BETH'S SPICY OATMEAL RAISIN COOKIES

With a little experimenting, I came up with these chewy, spicy, oatmeal raisin cookies. They make your kitchen smell wonderful while they are baking. They almost remind me of Christmas because the spices smell so good.

Number Of Ingredients 13

½ cup butter, softened
½ cup butter flavored shortening
1 cup packed light brown sugar
½ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon salt
3 cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!

1 cup brown sugar
¾ cup margarine
½ cup white sugar
2 eggs
⅓ cup milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cloves
½ teaspoon salt
¼ teaspoon ground nutmeg
1 ½ cups quick-cooking oats
1 cup golden raisins
½ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat brown sugar, margarine, and white sugar with an electric mixer in a large bowl until creamy. Beat in eggs until well blended; add milk and vanilla.
  • Sift flour, baking soda, cloves, salt, and nutmeg together in a bowl. Add flour mixture to sugar mixture and beat until combined.
  • Stir oats, raisins, and walnuts into sugar mixture; chill dough for at least 30 minutes. Drop dough 2 to 3 inches apart by rounded tablespoons onto baking sheets.
  • Bake in preheated oven until golden, about 10 minutes.

1 ½ cups all-purpose flour
1 cup white sugar
½ teaspoon baking soda
1 teaspoon salt
¼ teaspoon ground nutmeg
¾ teaspoon ground cinnamon
¾ cup shortening
1 egg, beaten
1 banana
1 ¾ cups rolled oats

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, stir together the flour, sugar, baking soda, salt, nutmeg and cinnamon. Cut in the shortening, until the mixture appears mealy. Stir in the egg, mashed banana and oatmeal until well blended. Drop by rounded spoonfuls onto an unprepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Remove from baking sheet to cool on wire racks.

1 (18 1/4 ounce) box duncan hines spice cake mix
2 cups uncooked rolled oats
2 eggs
3/4 cup vegetable oil
1/2 cup milk, do not use skim
2 cups raisins
1 cup chopped walnuts
1/4 cup dark brown sugar, packed

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl combine all ingredients and mix well.
  • Drop cookies from a teaspoon onto a ungreased cookie sheet, (I still spray the cookie sheets with cooking spray) Bake for 12 minutes until cooky tests well when checked with a toothpick.
  • Cool for one minute on cookie sheet.
  • Remove to wire racks to cool.

A friend of mine brought these cookies to a square dance several years ago and was nice enough to write out the recipe for me. I have no idea where she got it, but, I've made them for years and they are just so tasty.

2 cups sugar
1 cup shortening
4 eggs
3 cups oatmeal
1 cup chocolate chips
2 teaspoons baking soda
1 cup milk
1 teaspoon salt
1 teaspoon clove
2 teaspoons cinnamon
2 teaspoons vanilla
5 cups flour

Steps:

  • Mix ALL ingredients together, thoroughly.
  • I like to mix this in my Kitchen Aide Mixer.
  • Drop by rounded Tbsp onto greased cookie sheets.
  • These cookies rise as opposed to spreading out.
  • Bake in a pre-heated 400 degree oven, 12-15 minutes.
  • Remove to wire rack to cool.
  • Enjoy!

1 teaspoon ground cinnamon
3/4 teaspoon baking soda
