Spicy Pepper Jack Mac and Cheese image

Spicy Pepper Jack Mac and Cheese. A fun twist on the original made in less than 15 minutes!

2 cups Cavatappi pasta (uncooked)
1 tablespoon unsalted butter
1 tablespoon all purpose flour
1 cup milk
1/2 cup pepper jack cheese (shredded)
3/4 cup cherry tomatoes (quartered)
1 teaspoon jalapeno (minced)
1 teaspoon Tabasco
1/8 teaspoon cayenne pepper
1/2 tsp ground mustard
1/2 tsp Worcestershire sauce
1/2 tsp garlic powder
salt and pepper, to taste
fresh parsley chopped for garnish

Steps:

  • Boil pasta until al-dente.
  • Meanwhile add butter to a small saucepan. Heat until melted.
  • Stir in flour and whisk constantly for 1-2 minutes.
  • Add milk and simmer whisking constantly for another 3-4 minutes until thick.
  • Take off of the heat and whisk in cheese until fully melted.
  • Stir in tomatoes, jalapeno, Tabasco, cayenne pepper, ground mustard, Worcestershire sauce and garlic powder. Season with salt and pepper to taste.
  • Pour cheese sauce over the cooked noodles and toss to combine.
  • Serve with a sprinkle of parsley for garnish and serve immediately!

2 cups uncooked elbow macaroni
1/4 cup butter, cubed
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/2 teaspoon pepper
1/2 teaspoon Worcestershire sauce
1-1/2 cups milk
1/2 cup heavy whipping cream
3 cups shredded pepper Jack cheese
1 package (8 ounces) cream cheese, cubed
1 cup shredded sharp cheddar cheese
1/2 cup shredded Asiago cheese
TOPPING:
3/4 cup panko bread crumbs
4 bacon strips, cooked and crumbled
1/4 cup grated Parmesan cheese
1 cup cheddar french-fried onions, crushed

Steps:

  • Cook macaroni according to package directions; drain and set aside., In a large saucepan, melt butter over medium heat. Stir in the flour, salt, mustard, pepper and Worcestershire sauce until smooth; gradually add milk and cream. Bring to a boil over medium heat; cook and stir for 1 minute or until thickened. Stir in cheeses until melted. Stir macaroni into cheese mixture., Transfer to a greased 2-qt. baking dish. Sprinkle with bread crumbs, bacon, Parmesan cheese and onions. Bake, uncovered, at 350° for 20-25 minutes or until bubbly and golden brown.

8 ounces Cheddar, 1/2 cubed, 1/2 shredded
8 ounces Colby cheese, cubed
8 ounces Monterey pepper jack cheese, cubed
2 teaspoons all-purpose flour
1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon dry mustard
1/8 teaspoon freshly ground nutmeg
4 tablespoons sour cream
1 large egg, beaten
1 cup heavy cream
1 cup half-and-half
1/4 cup finely grated onions
4 slices bread
1 tablespoon butter
Special equipment: 2-quart baking dish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss together the pasta with the cheese cubes and pour into the baking dish.
  • In a large bowl, mix together the flour, salt, black pepper, cayenne pepper, dry mustard, nutmeg. Add the sour cream, egg, heavy cream, half-and-half and onions. Pour over the pasta and cover with the shredded Cheddar. Bake uncovered until the top is just beginning to brown, about 35 minutes.
  • Meanwhile, cut the bread into crouton-size squares. In a skillet over medium heat, melt the butter, add the bread cubes and toast until golden. Sprinkle the bread cubes on top of the macaroni and cheese and bake until golden brown, about 10 minutes more.

1 1/2 cups finely chopped onion
2 large garlic cloves, minced
1 1/2 tablespoons minced pickled jalapeno chilies, to taste or 1 to 2 tablespoons of chipotle in adobo
1/2 stick (1/4 cup) unsalted butter
1/4 cup all-purpose flour
5 cups milk
1 (28-ounce) can plum tomatoes, juice discarded and tomatoes chopped and drained well
1 pound elbow macaroni
2 cups coarsely grated Monterey Jack (about 8 ounces)
2 cups coarsely grated extra-sharp cheddar (about 8 ounces)
1/4 cup fresh bread crumbs
1/4 cup freshly grated Parmesan (about 1/4 pound)

Steps:

  • In a large heavy saucepan cook the onion, the garlic, the jalapenos, or chipotle in butter over moderately low heat, stirring, until the onion is softened, stir in the flour, and cook the mixture, stirring, for 3 minutes. Add the milk in a stream, whisking constantly, and bring the liquid to a boil. Stir in the tomatoes. Simmer the mixture for 2 minutes. Add salt and pepper, to taste.
  • In a kettle of boiling salted water cook the macaroni for 6 to 7 minutes, or until it is barely al dente, drain it well, and in a large bowl combine it with the tomato mixture. 1-1/2 cups whole grain elbow macaroni, uncooked
2 Tbsp. butter
2 Tbsp. flour
3/4 cup milk
1 cup KRAFT 2% Milk Shredded Cheddar Cheese, divided
1/2 cup KRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses, divided
1/4 cup KRAFT Grated Parmesan Cheese, divided
1 tsp. TACO BELL® Hot Sauce
1/4 tsp. ground black pepper
2 Tbsp. dry whole wheat bread crumbs

Steps:

  • Heat oven to 350°F.
  • Cook macaroni as directed on package, omitting salt.
  • Meanwhile, melt butter in small saucepan on low heat. Stir in flour; cook and stir 2 min. or until bubbly. Gradually stir in milk; cook and stir on medium heat until mixture comes to boil and thickens. Simmer on low heat 3 min. Remove from heat.
  • Reserve 1 Tbsp. of each cheese. Add remaining cheeses to sauce; stir until shredded cheeses are completely melted and mixture is well blended. Stir in hot sauce and pepper.
  • Drain macaroni; spoon into 1-1/2-qt. casserole sprayed with cooking spray. Add cheese sauce; mix well. Toss bread crumbs with reserved cheeses; sprinkle over macaroni mixture.

8 ounces dry elbow macaroni
2 cups chopped frozen broccoli
8 ounces shredded sharp cheddar cheese
8 ounces shredded monterey jack pepper cheese
1 (12 ounce) can evaporated milk
1/2 cup shredded parmesan cheese, divided
1/2 teaspoon ground black pepper
2 tablespoons breadcrumbs

Steps:

  • PREHEAT oven to 350°F Lightly butter 2 1/2-quart casserole dish.
  • COOK macaroni in large saucepan according to package directions, adding broccoli to boiling pasta water for last 3 minutes of cooking time; drain.
  • COMBINE cooked pasta, broccoli, cheddar cheese, Pepper Jack cheese, evaporated milk, 1/4 cup Parmesan cheese and black pepper in large bowl. Pour into prepared casserole dish. Combine remaining 1/4 cup Parmesan cheese and bread crumbs; sprinkle over macaroni mixture. Cover tightly with foil.
