4 cups cooked rice
1/2 cup reduced-fat cheddar cheese or 1/2 cup monterey jack cheese, shredded
4 ounces green chilies, chopped
4 green onions, chopped
2 ounces red peppers, chopped
1 cup sour cream
3 tablespoons recaito (cilantro-based seasoning)
1/2 teaspoon cumin
chili powder, to taste
salt, to taste
1/4 teaspoon pepper (or more, to taste)
red pepper flakes, to taste

Steps:

  • Preheat oven to 375°F.
  • In a medium bowl, combine cooked rice with cheese, chilies, and green onions.
  • Mix together.
  • In a small bowl, stir together sour cream, Recaito, cumin, chili powder, salt and pepper.
  • Add to rice mixture and stir thoroughly.
  • Spray an oven-proof casserole dish with vegetable oil spray.
  • Spread rice mixture in casserole bake uncovered for approximately 30–40 minutes until cheese melts.
  • Top with additional cheese, if desired.

2 tablespoons olive oil
3 pounds zucchini, cubed
1 cup chopped onion
1 teaspoon garlic salt
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon cayenne pepper, or to taste
1 cup cooked long-grain rice
1 cup cooked pinto beans
2 ½ cups salsa
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat the oil in a large skillet over medium-high heat. Add zucchini and onions; cook and stir until tender, about 10 minutes. Season with garlic salt, paprika, oregano and cayenne pepper, and continue cooking and stirring until fragrant. Mix in the rice, beans and salsa and cook just until heated through. Mix in 1 cup of Cheddar cheese until well blended. Transfer to a 9x13 inch baking dish and top with remaining Cheddar cheese. Cover the dish with a lid or aluminum foil.
  • Bake for 20 minutes in the preheated oven, or until cheese is melted and bubbly.

1 tablespoon butter
1 (15.25 ounce) can whole kernel corn, drained
1 (15 ounce) can creamed corn
1 (8 ounce) package dry corn muffin mix
1 cup sour cream
½ cup unsalted butter, melted
1 large green bell pepper, chopped
1 large red bell pepper, chopped
1 yellow onion, chopped
2 eggs, beaten
1 ½ teaspoons chili powder
1 teaspoon garlic salt
2 tablespoons paprika, divided
½ (8 ounce) package shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with 1 tablespoon butter.
  • Combine whole kernel corn, creamed corn, corn muffin mix, sour cream, 1/2 cup butter, green bell pepper, red bell pepper, yellow onion, eggs, chili powder, and garlic salt together in a bowl. Pour into the prepared baking dish and spread evenly. Sprinkle 1 tablespoon paprika evenly on top.

A healthy mexican casserole dish that is really yummy and easy to make. For an added twist...if you like stuffed peppers, at step 5 stuff mix into 4-5 large bell peppers, add about 1/2 inch of water to the bottom of pan and bake for 30 minutes.Top with additional salsa and shredded cheese! Enjoy!

1 bell pepper, diced
1 cup quinoa, uncooked
2 cups chicken broth
1/2 cup sweet onion, diced
3 garlic cloves, minced
1 (14 1/2 ounce) can black beans, drained & rinsed
2 (10 ounce) cans rotel
1 jalapeno pepper, chopped (I keep the seeds in!)
1/4 cup salsa (I use On The Border-Hot)
3/4 cup corn
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon cumin
1/2 teaspoon red pepper flakes

Steps:

  • Cook quinoa in chicken broth according to package directions.
  • In a large flatbottom skillet sauté onions, garlic, bell peppers and jalapenos.
  • Add rest of ingredients and cook until warmed through.
  • Fluff quinoa when it's done and add to skillet with everything else.
  • Transfer to a stone bakeware pan sprayed lightly with cooking spray.
  • Bake at 350 degrees for 30 minutes.
  • Serve with additional salsa & top with shredded cheese, if desired.

Very quick, easy and inexpensive meal in one pan. My mom used to make this all the time and after a little experimenting I came up with my own version.

1 (8 ounce) package cornbread mix
1 lb lean ground beef
1 1/4 ounces packaged taco seasoning
1 jalapeno, diced
1 medium onion, diced
1/2 green bell pepper, diced
1 (10 ounce) can rotel
2 ears corn on the cob, boiled and cut off the cob
2 cups shredded reduced-fat Mexican cheese blend
1 (15 ounce) can kidney beans, rinsed and drained
1 (8 ounce) can creamed corn

Steps:

  • Preheat oven according to cornbread package. Grease casserole dish (I used 9 x 11 but a 9 x 13 inch should work too).
  • Brown meat with taco seasoning (I didn't use the whole pouch because the rotel adds some spiciness as well. I used about half a pouch) and drain off excess fat. Add onion and pepper and cook until tender. Add rotel, kidney beans, and corn and let simmer.
  • Meanwhile combine cornbread according to package directions. Add diced jalapeno and creamed corn.
  • Spoon thin layer of cornbread on the bottom of the pan. Top with meat mixture then add half of the cheese. Spoon the rest of the cornbread mixture on top and bake according to cornbread package. In the last 5 minutes of cooking top with the rest of the cheese and continue baking until cheese is melted.

This is a super fast, simple dinner casserole for those hectic nights when you just can't face another pizza. It cooks in the microwave in 15 minutes! Serve with a side salad and your good to go. Enjoy!

1 - 5.4oz pkg knorr feista sides taco or mexican flavored rice mix
1 - 10oz can(s) rotel, undrained
1 - 10oz can(s) cream of chicken soup
1 - 9.5oz can(s) chicken, undrained
1 1/2 c cheddar or mexican blend cheese, shredded
1 pkg snack size pkg of doritos, crushed
1/4 c jalapeno slices, to taste

Steps:

  • 1. Spray a 2qt glass casserole dish with Pam cooking spray.
  • 2. Mix together package of rice mix, can of chicken, Rotel, and cream of chicken soup in the casserole dish.
  • 3. Place covered dish in the microwave and heat on full power for 5 minutes. Take out and stir.
  • 4. Place covered dish back in the microwave for another 5 minutes. Takeout and stir again. Check to make sure the casserole isn't drying out. If it is getting too dry, add a little bit of water and stir.(You want it to start to dry a little or it will be too soupy)
  • 5. Replace cover and heat for 5 more minutes. Remove from the microwave and top with shredded cheese. At this point you can replace the lid for about 5 minutes and let the cheese melt, then top with the crushed Doritos, jalapeno slices and enjoy or top with the cheese, Doritos and jalapenos and place under the broiler in your oven to crisp the Doritos and jalapenos.
