4 chicken thighs (bone in skin on)
1/4 cup hot honey (or 1/4 cup honey with 1/2 tsp red pepper flakes)
1/2 cup whole grain mustard
1 peach diced
1 Tablespoon Trader Joes Chili Onion Crunch (or an additional 1/2 tsp red pepper flakes + 1 tablespoon olive oil)
1 tablespoon garlic powder
2 tsp Worcestershire sauce
1 tablespoon white vinegar
2 tsp salt
1 tsp pepper
1 bag of fresh Brussel sprouts (cut in half)

Steps:

  • In a mixing bowl combine mustard, honey, chili onion crunch, garlic powder, white vinegar, peach, Worcestershire sauce and whisk.
  • Place your chicken thighs skin side up in your baking dish, sprinkle with salt and pepper then pour 1/2 the marinade over the top, flip them over and add the other half of the marinade.
  • Marinate for 2-4 hours up to overnight.
  • When ready to cook, pre heat oven to 375, stuff the halved Brussel sprouts all around the chicken.
  • Bake chicken 25 minutes, remove and flip skin side up.
  • Bake an additional 10 minutes, then turn your oven to broil and let it cook for an additional 2 minutes to really brown the skin.
  • Remove and serve!

¼ cup soy sauce (low sodium)
½ teaspoon chili flakes
2 tablespoon honey
1 tablespoon grainy mustard
1 tablespoon olive oil
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
6 chicken drumsticks

Steps:

  • Preheat oven to 375 F degrees.
  • In a small bowl whisk together the soy sauce, chili flakes, honey, mustard, olive oil and salt and pepper until it emulsifies, about 30 seconds to 1 minute.
  • Place chicken drumsticks in a baking dish, one that's about 9x13 inch. Pour sauce over chicken drumsticks and make sure they are all nicely coated in the sauce.
  • Bake for about an hour or until chicken is cooked through.

¼ cup Dijon mustard
¼ cup grainy mustard
½ cup honey
1 teaspoon soy sauce
2 teaspoons chopped fresh tarragon
1 tablespoon finely grated ginger root
8 each skinless, boneless chicken thighs, trimmed of excess fat

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine Dijon mustard, grainy mustard, honey, soy sauce, tarragon, and ginger in a large bowl. Rinse chicken thighs under cold water and pat dry with paper towels. Add chicken thighs to the bowl and toss to coat. Transfer to a baking pan and spoon sauce over the thighs.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Spoon sauce over chicken thighs and serve.

Here's my healthier version of fried chicken tenders. The homemade honey mustard helps the whole wheat bread crumbs stick to the chicken. Make double the amount of the honey mustard if you want some dipping sauce on the side.

1 pound boneless, skinless chicken breasts (about 2 large chicken breasts) or 4 4-ounce chicken cutlets
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 cup whole wheat bread crumbs
1/2 teaspoon dried thyme
Olive oil mister or nonstick pan spray
1/4 cup Dijon mustard
2 teaspoons honey
1 tablespoon light mayonnaise
1/4 to 1/2 teaspoon hot sauce (such as Frank's or Tabasco)

Steps:

  • To make the honey mustard: Whisk the mustard, honey, mayonnaise, and hot sauce together in a medium bowl.
  • To make the chicken: Preheat the oven to 400 degrees F. Rinse the chicken and pat dry. If using 2 large breasts, then place the chicken breasts on a cutting board and halve them horizontally so you end up with 4 pieces of even thickness (if using chicken cutlets, skip this step). If the chicken pieces are thicker than 1/2 inch, place a large sheet of plastic wrap on a cutting board and set 1 piece of chicken on top. Cover with another sheet of plastic wrap and then pound the chicken to a 1/2-inch thickness using a meat mallet or a heavy-bottomed pot. Season the chicken with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper.
  • Add the chicken to the bowl with the mustard mixture and turn to coat. In a second medium bowl, stir together the bread crumbs, thyme, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper.
  • Dredge each piece of chicken through the bread crumbs, gently pressing the crumbs into each side. Place a metal cooling rack on top of a baking sheet, and mist the rack with spray. Spray each piece of chicken on both sides and set it on the rack. Bake the chicken until golden brown and cooked through, 25 to 30 minutes. Serve hot.

2 garlic cloves, crushed
zest and juice 1 lemon
4 chicken thighs, skin on
300g new potatoes, unpeeled, smaller left whole, bigger halved
1 tbsp olive oil
100g spinach
100g frozen peas

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a small bowl, mix together the honey, mustard, garlic and the lemon zest and juice. Pour the marinade over the chicken thighs and season.
  • Put the chicken, skin-side up, on a large baking tray, then dot the new potatoes in between them. Drizzle the oil over the potatoes and sprinkle with sea salt. Roast in the oven for 35 mins until the chicken skin caramelises and is charred in places.
  • Add the spinach and peas to the roasting tray. Return to the oven for 2-3 mins until the spinach has begun to wilt and the peas are hot and covered in the mustardy sauce.

4 tsp garlic powder
4 tsp chili powder
2 tsp salt
2 tsp ground cumin
2 tsp paprika
1 tsp cayenne pepper
8 skinless, boneless chicken thighs
cooking spray
HONEY GLAZE
6 Tbsp honey
2 tsp cider vinegar

Steps:

  • 1. If only making 1/2 the amount of chicken, cut the amount of spices in half. In a large bowl; combine the first 6 ingredients.
  • 2. Add chicken to bowl; toss to coat well. I left it sit in the spices for a good 2 hours.
  • 3. Place chicken on a broiler pan coated with cooking spray. Broil chicken 15 - 20 minutes on each side.
  • 4. Combine honey and vinegar in a small bowl, stirring well.
  • 5. Remove chicken from oven; brush each thigh with the honey mixture, place back under the broiler for about 5 minutes or until starts to get a golden brown, making sure not to burn. Repeat on the other side. I then place on a platter and let it rest a few minutes, then if any glaze is left, brush each thigh again, right before serving.

1 pound carrots, peeled and quartered lengthwise
1 pound fingerling potatoes, sliced ½-inch thick
1/4 cup neutral oil, such as safflower or canola

Steps:

  • Heat oven to 425 degrees. In a large heatproof bowl, whisk mustard powder with ¼ cup very hot water until well combined; let stand 5 minutes. (The heat of the water will activate and release the mustard's spicy flavor.) Add honey, soy sauce, garlic and 1 teaspoon salt, and whisk to combine. CHICKEN

1/2 cup(s) white wine
2 tablespoon(s) butter

Steps:

  • Whisk all ingredients together for glaze. Set aside. Dry the chicken pieces and sprinkle with salt and pepper. Add some oil to a large skillet. Over medium high heat fry the chicken skin side down until crispy. Flip the chicken and fry until browned on bottom. Reduce heat to medium and keep flipping the chicken and cook about 15 minutes. Remove the chicken to a plate and set aside.
  • Add wine to the skillet and scrap up bits. Increase the heat to medium high and let cook 3 minutes. Add the butter and let butter melt. Add the glaze and increase heat to high. Stir constantly and let it thicken. Reduce the heat to medium low. Add the chicken back to the skillet with any juices. Baste the chicken with the glaze and cook 3 more minutes.
  • Serve immediately.
