SPICY MOLASSES COOKIES
A wonderfully full-flavored cookie that is covered in sugar. I usually chill overnight and the dough does not get rock hard. I use tablespoonfuls of dough and get about 28 or 29 cookies.

Steps:
- Mix together shortening, brown sugar, egg and molasses.
- In separate bowl, stir together remaining dry ingredients except white sugar. Then mix dry ingredients into shortening mixture.
- Chill dough 2 hours or overnight.
- Roll dough into balls the size of large walnuts and dip tops in sugar. Place on lightly greased baking sheet about 3 inches apart, sugared side up.
- Bake in a 375º oven about 10 to 12 minutes until just set but not hard.
- Cool on wire rack.
WHEAT-FREE SOFT AND SPICY MOLASSES COOKIES
Yummy! You won't even miss the wheat!:] This could be made gluten-free by subbing brown rice flour (or other gluten-free flour) for the spelt flour and the oats. You may add some finely chopped nuts, if you'd like.

- Preheat oven to 350 degrees.
- Cream the butter, sugar, and mollases in a mixer on medium speed.
- Reduce speed to slow.
- Slowly add in other wet ingredients, followed by the dry ingredients.
- Grease a cookie sheet.
- Drop the batter by tablespoons onto the cookie sheet.
- Bake for 10-15 minutes in the 350 degree oven.
- Allow to the cookies to cool before removing them from the sheet.

- Heat oven to 350.
- In large mixer bowl, beat the sugar, shortening,molasses and egg at medium speed until well blended. Add the remaining ingredients and mix at low speed until a soft dough forms.
- Shape dough into 1-inch balls. Roll balls in a dish of granulated sugar and place 2 inches apart on ungreased cookie/baking sheets.
- Bake 10-12 minutes. Let cool and enjoy!

I wanted a new molasses cookie, one loaded with ginger! This is what I came up with. It has some Ginger Kick!!!

- Preheat oven to 350. Mix together butter, sugars, egg and molasses until creamy. Sift together dry ingredients and blend into creamy mixture, stir in crystallized ginger. Roll into 1 1/2" balls, roll in raw sugar, flatten slightly with bottom of a glass or palm of your hand. I like to sprinkle a little extra raw sugar onto center of cookie after flattening, before baking. Bake at 350 for 10-12 minutes.

- 2. As I said in the ingredients list, you can replace raw sugar with regular to roll dough balls in...but the raw sugar gives a really nice caramelly crunch to the cookie.

- 1. Preheat the oven to 350F (175C) 2. Sift flour, soda, spices & salt in a bowl, mix and set aside. 3. In a big bowl beat, oil, molasses, egg, and the cup of brown sugar until all is nicely combined 4. Mix in the dry ingredients 5. Scoop out little balls with a mini ice cream scoop, about a tablespoon size. 6. Roll them gently in the remaining 1/4 cup sugar saved aside, don't flatten 7. Bake for about 7-8 minutes until the cookies get beautiful cracks and edges look done. I am sure you could bake them longer if you like them crisp, but I haven't tried that. 8. Let them cool on the sheet, transfer to a rack and store them in air tight container then cool.
