Seasoning
1/2 teaspoon cayenne pepper
1/2 teaspoon dry mustard
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 400 degrees.
  • Place bacon on a rack over a cookie sheet and cook until crispy, about 15 minutes. Reserve bacon fat. The recipe calls for 8 tablespoons of butter (fat) - replace as much of butter as you have bacon fat. Once bacon is done, drain on paper towels and chop into bits.
  • Place the sugar and maple syrup in a large, heavy saucepan over high heat and stir with a wooden spoon until sugar begins to melt. Lower the heat to medium-high and keep stirring just until the sugar is melted. Stop stirring and watch for it to turn a medium caramel color. About 10 minutes total.
  • Stir in peanuts, and then bacon fat and butter. Then add Old Bay, cayenne and dry mustard. Allow peanuts to cook for about two minutes, stirring constantly. Stir in the bacon.
  • Turn the mixture out onto a sheet pan lined with parchment paper, and spread it evenly to the desired thickness with a wooden spoon or stiff rubber spatula. Sprinkle salt on top, while brittle is still warm.
  • Allow to cool completely--at least one hour--then break the brittle into pieces and store in an airtight container at room temperature. If your brittle isn't brittle enough to break into pieces, pop it in the freezer for 10 to 15 minutes, until it hardens enough to snap easily.

8 slices extra-thin white bread (Pepperidge Farm would work well.)
1 1/4 cups Jif crunchy peanut butter or 1 1/4 cups extra-crunchy peanut butter
1 lb sliced bacon

Steps:

  • Spread peanut butter generously on four slices of bread.
  • Top with four remaining bread slices and trim crusts.
  • Cut each sandwich into thirds, vertically and horizontally, to make nine cubes.
  • Cut each bacon slice into thirds and wrap each sandwich cube with bacon.
  • Secure with wooden toothpicks.
  • Place cubes on rack of a broiler pan.
  • Bake at 350 for 15 to 20 minutes or until bacon is nicely crisped.

1/4 cup peanut butter
4 slices cinnamon-raisin bread
1/8 teaspoon cayenne pepper
4 crisp cooked bacon strips
2 teaspoons honey

Steps:

  • Spread peanut butter on 2 bread slices; sprinkle with cayenne. Top with bacon and drizzle with honey. Top with remaining bread.

1/2 cup peanut butter
6 scallions, chopped
2 tablespoons fresh lemon juice
1 tablespoon soy sauce
1 tablespoon mayonnaise plus additional for brushing the bread slices
1 teaspoon brown sugar or granulated sugar
9 slices of homemade-type white bread, crusts removed
6 slices of lean bacon, cut into 1-inch pieces and cooked until almost crisp

Steps:

  • In a small bowl stir together the peanut butter, the scallions, the lemon juice, the soy sauce, 1 tablespoon of the mayonnaise, and the brown sugar. Spread the bread slices lightly with the additional mayonnaise, spread the peanut butter mixture on the slices, and cut the slices into quarters. Arrange the canapés on a baking sheet, put a piece of bacon on top of each canapé, and bake the canapés in the middle of a preheated 425°F. oven for 8 to 10 minutes, or until the bacon is crisp.
