SPICY HUSH PUPPIES
These spicy hush puppies make a wonderful side dish to fish. They taste best when served warm.

- In a large bowl, combine the cornmeal, pancake mix, sugar, baking powder and salt. In another bowl, beat the egg, buttermilk, oil, jalapenos, onion and pepper sauce. Stir into dry ingredients just until combined., In an electric skillet or deep-fat fryer, heat oil to 375°. Drop batter by rounded tablespoonfuls into oil. Fry for 3-4 minutes or until golden brown. Drain on paper towels. Serve warm.

- Mix all the ingredients together into a large mixing bowl to form a thick batter.
- Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray. Serve with dipping sauce.
- Mix the above ingredients together.

- Preheat the oil in a deep fryer or Dutch oven to 340°F. Combine all the remaining ingredients and mix until nice and thick. Being very careful so you don't burn yourself, spoon the puppies into the hot oil, and fry for 4 to 5 minutes, turning the puppies over a few times while they are frying so they are brown on all sides.
- Transfer to a paper bag to drain. Serve with Spicy Horseradish Sauce.

The first time I made this a couple of years ago, I wondered how this was going to turn out. It turned out good the first time, and then every time after that. I love it, and I hope you will too.

- 1. Preheat deep fryer to 375 degrees F. (If you don't have a deep fryer, you can use a cast iron skillet, or a deep-sided electric skill or even a pot with oil, just check the temperature of the oil with a thermometer)
- 2. Mix all the ingredients together into a large mixing bowl to form a thick batter.
- 3. Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. ( You can skip this part if you want, and just use a flatware tablespoon and scoop the batter into the oil).
- 4. Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray.
- 5. *Note* You don't have to add the jalapeno unless you want to. It will still taste good with the other ingredients.
THE NEELY'S HOT AND SPICY HUSH PUPPIES
From Gina and Pat Neely on Food Network. I saw them make this on Down Home with the Neely's and had to try it out. They're great! Gina made an orange dipping sauce but I just eat them plain, or with Ranch dressing or tartar sauce.

- Preheat a deep fryer to 375.
- Mix all ingredients together. Using 2 teaspoons, carefully drop about teaspoonful of dough into hot oil. Fry 3 to 4 minutes, turning hush puppy over to brown both sides.
- Remove from oil when brown on both sides and drain on paper towels.
- Repeat with remaining batter. Don't fry to many hush puppies at one time.

TENNESSEE STYLE SPICY HUSH PUPPIES WITH MARMALADE DIP
This is a southern dish and in Tennessee they don't season and sweeten it like other places. The spicy hush puppies with the sweet dipping sauce go together perfectly! - Preheat a deep fryer to 375* F. (I just use a saucepan and fill about 2-3" with oil.).
- Mix all the ingredients together in a large mixing bowl until it becomes thick.
- Using 2 tablespoons, dip into water. Scoop up about a tablespoonful of the batter and using the other spoon, push off the batter, drop into the hot oil. You can work this in batches. Fry for 3 to 4 minutes or until golden brown. Remove from oil and drain on a paper towels. Serve with dipping sauce.
- To make the dipping sauce, mix all the dip ingredients together in a bowl. This doubles easily! Enjoy!
