BAKED SAUSAGE AND CHEESE BREAKFAST TAQUITOS
Steps:
- Gather the ingredients.
- Preheat the oven to 425 F.
- Line a baking sheet with aluminum foil or parchment paper .
- Add the olive oil and breakfast sausage to a skillet, brown the sausage until almost completely cooked. Add the red and green bell peppers and onion along with salt. Allow them peppers and onions cook for a few minutes, until they are slightly softened, stirring frequently.
- Beat the eggs in a bowl. Add the taco seasoning and hot sauce to the eggs.
- Gently pour the beaten eggs over the sausage and pepper mixture while the pan is on medium heat. Cook until eggs are soft, stirring occasionally to prevent sticking. Make sure not to overcook them!
- Microwave the corn tortillas for about 30 seconds or until they are soft and pliable. Make sure the tortillas are fresh so they will not crack when you roll them.
- Divide the filling between the tortillas. Sprinkle each with an equal amount of cheese. Roll each tortilla tightly and place seam side down on the baking sheet.
- Spray each tortilla lightly with cooking spray and add a sprinkle of salt.
- Bake for 10 to 15 minutes or until golden brown. Allow them to cool slightly.
- Serve with salsa and sour cream.

- Preheat oven to 425 degrees F. Line a baking sheet with parchment paper; set aside. Working one at a time, transfer tortilla to a work surface; place eggs, sausage, sun dried tomatoes, avocado and cheddar cheese in the center of each wrapper. Bring the bottom edge of the tortilla tightly over the filling, rolling from bottom to top until the top of the tortilla is reached. Repeat with remaining tortilla and filling. Place taquitos seam side down onto prepared baking sheet and bake until taquitos are crisp and cheese has melted, about 12-15 minutes. Serve immediately.

- Mix the pork, onion, garlic, sage, thyme, syrup, paprika, allspice, coriander, cayenne, 2 1/2 teaspoons salt and 1/2 teaspoon black pepper with your hands. Form into 18 patties, 2 inches wide and 1/2 inch thick; put on a foil-lined baking sheet, cover and chill overnight.
- The next day, preheat the oven to 350 degrees F. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook half of the patties, turning once, until golden, about 5 minutes. Transfer to a baking sheet. Wipe out the skillet. Repeat with the remaining 1 tablespoon oil and patties, then transfer the patties to the oven to finish cooking, 5 to 10 minutes.

- Preheat oven to 425 degrees F.
- Warm sausages: Add sausage links to a large skillet over medium-high heat. Cook, turning occasionally, until warmed through. Remove to a plate, leaving any sausage grease in the pan.
- Scramble eggs: Crack eggs into a bowl and add a splash of water or milk. Whisk well with a fork and then add to the pan. Season with salt and pepper. Cook for a few minutes, tossing and scrambling as they cook. (If using spinach, add it to the pan about 2 minutes before the eggs are done cooking.) Remove from heat.
- Warm tortillas on a hot dry skillet or griddle for a few seconds until they are pliable.
- Assemble: Divide the scrambled eggs among the tortillas and top with shredded cheese. Place a sausage link on top. Roll up and place, seam side down, on a baking sheet lined with foil or parchment paper.
- Bake: Spray lightly with cooking spray and bake for 10-15 minutes or until golden brown. Serve with salsa for dipping.

- Preheat the oven to 350 degrees F.
- Brush the inside of each roll with the melted butter and toast in the oven until slightly crispy and golden brown, 5 to 6 minutes. Remove from the oven and set aside until you are ready to build your sandwich.
- Heat the olive oil in a cast-iron or nonstick skillet over medium heat. Brown the sausage patties for 3 to 4 minutes per side. Once they are browned and cooked through, remove the patties to a paper towel-lined plate. In the sausage drippings, add the remaining tablespoon of butter and crack 4 eggs into the skillet. Sprinkle the eggs with salt and pepper and cook them to your desired doneness. For this I prefer a fried egg, cooking 2 minutes per side, but you can do whatever you like best. Once the egg is cooked to your liking, top each egg with a slice of American cheese. Place a lid over the skillet to melt the cheese.
- To assemble a sandwich, place a sausage patty on the bottom half of the toasted roll and top with the egg and cheese. Have it plain or dressed with the condiments you prefer. I like to eat mine with ketchup and a little hot sauce!
- In a large bowl mix the pork, maple syrup, sage, salt, fennel seeds, garlic, onion and red pepper. Cook the sausage however you like - make patties and sear or crumble and cook in a skillet like hash.
- Cook's Notes: You can use all different types of meats and spices to make the sausage your own!
- Make sure you form the sausage patties in the same size and shape of the bread you are using, that way every bite you take of the sandwich has every component it.
SPICY MAPLE BREAKFAST SAUSAGE

SPICY MAPLE SAUSAGE, EGG AND CHEESE BREAKFAST TAQUITOS

- Preheat oven to 425 degrees F.
- Add the frozen sausage links to a large skillet over medium heat. Cook, turning occasionally, until fully cooked. Remove from pan and drain.
- Crack eggs into a bowl and add milk if desired. Whisk well and then add to the pan. Season with salt, pepper and crushed red pepper (cayenne powder works as a substitute). Scramble eggs as they cook. Remove from heat once desired texture has been reached.
- Warm tortillas either in the microwave (30 seconds or so) or in a skillet (warm on low heat until pliable).
- Divide eggs, cheese and jalapenos evenly among the tortillas. Pile ingredients towards one edge. Add one sausage link to each tortilla. Roll tortillas tightly. Place taquitos seam side down on non-stick baking pan. Bake for six minutes. Remove from oven, flip taquitos over (seam side up; should remain sealed) and bake for additional six minutes or until golden brown. Remove from heat to cool. Serve plain or with picante sauce for dipping.
